This Green Chile Corn Casserole is made with whole kernel corn, creamed corn and a box of corn muffin mix. It's one of the easiest recipes you'll make this holiday season!

1 8.5-ounce box Jiffy Corn Muffin mix
1 15-ounce can whole kernel corn, (drained)
1 15-ounce can creamed corn
1 cup nonfat plain Greek yogurt
1 stick unsalted butter, (melted)
1 4-ounce can mild diced green chiles
2 large eggs
1 poblano pepper (diced)

Steps:

  • Preheat the oven to 350°F. Spray a 9x13 rectangular baking dish with cooking spray or grease with a little cooking oil.
  • In a large bowl, whisk together all of the ingredients and pour into the prepared baking dish.
  • Cook for 65 minutes or until lightly browned on top.
  • Garnish with fresh chives and corn kernels, if desired.

1 cup uncooked regular long-grain white rice
2 cups water
1 cup cottage cheese
1 (11-oz.) can whole kernel corn, red and green peppers
1 (8-oz.) container sour cream
1 (4.5-oz.) can Old El Paso™ Chopped Green Chiles
4 oz. (1 cup) shredded Mexican cheese blend

Steps:

  • Cook rice in water as directed on package.
  • Meanwhile, heat oven to 350°F. Spray 2-quart casserole with nonstick cooking spray. In large bowl, combine cooked rice and all remaining ingredients except Mexican cheese blend; mix well. Pour into sprayed casserole. Sprinkle with cheese.
  • Bake at 350°F. for 30 to 35 minutes or until casserole is thoroughly heated and cheese is melted.

2 packages (8-1/2 ounces each) cornbread/muffin mix
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (14-3/4 ounces) cream-style corn
1 can (4 ounces) chopped green chilies, drained
1 cup shredded Monterey Jack cheese

Steps:

  • Prepare cornbread mixes according to package directions. Pour half of the batter into a greased 11x7-in. baking dish. Combine corn and creamed corn; spread over batter. Top with chilies and cheese. Carefully spread with remaining cornbread batter. , Bake, uncovered, at 375° for 25-30 minutes or until a toothpick comes out clean. Serve warm.
