Cooking spray
1 1/2 cups panko breadcrumbs
1/2 cup grated Parmesan
1/2 teaspoon onion powder
1/4 teaspoon cayenne
Kosher salt
2 large eggs
1 tablespoon milk
8 ounces green beans, trimmed
1 cup all-purpose flour

Steps:

  • Preheat the oven to 425 degrees F.
  • Spray a large baking pan with cooking spray.
  • Mix the panko, Parmesan, onion powder, cayenne and 1/2 teaspoon salt together in a wide, shallow bowl. Whisk the eggs and milk together in another shallow bowl.
  • Toss the green beans in the flour. Working a few green beans at a time, shake off the excess flour and dip in the egg. Let the excess egg drip off and then toss in the panko, patting firmly so the crumbs adhere. Arrange the breaded green beans in a single layer in the prepared baking pan and spray thoroughly with cooking spray.
  • Bake until golden brown and crisp-tender, about 10 minutes.

8 ounces green beans, stem ends removed

Steps:

  • Preheat the oven to 400 degrees F. Line 2 baking sheets with parchment paper.
  • Beat the egg in a shallow dish with 1 tablespoon water. In another shallow dish, stir together the Parmesan, garlic powder and some salt and pepper. Dip the green beans first in the egg mixture, rolling them to fully coat. Using a fork, gently transfer the green beans to the cheese mixture and roll to evenly coat them on all sides with the cheese.
  • Transfer the green beans to the prepared baking sheets, making sure the beans are in a single layer and not touching. Bake until golden brown and crisp-tender, about 10 minutes.

½ cup ranch dressing
¼ cup peeled, seeded, and minced cucumber
1 tablespoon whole milk
1 ½ teaspoons prepared horseradish
1 teaspoon white vinegar
1 teaspoon Japanese wasabi powder
⅛ teaspoon salt
1 pinch cayenne pepper, or more to taste
2 cups water
2 cups chicken broth
8 ounces fresh green beans, trimmed
1 egg, beaten
1 tablespoon whole milk, or more as needed
½ cup plain bread crumbs
½ cup crushed French-fried onions
¾ teaspoon salt
½ teaspoon onion powder
¼ teaspoon ground black pepper
¼ teaspoon garlic powder
1 cup all-purpose flour
8 cups vegetable oil for frying

Steps:

  • Blend ranch dressing, cucumber, 1 tablespoon milk, horseradish, vinegar, wasabi powder, 1/8 teaspoon salt, and cayenne pepper together in a food processor until dip is smooth. Transfer dip to a bowl, cover, and refrigerate until chilled, at least 30 minutes.
  • Bring water and chicken broth to a boil; add green beans and cook until slightly tender, about 10 minutes. Drain.
  • Whisk egg and 1 tablespoon milk together in a bowl. Combine bread crumbs, French-fried onions, 3/4 teaspoon salt, onion powder, black pepper, and garlic powder together in a separate bowl. Place flour in a third bowl.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Press green beans in flour until evenly coated. Dip coated green beans in egg-milk mixture, allowing excess liquid to drip back into bowl. Transfer green beans to bread crumbs mixture and press to coat, shaking off excess. Arrange coated beans in 1 layer on a plate or in a colander.
  • Working in batches, fry coated green beans in the hot oil until crisp, about 1 minute 30 seconds. Transfer green bean fries to a paper towel-lined colander using a slotted spoon. Serve green bean fries with dip.

1 cup red wine vinegar
1 cup sugar
1 tablespoon whole black peppercorns
1 large mango, peeled and pureed
4 pork chops, about 5 ounces each
Olive oil
Salt, to taste
2 mangoes, peeled and coarsely chopped
1 cup cooked black beans, or canned beans, rinsed and drained
2 green onions, finely sliced
1 tablespoon serrano pepper, seeded and finely diced
1/4 cup fresh lime juice
2 tablespoons olive oil
2 tablespoons honey
1/4 cup chopped cilantro
Salt and freshly ground pepper, to taste
1 1/2 pounds yucca, peeled and cut into 3-inch sections
3 tablespoons kosher salt, plus more to taste
1 cup fine yellow cornmeal
1 tablespoon ancho chile powder
1 1/2 quarts peanut oil

Steps:

  • Place vinegar, sugar and peppercorns in saucepan and reduce until thickened. Whisk in mango puree and cook 1 minute. Strain into bowl. Preheat grill. Brush pork chops with olive oil on both sides and season with salt. Grill for 5 minutes on each side for medium doneness. Remove and brush liberally with the glaze.
  • For the Mango Salsa: Combine all ingredients in medium bowl and season with salt and pepper. Let sit for 30 minutes before serving.
  • For the Yucca Steak Fries: Place yucca in pot filled with 1 quart water and 2 tablespoons of salt. Simmer for 20 to 25 minutes or until soft through the center. Remove from heat with slotted spoon to bowl of ice water. Drain on paper towels. Cut yucca into fries, 3 inches long by 3/4 inches wide. Place cornmeal in medium bowl and add 1 tablespoon salt and ancho chile powder. Roll fries in cornmeal mixture. Preheat oil to 370 degrees F. Fry yucca in batches until golden brown. Drain on plate lined with paper towels and salt immediately.

These are tasty alternatives to both regular french fries and also a way to get in your veggies! I make them by the truckload and freeze them. My husband hates green beans but gobbles these up! Serve with Ranch dressing or another favorite dipping sauce.

1 pound fresh green beans, trimmed
½ cup water
1 egg
½ cup milk
2 cups seasoned bread crumbs
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
1 cup all-purpose flour

Steps:

  • Heat the oil in a deep fryer or electric skillet to 375 degrees F (190 degrees C).
  • Combine the green beans and water in a saucepan. Cover and bring to a boil. Cook until the beans are bright green, about 4 minutes. Drain and transfer to a bowl. Cover with cold water and set aside.
  • In one bowl, whisk the egg and milk together. In a separate bowl, mix together the bread crumbs, chili powder, garlic powder, and onion powder. T.G.I. Friday's doesn't exactly specialize in health food: The mega-chain is famous for bar food like loaded potato skins and Jack Daniel's-glazed chicken wings. So, it's no surprise that when the restaurant added veggies to the appetizer list, they were deep-fried. The dish, Crispy Green Bean Fries, hit the menu in 2006, and customers went crazy. The beans are coated in a garlicky breading, fried and served with cucumber-wasabi ranch dip. They're a top-seller these days, and fans like Karlyn Siegwarth from Pittsburgh have been begging us for the recipe. Reps in Carrollton, TX, wouldn't give it up, so our chefs created this perfect copy.

1/2 cup peeled, seeded, chopped cucumber

  • Heat a large skillet over medium-high heat for 3 minutes. Add the oil and heat another minute.
  • Scatter the beans evenly in the pan and sprinkle with the salt (see Cook's Note). ½ cup bottled ranch dressing (I used Hidden Valley)
¼ cup cucumbers, peeled, seeded, minced
1 tablespoon milk
1 ½ teaspoons prepared horseradish
1 teaspoon cider vinegar
1 teaspoon wasabi powder
1/8 teaspoon salt
Pinch cayenne pepper
For the beans
1 egg beaten
1 cup of milk
4 cups of vegetable broth or chicken broth
6 to 8 ounces of fresh green beans
1 cup of flour
1 cup plain breadcrumbs or seasoned dry bread crumbs
¾ teaspoon salt
¼ teaspoon onion powder
1/8 teaspoon garlic powder
Oil for frying (I use canola)

Steps:

  • To prepare the dip: Combine dip ingredients in blender. Blend until smooth. Place in a bowl: cover and chill till ready to use. Dip will thicken as it chills. To prepare the beans: Place beans in broth. Bring to a boil and cook 15 minutes, then drain and place in cold water to stop cooking process. Mix beaten egg with milk in a shallow bowl. Measure 1 cup of flour into another shallow bowl. Combine bread crumbs, ¾ teaspoon salt, black pepper, onion powder and garlic powder into a third bowl. Take a handful of beans out of the water and shake off excess liquid. Coat the beans with the flour, shaking to remove excess flour. Dip the beans, one at a time, into egg/milk mixture, then dip in breadcrumb mixture. Place the beans on a plate until all are coated. Heat the oil to 350 degrees F. Use enough to cover the beans. Fry until golden brown, about 1 ½ minutes. Drain on paper towels.

¼ cup mayonnaise

Steps:

  • Wash green beans and dry thoroughly.
  • Whisk together eggs and egg white in a shallow bowl until just frothy. Whisk in 1/4 teaspoon salt and 1/4 teaspoon pepper.

1/2 cup mayonnaise
1 canned chipotle chile, chopped
1 cup flour, divided
1 cup finely ground cornmeal
1/2 teaspoon kosher salt
1/4 teaspoon pepper
1/2 cup buttermilk
12 ounces green beans, stem ends trimmed

Steps:

  • Heat oil in a medium saucepan over medium heat until it reaches 375 degrees F on a deep-fry thermometer (oil temp will drop slightly with addition of green beans -- maintain at 350 degrees F). Reduce heat to low if it gets too hot.
  • Meanwhile, combine mayonnaise and chipotle in a small bowl; set aside. Mix 1/2 cup flour; the cornmeal salt and pepper in a medium bowl. Put remaining 1/2 cup flour in a second bowl and buttermilk in a third bowl.
  • Working with about 10 beans at a time, dust beans with flour, dip in buttermilk, then dredge in cornmeal mixture, breaking clumps apart as needed.

1 c instant flour

  • To prepare the dipping sauce, place all of the ingredients into a small mixing bowl and whisk until well-combined. Refrigerate the sauce until serving time. To prepare the fries, add the flour, cornstarch, baking powder, salt, garlic powder, and sesame seeds to a medium-size mixing bowl. Combine the ingredients with a fork. Add the club soda and soy sauce into the dry mixture and stir until just combined. Heat the oil over high heat in a Dutch oven or deep-sided skillet. Use a thermometer to keep the temperature around 350°F-375°F. Line a baking sheet with paper towels. Dip each green bean into the batter, coat completely, and add a handful to the hot oil. Fry for 2-3 minutes, or until golden brown. Place the fried green beans onto the baking sheet to drain and keep them warm in a 300°F oven while you coat and fry batches of the remaining beans. 1 pound fresh green beans (ends trimmed)
2 cups Panko bread crumbs
1/3 cup grated Parmesan cheese
1/4 teaspoon garlic powder
1/4 teaspoon kosher salt (plus more to taste)
1/4 teaspoon freshly ground black pepper
2 eggs
2 tablespoons olive oil
The juice from one small lemon (optional)

Steps:

  • Heat oven to 425 degrees Fahrenheit. Line a large baking sheet with parchment paper or a silicone mat.
  • In a small baking dish (room for the beans to roll around), stir together the Panko bread crumbs, parmesan cheese, garlic powder, salt, and pepper. Crack eggs into a shallow dish and whisk along with 2 tablespoons water.

1/4 cup peeled, seeded, and minced cucumber
1 tablespoon whole milk
1 1/2 teaspoons prepared horseradish
1 teaspoon white vinegar
1 teaspoon Japanese wasabi powder
1/8 teaspoon salt
1 pinch cayenne pepper, or more to taste
Green Bean Fries:
2 cups water
2 cups chicken broth
8 ounces fresh green beans, trimmed
1 egg, beaten
1 tablespoon whole milk, or more as needed
1/2 cup plain bread crumbs
1/2 cup crushed French-fried onions
3/4 teaspoon salt
1/2 teaspoon onion powder
1/4 teaspoon ground black pepper
1/4 teaspoon garlic powder

8 cups vegetable oil for frying

Steps:

  • Blend ranch dressing, cucumber, 1 tablespoon milk, horseradish, vinegar, wasabi powder, 1/8 teaspoon salt, and cayenne pepper together in a food processor until dip is smooth. Transfer dip to a bowl, cover, and refrigerate until chilled, at least 30 minutes.
  • Bring water and chicken broth to a boil; add green beans and cook until slightly tender, about 10 minutes. Drain.
  • Whisk egg and 1 tablespoon milk together in a bowl. Combine bread crumbs, French-fried onions, 3/4 teaspoon salt, onion powder, black pepper, and garlic powder together in a separate bowl. Place flour in a third bowl.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Press green beans in flour until evenly coated. Dip coated green beans in egg-milk mixture, allowing excess liquid to drip back into bowl. Transfer green beans to bread crumbs mixture and press to coat, shaking off excess. Arrange coated beans in 1 layer on a plate or in a colander.
