8 bacon strips, cut in half
1/2 cup reduced-sodium teriyaki sauce
1/4 cup hoisin sauce
6 green onions, chopped
1 tablespoon garlic powder
1 tablespoon ground cumin
1/2 teaspoon pepper
2 pounds ground sirloin
8 ounces sliced mushrooms
2 baby bok choy, quartered and core removed
8 large eggs
8 potato hamburger buns, toasted

Steps:

  • In a large skillet, cook bacon over medium-low heat until crisp. Remove to paper towels to drain; reserve drippings., Meanwhile in a large bowl, combine teriyaki, hoisin, onions, garlic, cumin and pepper. Add beef, mixing lightly but thoroughly. Shape into eight 1/2-in.-thick patties. Grill burgers, covered, over medium heat until a thermometer reads 160°, 5-7 minutes on each side. Keep warm., In the same skillet, cook mushrooms in 2 tablespoon bacon drippings over medium-high heat until golden, 5-7 minutes. Add bok choy to skillet; cook until tender. Remove and keep warm., In the same skillet, fry eggs in remaining bacon drippings over medium heat until desired doneness. Serve burgers on buns with bacon, bok choy, mushrooms and fried egg.

Inside-Out Bacon Cheeseburgers with Grilled Green Onion Mayo image

5 slices bacon, chopped
4 scallions, cleaned and trimmed
Extra-virgin olive oil, for drizzling
1 1/3 pounds ground beef sirloin
1 tablespoon Worcestershire sauce, eyeball it
1 tablespoon steak seasoning blend or coarse salt and black pepper
1/2 pound extra sharp white cheddar cheese, crumbled
1 cup mayonnaise or reduced fat mayonnaise
1 teaspoon ground cumin
Salt and pepper
4 crusty Kaiser rolls, split
4 leaves crisp romaine lettuce

Steps:

  • Preheat grill pan over high heat.
  • In a medium pan brown bacon over medium high heat and drain on paper towel lined plate.
  • Brush scallions with a little oil and grill on hot grill pan 2 or 3 minutes on each side. Remove from heat to cool.
  • Combine ground beef with Worcestershire and steak seasoning or salt and pepper. Divide meat into 4 equal parts. Combine cheese crumbles and cooked bacon. Take 1/4 of the meat in your hand and make a well in the center of it. Pile in cheese and bacon, then carefully form the burger around the cheese and bacon filling. Make sure the fillings are completely covered with meat. When all 4 patties are formed, drizzle burgers with oil and place on hot grill pan. Cook 2 minutes on each side over high heat, reduce heat to medium low and cook burgers 7 or 8 minutes longer, turning occasionally. Do not press down on burgers as they cook. Transfer burgers to a plate and let them rest 5 minutes before serving.
  • Chop cooled, grilled green onions and add to a food processor. Add mayonnaise and cumin to the food processor and pulse the onions and mayonnaise. Season with salt and pepper, to your taste.
  • Pile burgers on crusty buns and top with crisp lettuce leaves and a slather of green onion mayonnaise. As you bite into the burgers, you will find a smoky, cheesy surprise at the center.

BURGER WITH BACON AVOCADO RANCH SALSA

¼ cup Hidden Valley® Original Ranch® Avocado Dressing
6 strips thick bacon, cooked until crisp and crumbled
1 medium-sized tomato, seeded and diced
1½ lb. ground beef
1 medium red onion, sliced across
4 seeded hamburger rolls

Steps:

  • In a small bowl, add the bacon, tomato, and Hidden Valley® Original Ranch® Avocado Dressing, and mix well to create a salsa. Shape the beef into 4 burgers. Grill the burgers and onion slices for about 5 to 7 minutes on each side or until an internal temperature of 160°F has been reached. Toast the rolls. Place a burger in each roll. Top each burger with 2 tablespoons of the salsa and grilled onions to taste, and serve. Refrigerate any leftovers promptly in a shallow container. Discard any food left out more than 2 hours (or 1 hour if temperatures are above 90°F).

Wrapping a burger in lettuce is a great alternative for a bun if cooking gluten-free, but it also lightens up the overall burger. There is no lack of flavor here. Incorporating green onions into the meat adds a bit of texture and a hint of onion flavor. The mashed avocado and bacon bits "butter" really makes the burger. It's creamy, crunchy and the perfect topping to add a punch of flavor.

12 ounce(s) 80/20 ground beef
1 teaspoon(s) salt
1 teaspoon(s) black pepper
1/4 cup(s) sliced green onions, green and white parts separate
6 slice(s) thick cut bacon
1/2 large avocado
- more salt and pepper to taste
- 2 large leaves green leaf lettuce

Steps:

  • Cook bacon over medium heat until crisp, set aside. Remove all but 1 teaspoon of the fat.
  • Mix the ground beef, salt, pepper, and the green parts of the onions until well mixed.
  • Divide in half and shape into two patties.
  • Cook burgers until well done.
  • In the meantime, mash the avocado. Crumble the bacon, and add to the avocado along with the white part of the onions. Season with salt and pepper to taste.
  • Once burgers are well done, remove from pan, and spread with the bacon avocado butter, and wrap in the lettuce leaves.
