2 teaspoons vegetable oil
3/4 lb fresh green beans, cut into 1-inch pieces
3 garlic cloves, finely chopped
1 cup chopped onion
1/4 cup pine nuts
1 tablespoon soy sauce
1/8 teaspoon pepper
1/4 cup water

Steps:

  • Heat oil in a large nonstick skillet or wok over medium-high heat.
  • Add green beans, garlic, onions, and pine nuts.
  • Cook, stirring constantly with a tossing motion, 5 to 7 minutes, until onions start to brown.
  • Stir in soy sauce, pepper and water.
  • Reduce heat to medium-low, cover, and cook 5 minutes, stirring once during cooking time.

1 1/2 lbs green beans, trimmed
2 tablespoons lemon juice
salt and pepper

Steps:

  • Preheat oven to 375°F.
  • Toast pine nuts in a shallow baking pan in oven 3 to 5 minutes, shaking pan frequently.
  • Place green beans in a steamer basket over boiling water in a saucepan and steam 7 to 8 minutes or until tender.
  • Transfer green beans to a serving dish.
  • Toss with lemon juice, pine nuts and salt and pepper to taste.

1 1/4 lbs stringless green beans
1 (15 ounce) can baby corn, rinsed and drained
2 tablespoons butter
1 tablespoon fresh thyme, minced
1 teaspoon fresh rosemary, minced
1/4 cup dry white wine (or dry sherry)
1 cup chicken broth
6 drops soy sauce (or Maggi seasoning)
1/2 teaspoon salt (to taste)
1/4 teaspoon black pepper (to taste)
1 tablespoon cornstarch, mixed with
3 tablespoons water
1/4 cup toasted pine nuts

Steps:

  • Remove tips from green beans and steam for 20-25 minutes or until tender, or cook by another method.
  • Heat butter in a large skillet over medium heat; add thyme and rosemary, allow herbs to warm in the butter.
  • Add sherry, chicken broth, Maggi seasoning, salt, and pepper, and bring to a boil.
  • Lower heat, and mix cornstarch with water and stir into sauce, whisking to incorporate, and stirring constantly until thickened.
  • Fold in cooked green beans and baby corn, mixing well to get sauce all over vegetables.
  • Heat gently for 2-3 minutes, stirring occasionally, or until heated through.
  • Serve garnished with toasted pine nuts.

I found this in the New York Daily News and made it for Thanksgiving dinner. It was the only thing I didn't have any leftovers of. I made it with frozen french cut green beans.

1 1/2 lbs green beans, trimmed
2 tablespoons olive oil
2 large garlic cloves, thinly sliced
1/3 cup pine nuts
kosher salt
pepper

Steps:

  • Bring a large pot of salted water to a boil. Add the green beans and cook until just tender, 3 to 5 minutes.
  • Meanwhile, heat the oil in a large skillet over medium heat. Add the garlic and cook, stirring for 1 minute. Add the pine nuts and cook until golden brown, about 3 minutes.
  • Drain the green beans and transfer to the skillet add ½ teaspoon salt and ¼ teaspoon pepper and toss to coat. Transfer to a serving bowl.
  • Make-ahead note: This dish can be prepared up to 2 days in advance. Blanch the green beans by boiling until tender. Plunge them into an ice bath to stop the cooking. Drain and refrigerate, covered until ready to sauté with the garlic and pine nuts. Cook the green beans until heated through.
