1 pound fresh or frozen green beans, cut into 2-inch pieces
1/2 cup water
1/4 cup slivered almonds
2 tablespoons butter
1 teaspoon lemon juice
1/4 teaspoon seasoned salt, optional

Steps:

  • Place beans and water in a large skillet or saucepan and bring to a boil. Cover and cook until crisp-tender, 10-15 minutes; drain and set aside. , In a large skillet, cook almonds in butter over low heat. Stir in lemon juice and, if desired, seasoned salt. Add beans and heat through.

2 1/2 pounds green beans, preferably haricot verts, trimmed
1 teaspoon kosher salt, plus more
1/2 cup (1 stick) unsalted butter
1 cup (3.5 ounces) sliced almonds, preferably skin-on
2 tablespoons fresh lemon juice
Do Ahead
Green beans can be blanched 1 day ahead. Let dry, then transfer to an airtight container and chill.

Steps:

  • Cook green beans in a large pot of boiling salted water until crisp-tender, 5-7 minutes. Drain, then immediately transfer to a large bowl filled with ice water. Drain again and pat dry.
  • Melt butter in a large, deep-sided skillet over medium heat. Add almonds and 1 tsp. salt and stir to coat. Cook, stirring occasionally, until fragrant and beginning to brown, about 3 minutes. Add green beans and lemon juice and stir to coat; cook just until warmed through.
  • Transfer green beans to a platter. Pour butter sauce and almonds over and serve.

1/2 teaspoon salt
1 large egg
1-1/4 cups panko bread crumbs
3/4 teaspoon dried parsley flakes
3/4 teaspoon dried thyme
2 tablespoons butter
1 tablespoon plus 2 teaspoons olive oil, divided
1 teaspoon cornstarch
1 can (14-1/2 ounces) chicken broth
4 garlic cloves, minced
4 teaspoons lemon juice
3/4 pound fresh green beans, trimmed
1/4 cup slivered almonds, toasted

Steps:

  • Sprinkle fillets with salt. In a shallow bowl, whisk the egg. In another shallow bowl, combine the bread crumbs, parsley and thyme. Dip fillets in egg, then coat with crumb mixture., In a large skillet, cook fillets in butter and 1 tablespoon oil over medium heat for 5-6 minutes on each side or until golden brown and fish flakes easily with a fork. Remove and keep warm., In a small bowl, combine the cornstarch, broth, garlic and lemon juice until blended; set aside. , In the same skillet, saute beans in remaining oil until crisp-tender. Stir cornstarch mixture and pour over beans. Bring to a boil; cook and stir for 1-2 minutes or until slightly thickened., Sprinkle with almonds. Serve with fish.

1/4 cup KRAFT Lite Balsamic Vinaigrette Dressing, divided
1-1/2 tsp. minced garlic, divided
4 skinless salmon fillets (1 lb.)
1 lb. fresh green beans, trimmed
1/4 cup sliced almonds, toasted

Steps:

  • Heat broiler.
  • Place fish on rack of broiler pan sprayed with cooking spray. Mix mustard, 1 Tbsp. dressing and 1/2 tsp. garlic; spread onto fish.
  • Broil, 4 inches from heat, 6 to 8 min. or until fish flakes easily with fork. Meanwhile, place beans in medium saucepan; add enough water to completely cover beans. Bring to boil; simmer on medium-low heat 6 min. or until beans are crisp-tender. Drain beans in colander.
  • Add remaining dressing and garlic to saucepan; cook on medium heat 1 min., stirring occasionally. Add beans; cook 2 min., stirring occasionally. Top with nuts. Serve with fish.

This is the perfect side dish for any entree - beef, chicken, or fish. I always have the ingredients on hand, but it always tastes super-fresh. Very clean and bright flavor. I use a double boiler for this, but if you don't have one, prepare the beans according to package directions and use a separate saucepan for the sauce.

1/4-1/2 cup water
2 cups frozen French style green beans (Trader Joe's Haricot Verts are the best)
1 1/2 tablespoons salted butter
1 -2 tablespoon slivered almonds
1/2 lemon, juice of (of about 1/2 a lemon)
salt and pepper

Steps:

  • In the saucepan of a double boiler, boil the water.
  • Place the green beans in the colander of the double boiler and place over the saucepan. Cover with a lid and allow to steam for approximately 3-5 minutes, or until beans are near tender crisp.
  • Remove the colander and set aside. Dump the water out of the saucepan and add the butter over very low heat.
  • Add the almonds when butter is melted and saute until they are slightly brown.
  • Toss the green beans into the mixture. Squeeze lemon juice over beans and season to taste with salt and pepper. Cook another minute until heated throw. Serve immediately.

1 pound haricots verts, trimmed
1/2 cup sliced almonds
5 tablespoons unsalted butter
2 cloves garlic, chopped and smashed into a paste

Steps:

  • Bring a large pot of water to a boil. Fill a large bowl with ice cubes, add a few cups of cold water and place a strainer inside.
  • Add 2 teaspoons kosher salt and the green beans to the boiling water and cook until crisp-tender, about 4 minutes. Drain the green beans and immediately put into the strainer set inside the ice water. Let sit until cold, about 2 minutes; drain well and pat dry with paper towels.
  • In a small saute pan over medium heat, add in the almonds and cook until lightly toasted. Transfer the almonds to a small bowl.
  • Add the butter, garlic and green beans into a large saute pan and cook over medium-high heat, tossing to coat the beans. Cook until the beans are heated through and al dente, about 2 minutes. Season with salt and pepper and transfer to a platter. Top with the toasted almonds.
