The recipe title says it all, simple, yet elegant. Wonderful green beans using walnuts, goat cheese and balsamic vinegar. Simple company dish or great for those of us who like to eat as if we were having company! Reduces easily.

Steps:
- Steam green beans in boiling water until crisp-tender (4-6 minutes).
- Drain and set aside.
- Heat olive oil in skillet over medium heat, add walnuts, and toast in oil for about 3 minutes.
- Add green beans, salt and pepper.
- Sauté for about 3 more minutes.
- Add balsamic vinegar, toss with beans and walnuts to thoroughly coat.
- Remove from heat.
- Sprinkle with crumbled goat cheese, toss lightly and transfer to serving dish.
MARINATED GOAT CHEESE CRUMBLE
I had this at my friend's birthday last night. It was deliciously creamy. I haven't made it myself yet, but I thought I'd share it with all of you. My friend said she cooked it for 10-15 minutes until it was bubbly.

Steps:
- Crumble the goat cheese into the bottom of a serving dish (if you want to serve this recipe warm, use an ovenproof dish).
- Sprinkle the prunes, onion, capers and parsley on top.
- In a cup, mix the olive oil, vinegar, honey, salt and pepper.
- Drizzle on the mixture in the dish.
- Crumble can be served immediately or refrigerated for several hours before serving. To serve warm, place in a 325?F oven for 2 to 3 minutes to soften the cheese. Serve with crackers.

SHEET PAN GREEN BEAN CASSEROLE

- Preheat the oven or a toaster oven to 400 degrees F.
- For the green beans: Place the green beans on a sheet pan. Add the mushrooms, olive oil and capers, sprinkle with 1/4 teaspoon salt and toss to coat. Roast the green beans until tender and the skins blister, 8 to 10 minutes depending on the thickness of the green beans.
- For the goat cheese sauce: Meanwhile, add the butter to a small saute pan over medium heat and cook until it starts to bubble and brown. Add the flour and stir to cook the flour, 1 to 3 minutes. Slowly whisk in the milk. Continue to cook until the mixture simmers and thickens, about 10 minutes. Add the garlic powder and pepper. Remove from the heat and add 3 ounces of the goat cheese. Taste and season with salt.
- For the garnish: When the green beans are tender, pour the goat cheese sauce on the bottom of a platter. Top with the roasted green beans and sprinkle with the remaining goat cheese and crispy fried onions. Serve immediately.
SALAD OF FRENCH-STYLE GREEN BEANS AND GOAT'S CHEESE
French-style green beans (which is NOT the same as French green beans!) are great for salads: they are slightly sweeter than "normal" green beans, and because they are so flat they are easy to blanch quickly without losing any of the goodness. This recipe is great for picknicks -- bring the cheese separately and add to the salad just before serving. If you want to add some colour, add a finely cut tomato.

- Juice the lemon. Cut the beans diagonally into broad diamond shapes (any shape will do, but this just looks pretty). Blanch them in boiling water in circa 2 mins and immediately rinse in cold water. Cut the olives into chunks. Mix beans, olives, oil, and lemon juice, and add salt and pepper to taste.
- Crumble the cheese over the salad.
