Sautéed Cabbage and Apples image

After a quick sauté in butter and spices, crisp tender apples and cabbage are topped with pomegranate seeds and fresh dill.

3 cups apple (thinly sliced wedges)
3 teaspoons butter (unsalted)
2 teaspoons apple cider vinegar
2 teaspoons light brown sugar
1/2 teaspoon caraway seeds
1/8 teaspoon allspice (ground)
3 cups cabbage (thinly sliced)
salt and pepper
1/4 cup pomegranate seeds
2 tbsp fresh dill (chopped)

Steps:

  • Heat 1 1/2 teaspoons of the butter over medium heat. When the butter melts, add the apples and sauté them for about 5 to 6 minutes or until they start to soften.
  • Add the brown sugar, apple cider vinegar, caraway seeds and ground allspice and sauté for about a minute.
  • Add the cabbage and rest of the butter. Season with salt and pepper. Cook for about 2 minutes, stirring gently. Taste and adjust the seasoning.
  • Serve topped with the pomegranate seeds and fresh dill.

1/2 head red cabbage
1 Granny Smith apple
2 tablespoons butter
1 teaspoon fennel seeds, crushed
Kosher salt and freshly ground black pepper
1/4 cup red wine
Splash apple cider vinegar

Steps:

  • Core and slice the cabbage into thin slices. Slice the cheeks off the apples and cut into thin wedges.
  • In a large saute pan, add the butter and melt over medium heat. Add the cabbage, apples, fennel and salt and pepper, to taste, and saute until the cabbage softens and wilts about 20 minutes. Deglaze with red wine and stir in a splash of cider vinegar. Transfer to a serving bowl and serve.

My German grandmother passed this recipe down to my mother, who gave it to me. I remember eating it as a small child. This vegetable dish can be made quickly and goes great with roast pork or barbecued ribs, potatoes and biscuits.

1 medium onion, chopped
1/4 cup butter
1 medium head red cabbage (2 pounds) , shredded
2 medium tart apples, peeled and chopped
1 cup apple cider or apple juice
1/4 cup packed brown sugar
2 tablespoons cider vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
2 bacon strips, cooked and crumbled
Minced fresh parsley, optional

Steps:

  • In a large skillet, saute onion in butter until golden and tender. Add the cabbage, apples, cider, sugar, vinegar, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for about 1 hour or until cabbage and apples are tender and the liquid is reduced. Sprinkle with bacon and parsley if desired.

1 small head red cabbage, cored and thinly sliced
1 medium Granny Smith apple - peeled, cored, and sliced
½ small sweet onion, cut into thin wedges
1 teaspoon fennel seeds, crushed

¼ cup red wine
½ teaspoon apple cider vinegar

Steps:

1 (1 1/4 ounce) envelope Lipton golden onion soup mix
1 teaspoon caraway seed
