1 lemongrass stalk, tough outer leaves discarded, finely chopped
1 lime, juiced
1 tsp ground coriander
4-6 green chillies , deseeded if you prefer less heat, chopped
4 garlic cloves , chopped
thumb-sized piece of galangal , peeled and chopped
3 small shallots , peeled and chopped
3 lime leaves, finely shredded
½ small bunch of coriander , finely chopped
1 tsp shrimp paste
3 tbsp vegetable oil

Steps:

  • Tip all the ingredients into a small food processor and blend until smooth. Add another tablespoon of oil, if needed, to combine. Freeze any leftover paste for another time, or make a double or triple batch to freeze in portions.

Homemade green curry paste has more vivid flavor and aromatic intensity than store-bought, not to mention the freedom to control the spice level. Sopon Kosalanan of restaurant Khao King in, Queens says, "If you get it from a can, I don't feel like it's green curry. It doesn't have the same aromas." This is the recipe he makes in big batches for his restaurant every day.

12 small green Thai chiles, stems removed
2 lemongrass stalks, bottom third only, tough outer layers removed, smashed with the back of a knife, thinly sliced
2 shallots, coarsely chopped
8 small or 6 large garlic cloves
1 (4") piece galangal, peeled, thinly sliced
Zest of 1 makrut (Thai) lime (optional)
1 cup Thai basil leaves
1 Tbsp. chopped fingerroot (kra chai) in brine (optional)
2½ tsp. shrimp paste

Steps:

  • Blend chiles, lemongrass, shallots, garlic, galangal, makrut lime zest, basil, fingerroot (if using), shrimp paste, and ½ cup water in a blender on high speed, scraping down sides and adding more water if needed, until paste is the consistency of a thick salsa.
  • DO AHEAD: Curry paste can be made 5 days ahead. Transfer to an airtight container; cover and chill, or freeze up to 2 months.

4 cups chicken stock
2 ounces heavy cream
6 cups Pumpkin Puree, recipe follows
1 tablespoon plus 1 teaspoon extra virgin olive oil
1/2 teaspoon green curry paste
5 slices white bread, crust removed
1 (6-pound) Chinese pumpkin
1 1/2 cups water
2 tablespoons butter

Steps:

  • Simmer stock, puree and heavy cream until desired consistency. Bake diced bread on a sheet pan in the oven at 450 degrees until browned. Meanwhile, mix olive oil and green curry in a bowl. Remove bread from oven and place in the bowl, covering it with curry. Place bread crumbs back into oven until crisp.
  • Remove skin from pumpkin and chop the meat into small pieces. Heat butter in a saute pan and add the pumpkin. Add the water and simmer covered for about 20 minutes or until the pumpkin is tender. Remove the pumpkin meat and mash it by hand or in a food processor.

1 tablespoon green curry paste (more is optional to taste)
1 teaspoon cumin powder
1 teaspoon coriander powder
1 1/2 lbs pork loin (end sliced)
1/2-3/4 cup coconut milk, unsweetened
1 cup sweet basil
1 small hot chili pepper (optional)
1 tablespoon anchovies or 1 tablespoon fish sauce
1/2 teaspoon sugar
1 1/2 tablespoons peanut butter

Steps:

  • PREPARATION-.
  • De-bone the pork loin and cut up into bite size pieces, set aside.
  • Cut the long Chinese Okra vegetable in half and then cut away the tough outer skin, the cut into bite size pieces, set aside, and/or clean, cut up and use other vegetables.
  • Chop up the basil leaves and leave several whole pieces(4 plus) for garnish, set aside.
  • Use a small not very hot pepper, remove the seeds, cut up, set aside.
  • Chop the anchovies into small pieces, set aside.

  • COOKING INSTRUCTIONS-.
  • Heat oil in a pan or wok, add the curry paste, then add the coriander and cumin powder and stir fry for a minute or two.
  • Add ½ to ¾ cup of the coconut milk, lower heat and simmer for several minutes.
  • Add the pork, until thoroughly cooked.
  • Add the basil leaves, hot pepper, anchovies, sugar, peanut butter and simmer a few minutes more.
  • Place hot soup into individual bowls and garnish with a whole basil leaf or two.

  • NOTES-.
  • Using 1 tablespoon Thai Curry Paste is hot enough, more will make it very hot and also if you use a hot pepper as well. You can also marinate the pork with lime juice and chopped up garlic for several hours or overnight in the refrigerator... this will tenderize the pork.

10 -12 hot green chili peppers (small and hot)
1/2 onion, chopped
1 tablespoon garlic, chopped
1/2 inch ginger
2 stalks lemongrass (only the lower part and not the grass like leaves)
2 -3 lemon leaves (if you get kaffir lime leaves I am sure it is better but I make do)
1/2 teaspoon fresh lemon rind
4 tablespoons coriander leaves
3 tablespoons fresh spinach leaves (optional)
2 tablespoons fresh fenugreek leaves (optional)
1 tablespoon mint leaf (optional)
1/2 teaspoon salt
1 tablespoon vinegar
15 black peppercorns

  • In a tava (wok) roast the coriander and cumin seeds on low heat for about 2 mins till just fragrant.
  • Do not allow to brown.

1 teaspoon cumin seeds
1 tablespoon coriander seeds
3 long green chiles, roughly chopped
2 cloves garlic
30g galangal or ginger, peeled and chopped
6 makrut lime leaves, stems removed and shredded
2 stalks lemongrass, white part only, thinly sliced
1 cup chopped coriander (cilantro) leaves, stems and roots (see note)
1 tablespoon peanut or vegetable oil
1/2 teaspoon shrimp paste
1 tablespoon grated palm sugar or brown sugar
3 green onions (scallions), roughly chopped

Steps:

  • Heat a small non-stick frying pan over medium heat. Add the cumin and coriander seeds and toast, shaking the pan frequently, for 2-3 minutes or until fragrant and light golden.
  • Place in a small food processor and process until ground.
  • Add the chile, garlic, galangal, lime leaf, lemongrass, chopped cilantro, the oil, shrimp paste, sugar, and onion. Process into a paste, scraping down the sides of the bowl.

YIELDS: approx. 1 cup fragrant Thai Green Curry Paste (enough for 1 large curry)
1 stalk lemongrass, minced (see below), OR 3 Tbsp. frozen prepared lemongrass (available at Asian stores)
1-3 green chilies, sliced (if you can't find Thai green chilies, use jalapeno chilies)
1 shallot, sliced (OR 4 Tbsp. minced purple onion)
4-5 cloves garlic
1 thumb-size piece of galangal OR ginger, thinly sliced
1 cup fresh coriander leaves & stems, chopped
1/2 tsp. ground cumin
1/2 tsp. ground white pepper (available in most supermarket spice aisles)
1/2 tsp. ground coriander
3 Tbsp. fish sauce - if vegetarian: 3+1/2 Tbsp. soy sauce
1 tsp. shrimp paste (available by the jar at Asian stores) - if vegetarian: substitute 1 additional Tbsp. soy sauce
1 Tbsp. lime juice
1 tsp. brown sugar
3-4 Tbsp. coconut milk (enough to blend ingredients & keep blades moving)

Steps:

  • Heat a wok or large frying pan or pot over medium-high heat. Add 2-3 Tbsp. oil and swirl around, then add the green curry paste. Stir-fry until fragrant (1 minute), then add 1 cup stock plus your curry ingredients (meat, seafood, or tofu/wheat gluten + vegetables). Simmer until ingredients are cooked, gradually adding more coconut milk until you're happy with the taste/thickness/amount of sauce. As you're cooking, you can also add 2-3 kaffir lime leaves (left whole) as well as any leftover lemongrass stalk pieces for even more flavor. When your curry is done, always perform a taste-taste for salt and spice. Add more fish or soy sauce if not salty enough, or some fresh-cut Thai red chilies if not spicy enough (OR add some dried crushed chili). If too spicy, add more coconut milk. If too salty or sweet, add a squeeze of lime juice. If too sour for your taste, add a touch more sugar. Finish your curry by sprinkling over some fresh basil & coriander.
