If you like onion rings, you will like this recipe. It is sweeter, but really tasty! Make sure your oil is at the right temperature, or you will lose your breading!

3 large bell peppers, I use one green, one red, and one yellow
2 large eggs, lightly beaten
2 cups milk
2/3 cup Italian seasoned breadcrumbs
1/2 cup parmesan cheese, grated
1 cup all-purpose flour
vegetable oil

Steps:

  • Slice peppers into 1/4 inch rings; remove and discard seeds and membranes. Set aside.
  • Combine eggs and milk, stirring well. Combine breadcrumbs and cheese, stirring well.
  • Dip pepper rings into egg mixture, and dredge in flour. Dip again into egg mixture, and then dredge through the breadcrumb/cheese mixture, coating well.
  • Pour oil to a depth of 2 inches in a Dutch oven. Heat to 375 degrees.
  • Fry pepper rings 1 to 2 minutes or until golden brown, turning once. Drain on paper towels.

Flip and cook until desired doneness is reached, 2 to 3 minutes more; season with salt and ground black pepper.

3 -4 garlic cloves, minced
1/4 teaspoon fresh ground black pepper

  • Remove ribs from pepper rings.
  • Heat oil in large skillet.
  • Add garlic, black pepper and pepper rings; cook, over high heat and stirring frequently, until tender-crisp-----about 5 minutes.

4-6 large green bell peppers
1 egg beaten
1 c dry bread crumbs
2-3 Tbsp shortening

Steps:

  • 1. Clean and remove seeds and membrane from the bell peppers. Slice the peppers into thin rings.
  • 2. Dip the rings into the egg, then into the bread crumbs and fry in hot shortening until browned on both sides 2-3 minites.
