5 cups frozen peas (about 20 ounces), thawed
1 celery rib, chopped
1/2 cup mayonnaise
1/3 cup chopped onion
1/4 teaspoon salt
1/4 teaspoon pepper
1 package (6 ounces) stuffing mix

Steps:

  • Preheat oven to 350°. Mix first six ingredients; transfer to a greased 11x7-in baking dish. Prepare stuffing mix according to package directions. Spread over pea mixture. Bake, uncovered, until lightly browned, 20-25 minutes.

2 (14 1/2 ounce) cans green peas, drained (use a good brand)
1 (10 3/4 ounce) can condensed cream of mushroom & garlic soup (this should read Cream of Mushroom Soup with Roasted Garlic but it would not accept it)
1 cup sour cream (8 oz)
3/4 cup cheddar cheese, grated
1/3 cup cheddar cheese, grated (I used 4 cheese Mexican blend but it would not accept that)
1/2 cup butter, melted
1/2 teaspoon salt
1 cup Ritz cracker, crushed
ground cayenne pepper (optional)

Steps:

  • Mix soup, sour cream and 1/3 cup 4 cheese Mexican blend and salt together.
  • Fold in peas.
  • Spread into an 8X8 inch baking dish.
  • Sprinkle with 3/4 cup cheddar cheese.
  • Mix melted butter with cracker crumbs.
  • Spread over top of cheese.
  • Sprinkle Cayenne pepper over the top if using.
  • Bake at 350 Degrees until bubbly and golden brown, about 30 minutes.

1 (15 ounce) can baby peas, drained
1 (2 ounce) bottle diced pimento peppers, drained
1 (5 ounce) can sliced water chestnuts, drained
1 (10.75 ounce) can condensed cream of celery soup
½ cup chopped onion
½ cup shredded Cheddar cheese
2 cups crushed buttery round crackers
½ cup margarine, melted

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • In a medium bowl, mix together the peas, pimentos, water chestnuts, cream of celery soup and onion. Pour into a 1 1/2 quart casserole dish. Top with shredded cheese. In a separate bowl, mix together the cracker crumbs and margarine; sprinkle evenly over the cheese.
  • Bake for 30 to 40 minutes in the preheated oven, until browned and bubbly.

2 (10 ounce) packages frozen peas
5 slices bacon, diced
1 small onion, chopped fine
1 cup sliced mushrooms
2 tablespoons flour
1 cup light cream

Steps:

  • Cook peas according to package directions.
  • In a skillet, cook bacon until crisp, then remove from pan and drain on paper towels.
  • Add onion and mushrooms to skillet and saute until almost done.
  • Add flour, stir and cook for 1 to 2 minutes.
  • Add cream, cook and stir to consistency of a medium white sauce.
  • Add all of mixture to peas and stir in bacon.

1 cup chopped cauliflower
1 cup sliced carrots
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup milk
1 teaspoon white sugar
1 teaspoon salt
½ teaspoon ground black pepper
1 pound frozen peas, thawed
1 onion, chopped
1 cup green beans
½ cup chopped green bell pepper
1 tablespoon chopped garlic
2 cups shredded Cheddar cheese, divided

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower and carrots, cover, and steam until tender, 4 to 6 minutes. Drain and set aside.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt 2 tablespoons butter in a large skillet over medium heat. Stir flour into butter to make a smooth mixture; cook for 1 minute. Stir milk, sugar, salt, and black pepper into the flour mixture; continue cooking and stirring until the sauce thickens, 2 to 3 minutes. Fold cauliflower, carrots, peas, onion, green beans, green bell pepper, and garlic into the sauce to coat. Mix 1 cup Cheddar cheese into the vegetable mixture. Transfer the mixture to a 2 1/2-quart casserole dish. Sprinkle remaining Cheddar cheese over the dish.

This recipe is based on one of Rocco Dispirito's from his book, Now Eat This! Diet. He says in its intro, "Who grew up eating tuna casserole? Raise your hands. That's just about everybody. Okay, this is not your mother's tuna casserole...nor does it use Tuna Helper. But it does taste just as wonderful - without losing any of its comfort-food flavor. I've wowed it up a bit with Dijon mustard, and I used whole wheat panko bread crumbs for that traditional crunchy topping. If you can't find these particular bread crumbs, you can always toast leftover whole wheat bread and break it into crumbs with a rolling pin." I made this the other night with French's French Fried Onions because I was out of panko bread crumbs. We loved this dish and it has become a new staple dish for us. Per serving: 351 calories, 10g fat (5g sat / 1g mono / 0.5g poly), 64mg cholesterol, 589mg sodium, 34g carbohydrate, 6g fiber, 36g protein. This calculates to 9 WeightWatchers Points Plus value. 6 ounces whole wheat rotini
3/4 cup reduced-fat sour cream
3/4 cup 2% Greek yogurt
3 tablespoons Dijon mustard
5 ounces 50% reduced-fat cheddar cheese, shredded
18 ounces canned albacore tuna, packed in water, drained
1 1/2 cups frozen peas
salt
fresh ground black pepper
1/4 cup whole wheat panko breadcrumbs

Steps:

  • Preheat oven to 425°F.
  • Prepare an 8x8x2-inch baking dish by spraying with cooking spray and set aside.
  • Cook pasta according to package directions in a large pot of boiling salted water. Drain.
  • In medium bowl combine sour cream, yogurt, mustard, and cheese. Mix in the cooked noodles, tuna, and peas until the pasta is coated with sauce. Season with salt and pepper to taste.
  • Pour the mixture into the prepared baking dish. Sprinkle panko over the top.
  • Bake 10 minutes or until rotini is hot throughout.
  • Serve immediately.

1/4 c chopped onion
1/4 c chopped celery
1 can(s) sliced water chestnuts
1/4 c butter, melted
1 c cracker crumbs

Steps:

  • 1. Saute onion an celery in a small amount of oil until tender.
  • 2. Stir in mushroom soup
  • 3. Mix the peas and water chestnuts together in a casserole dish.
  • 4. Top with the mushroom soup mixture.
  • 5. Toss the cracker crumbs with butter and sprinkle over the mixture.
  • 6. Bake 20 minutes at 350
