6 ounces tuna in water, drained
2 tablespoons reduced-calorie mayonnaise
1 teaspoon lemon zest
1 tablespoon fresh lemon juice
1/2 teaspoon black pepper
1/2 small carrot, grated
2 tablespoons fresh parsley, chopped
1 medium shallot, minced
4 slices reduced-calorie whole wheat bread, toasted
1 cup arugula, about 6 leaves

Steps:

  • Combine tuna, mayonnaise, lemon zest and juice, pepper, carrot, parsley, and shallot in a small bowl; mix well.
  • Layer 2 slices of bread with 3 lettuce leaves each and top each with about 1/2 cup of tuna salad. Top with remaining bread slices and serve.

7 ounces tuna, drained
1/3 cup green chili, chopped (canned is ok)
2 tablespoons onions, finely chopped
1/3 cup sour cream
1/2 cup swiss cheese, grated
8 slices bread (rye preferred)
butter

Steps:

  • Combine first five ingredients adn spread on four slices bread. Assemble sandwiches.
  • Spread butter on outer surfaces and grill until golden.

A very tasty way to eat tuna - great for tuna haters such as myself! An authentic recipe from my Turkish friends. Feel free to add or substitute additional ingredients - sliced cucumber, rocket, baby spinach leaves, red spanish onion, etc.

10 slices bread
2 (6 ounce) cans tuna, drained (in olive oil or brine)
1 lemon, juice of
1 1/2 cups rocket, leaves
1 tomatoes, sliced
6 tablespoons Dijonnaise mustard
4 tablespoons of low fat mayonnaise
3 large jalapenos, chopped
5 slices cheddar cheese (optional)
1 small Spanish onion, finely chopped (optional)
salt & freshly cracked black pepper

Steps:

  • In a mixing bowl, combine tuna, mayo, chopped jalapenos, lemon juice, onion (optional) salt and pepper. Mix well.
  • Toast bread if desired.
  • Spread dijonnaise mustard on one side of the bread.
  • Spread tuna mixture and layer tomato slices, cheddar cheese (optional), rocket leaves and season with more cracked pepper.
  • Top with the other slice of bread, press down slightly with hands to compress sandwich and ingredients together.
  • Serve.
