2/3 cup Simply Potatoes Traditional Mashed Potatoes
1 tablespoon all-purpose flour
1 egg
1 large green onion, chopped into small pieces
1 teaspoon baking powder
1 tablespoon light sour cream
3 tablespoons milk (or more if needed)
1 large red bell pepper (or used jar of roasted red bell pepper)
2 ounces soft fresh goat cheese
1/3 cup light sour cream
1/2 tablespoon lemon juice
salt, to taste
dill sprigs (for garnish)

Steps:

  • Turn the oven to 375 degrees. Lightly oil your bell pepper on all sides. I like to cut mine in half and put them on foil lined baking sheet, cut side down. Bake until skin is blackened and loose. Allow pepper to cool and peel skin. Chop into very small pieces (like pickle relish).
  • Whip the soft goat cheese, sour cream and lemon juice in a smooth consistency. Add salt to taste. Set in the refrigerator.
  • Heat a nonstick griddle or pan to medium heat. Mix the Simply Potatoes mashed potatoes, flour, egg, baking powder, and sour cream to a smooth consistency. Add enough milk to make a pancake like batter. Mix in the green onions. (No need to salt the batter as Simply Potatoes is already seasoned unless you wish to.) Spoon one tablespoon of batter onto pan, as many as you can handle at one time. When bubbles form then pop, flip the pancake. Cook each side to golden brown.
  • To plate your blinis, top with a dollop of goat cheese cream and a small amount of roasted red pepper relish and a sprig of dill. Enjoy!

1/4 cup olive oil
1 cup chopped green onion
1 cup coarsely chopped walnuts
1 lb penne pasta, cooked according to package directions
3 -4 ounces mild goat cheese, crumbled
1 cup whipping cream
1/2 cup grated romano cheese
fresh ground pepper, to taste
fresh spinach leaves, for garnish

Steps:

  • Prepare pasta according to package directions.
  • Meanwhile, heat olive oil in a large skillet. Add green onions and walnuts and saute over medium heat until onions are tender, about 5 minutes.
  • Add cooked and drained pasta to skillet along with goat cheese. Reduce heat to low and stir gently until cheese melts.
  • Add whipping cream and Romano cheese. Season with pepper and stir well. Garnish with spinach leaves if desired. Serve immediately.

2 teaspoons extra-virgin olive oil
4 medium red bell peppers, diced small
1 medium red onion, diced small
Coarse salt and ground pepper
1/2 cup red-wine vinegar
1/4 cup sugar
1 1/2 teaspoons vinegar

Steps:

  • In a medium saucepan, heat olive oil over medium-high. Add bell peppers and onion; season with salt and pepper. Cook, stirring occasionally, until vegetables begin to soften, about 6 minutes. Add red-wine vinegar and sugar and simmer until liquid is evaporated and vegetables are tender, about 15 minutes. Remove from heat and stir in vinegar. Let cool completely, about 1 hour. To store, refrigerate in an airtight container, up to 4 days.

1 tablespoon olive oil
1 onion, diced
2 garlic cloves, chopped
1/2 teaspoon red pepper flakes (optional)
1 (14 ounce) can diced tomatoes
1 tablespoon tomato paste
1 tablespoon balsamic vinegar
1 teaspoon oregano
salt, to taste
pepper, to taste
2 cups chicken, cooked and shredded
1 1/2 cups parsley, chopped
15 lasagna noodles
1/4 cup butter
1/4 cup flour
2 cups milk
1/4 teaspoon nutmeg (optional)
6 ounces goat cheese
1/2 cup basil, sliced
3 large roasted red peppers
15 ounces part-skim ricotta cheese
1 cup feta, crumbled
1 cup mozzarella cheese, shredded
1/2 cup parmesan cheese, grated

Steps:

  • Heat the oil in a pan over medium heat. Add the onion and saute until tender, about 5-7 minutes.
  • Add the garlic and red pepper flakes and saute until fragrant, about 1 minute.
  • Add the tomatoes, tomato paste, balsamic vinegar, oregano, salt and pepper and bring to a boil.
  • Reduce heat and simmer until the sauce starts to thicken, about 15-20 minutes.
  • Mix in the chicken and parsley and set aside.
  • Start cooking the noodles as directed on the package.
  • Heat the butter in a saucepan over medium heat until it is bubbling and it has turned a light golden brown.
  • Mix in the flour and let simmer until it returns to a light golden brown.
  • Mix in the milk, nutmeg and goat cheese and heat until it thickens.
  • Lightly grease the bottom of a 9"x13" inch baking dish.
  • Place a layer of noodles in the dish followed by 1/2 of the tomato sauce.
  • Place another layer of noodles over the tomato sauce.
  • Sprinkle 1/2 of the feta, 1/2 of the chopped basil and 1/2 of the roasted red peppers over the noodles.
  • Spoon half of the ricotta in small spoonfuls over the noodles.
  • Spoon 1/3 of the bechamel sauce over the layer.
  • Place another layer of noodles over this.
  • Repeat this sequence and top with a final layer of noodles, the remaining bechamel sauce and top with the mozzarella and parmesan.
  • Bake in a preheated 350F oven until the top is golden brown and the sides are bubbling, about 35-50 minutes.

Eight 1/4-inch slices pancetta
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
1 medium red onion, halved and thinly sliced
1 clove garlic, finely chopped
8 large eggs
4 ounces goat cheese, cut into small pieces
2 tablespoons chopped fresh herbs, such as parsley or basil
2 tablespoons hot pepper relish, such as B&G
4 ciabatta rolls, halved horizontally and lightly toasted
4 ounces baby arugula or watercress

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the pancetta on a baking sheet, leaving a few inches of space between slices, and sprinkle with pepper. Bake until crispy, 10 to 15 minutes. Let cool.
  • Preheat the broiler. Heat the oil in an 8-inch nonstick pan over medium-high heat. Add the onions and cook until soft, about 5 minutes. Add the garlic and cook 30 seconds longer. Season with salt and pepper.
  • Whisk the eggs in a large bowl until light and fluffy. Whisk in the goat cheese and herbs. Add the egg mixture to the pan with the onions and garlic, and stir just until soft curds begin to form. Sprinkle with some salt. Transfer the pan to the broiler. Broil until the frittata is lightly golden brown and just set, 3 to 5 minutes. Invert onto a platter and let cool slightly or to room temperature, then cut into 4 pieces to fit the rolls.

1 teaspoon finely grated lemon rind
1 large firm apple, peeled, cored, and shredded

1 1/3 cups breadcrumbs
1/2 cup parmesan cheese
2 tablespoons unsalted butter
2 tablespoons olive oil

Steps:

  • Place chicken breast on a large sheet of waxed or plastic; cover with another sheet; pound chicken breast to 1/4 inch thickness, remove the top sheet and season with salt and pepper.
  • Combine the goat cheese, lemon rind, and apple; divide the apple mixture among the chicken breast and spread the mixture evenly over half the surface of each breast; fold each breast in half and press the edges together, forming a pocket.
  • Sprinkle the flour onto a sheet of waxed paper.

  • Dust each chicken breast lightly with flour and dip into egg mixture, moistening all surfaces.
  • Coat with bread crumb mixture, patting the crumbs gently in place. (The chicken can be prepared to this point several hours ahead; cover and refrigerate, when ready to cook, bring the chicken to room temperature).
  • In a large, heavy skillet, heat butter and oil over medium heat; Add chicken; cook until browned and cooked through, about 8 to 10 minutes per side, drain on paper towels and serve.
