APPLE SPINACH SALAD



Apple Spinach Salad image

This classic apple spinach salad is easy to make with fresh ingredients, tossed with a quick apple cider vinaigrette, and easy to customize with your favorite add-ins.

Number Of Ingredients 12

5 ounces fresh baby spinach
2 small apples, cored and thinly sliced
half of a small red onion, thinly sliced
1/2 cup chopped walnuts, toasted
1/3 cup dried cranberries
3 ounces crumbled goat cheese
1/4 cup extra virgin olive oil
2 tablespoons apple cider vinegar
2 teaspoons honey
1 teaspoon Dijon mustard
1 small garlic clove, peeled and minced
a generous pinch of salt and black pepper

Steps:

  • Combine all of the vinaigrette ingredients together in a bowl and whisk vigorously (or shake them together in a mason jar) to combine.
  • Add spinach, apples, red onion, walnuts, dried cranberries, and half of the goat cheese to a large bowl. Drizzle with the vinaigrette, and toss to combine.
  • Serve immediately, garnished with the remaining goat cheese, and enjoy!

2 medium tart apples, chopped
1/4 cup golden raisins
1/4 cup sugar
1/4 cup cider vinegar
1/4 cup vegetable oil
1/4 teaspoon garlic salt
1/4 teaspoon celery salt
1/2 cup chopped cashews

Steps:

  • In a large salad bowl, combine the spinach, apples and raisins. In a small bowl, whisk the sugar, vinegar, oil, garlic salt and celery salt. Drizzle over salad and toss to coat. Sprinkle with cashews. Serve immediately.

2 tablespoons olive oil
1 tablespoon cider vinegar
1 teaspoon Dijon mustard
Salt and freshly ground pepper
5 ounces baby spinach leaves (about 5 cups lightly packed)
1 Granny Smith apple
1/3 cup walnut pieces, toasted in a dry skillet over a medium-high flame until fragrant, about 2 minutes

Steps:

  • In a small bowl whisk together the oil, vinegar and mustard. Season with salt and pepper to taste.
  • Toss the spinach with the dressing until evenly coated then divide the spinach among 4 serving plates.
  • Core the apple and slice it into matchsticks. Sprinkle a quarter of the apple pieces on top of each salad. Follow with the walnut pieces. Serve immediately.

This is such a quick and easy salad yet SO tasty! You can also use the same amount of the other ingredients and half the amount of spinach for fewer people.

2/3 c dry roasted peanuts
1/2 c raisins (golden or regular)

1/2 c rice vinegar
2/3 c olive oil, light
1 Tbsp mango chutney
1 tsp each: curry powder, salt, and dry mustard

Steps:

  • 1. Prepare in salad bowl, spinach, apples sliced, green onion, peanuts, and raisins. Toss with desired amount of dressing and top with toasted sesame seeds
  • 2. Prepare dressing: in a bowl, whisk together vinegar, chutney, dry seasonings adding olive oil last. Whisk well until all ingredients are blended together.
