THAI TOFU AND GREEN BEAN RED CURRY

This is a versatile recipe, where other vegetables or even other meats, such as chicken, could be substituted. If using meat in the recipe, do allow longer simmering time until the meat is cooked through. Shrimp do not need a long cooking time however, and only need to cook until they turn pink and curl. Overcooking them would make them tough. But tofu is best in this recipe, as it absorbs the flavor of the curry paste, and also is very healthy. Recipe by Judy Bastyra. Posted by request.

2 1/2 cups unsweetened coconut milk
1 -2 tablespoon Thai red curry paste
3 tablespoons fish sauce
2 teaspoons palm sugar or 2 teaspoons light brown sugar
3 1/4 cups button mushrooms
1 cup green beans, trimmed
6 ounces firm tofu, rinsed,drained,and cut into 3/4 inch cubes
4 kaffir lime leaves, torn
2 -4 fresh hot red chilies or 2 -4 Thai chiles, chopped (amount to taste)
fresh cilantro leaves (coriander)

Steps:

  • Heat approximately 1/3 of the coconut milk in a large pan.
  • When it starts to separate (an oily sheen will appear on the surface), add the curry paste, fish sauce, and sugar and stir to mix well.
  • Add the cleaned mushrooms and cook 1 minute.
  • Pour in the rest of the coconut milk and bring to a boil.
  • Add the green beans and tofu, then reduce heat, and simmer gently for about 4-5 minutes.
  • Add the kaffir lime leaves and hot chillies.
  • Garnish with cilantro before serving.
  • Serve with hot cooked rice, if desired.

2 tablespoons vegetable oil
4 garlic cloves, minced
3 tablespoons Green Curry Paste for Thai Tofu and Vegetables
8 ounces green beans or Chinese long beans, trimmed and cut diagonally into 1 1/2-inch pieces
1 pound zucchini (about 2 medium), cut into 1/2-by-2-inch sticks
3/4 cup homemade or low-sodium store-bought chicken stock
1/4 cup canned unsweetened coconut milk
3 fresh or frozen kaffir lime leaves
2 tablespoons Asian fish sauce
1 teaspoon palm or granulated sugar
1 tablespoon fresh lime juice
1 package (14 ounces) extra-firm tofu, drained and cut into 3/4-inch cubes
4 cups cooked jasmine or basmati rice, for serving
Fresh purple, Thai, or regular basil leaves; fresh bean sprouts; and lime wedges, for garnish

Steps:

  • Heat oil in a large saute pan over medium heat until hot but not smoking. Add garlic; cook, stirring, until just starting to brown, 1 to 2 minutes. Add curry paste; cook, stirring, until fragrant, about 1 minute. Add the green beans and zucchini; cook, stirring, until starting to soften, about 5 minutes.
  • Stir in stock, coconut milk, and lime leaves. Bring to a simmer; cook, stirring occasionally, until liquid is slightly thickened, about 6 minutes. Stir in fish sauce, sugar, and lime juice. Simmer 1 minute.
  • Stir in the tofu, and reduce heat to medium-low. Cover, and cook until vegetables are tender and tofu is heated through, about 4 minutes. Serve immediately over rice, garnished with basil, bean sprouts, and lime wedges.

2 cups coarsely chopped fresh cilantro (leaves and stems)
2 fresh lemongrass stalks, bottom 4 inches only, thinly sliced
1/3 cup fresh Thai or regular basil leaves
5 scallions, white and pale-green parts only, chopped
1/3 cup fresh lime juice (about 2 limes)
2 fresh green Thai chiles, chopped
1 tablespoon plus 1 teaspoon finely grated peeled fresh ginger
2 garlic cloves, chopped
2 fresh or frozen kaffir lime leaves (optional)
1 teaspoon coarse salt

Steps:

  • Blend all the ingredients in a blender until smooth.

This is a fantastically flavoursome vegan-friendly thai green curry, which really pleases the palate. This dish serves 10 which makes it ideal for serving to friends and family. It's actually that good you could eat it all yourself, over a few days of course.

600 g firm tofu
400 g eggplants or 400 g aubergines
100 g shallots
400 ml coconut cream
100 ml vegetable stock
50 g cornstarch, for dusting
1/2 teaspoon cayenne pepper
1 fresh basil leaf (optional)
1 red Thai chile (optional)
15 ml vegetable oil, for a non-stick pan
1 bunch fresh cilantro or 1 bunch coriander
2 stalks lemongrass
4 pieces green jalapeno peppers (optional)
2 pieces shallots
6 garlic cloves
2 limes, juice

Steps:

  • Cut firm tofu into inch-sized cubes and pan-fry until golden brown. Set aside.
  • Slice shallots into thin rings. Season with salt and cayenne pepper.
  • Lightly dust with cornstarch and fry until crispy. Set aside.
  • Combine all ingredients for the curry paste in a food processor and pulse until smooth.
  • Heat about a tablespoon of vegetable oil in a pan and roast the curry paste, stirring constantly, until aromatic.
  • Add in vegetable stock into the pan to deglaze.
  • Add in coconut cream and eggplant. Cook until the eggplant is tender.
  • Add in tofu and heat for about a minute.
  • Season to taste with salt or fish sauce.
  • Serve topped with fresh basil leaves, fried shallots, and red thai chilis.

This is so simple and so good! I replicated this recipe from my favorite Thai restaurant in Atlanta. Serve tofu over the rice and drizzle generously with green curry sauce!

1 ½ cups water
1 cup uncooked basmati rice, rinsed and drained
3 tablespoons sesame oil
1 (14 ounce) package firm water-packed tofu, drained and cubed
¼ teaspoon salt
1 (10 ounce) can coconut milk
2 tablespoons green curry paste

Steps:

  • Place water in a medium saucepan, and stir in the rice. Bring to a boil. Cover, reduce heat, and simmer 20 minutes. Remove from heat, cool slightly, and fluff with a fork.
  • Heat the sesame oil in a separate medium saucepan over medium heat. Stir in tofu. Stirring occasionally, fry about 20 minutes, until evenly crisp and lightly browned. Season with salt.
  • In a small saucepan, bring the coconut milk to a boil. Mix in green curry paste. Reduce heat, and simmer 5 minutes. Drizzle generously over the tofu and rice to serve.
