3 slices bacon
1 small sweet onion, thinly sliced
4 -5 medium mushrooms, thinly sliced
1/2 teaspoon sugar
1/2-3/4 lb venison loin, thinly sliced
lemon pepper (to taste)
1 teaspoon lemon juice
2 flour tortillas or 2 pita bread, warmed
2 tablespoons sour cream
1 cup fresh spinach leaves
3 -4 tablespoons feta cheese, crumbled

Steps:

  • Fry bacon in a skillet until brown; remove from pan, crumble and set aside.
  • Add onion and mushrooms to pan and sauté until onions are translucent, add sugar and stir well.
  • Add venison and sprinkle generously with lemon pepper.
  • Add lemon juice and sauté until venison is cooked but still slightly pink.
  • Warm tortillas in microwave with a damp paper towel on top.
  • Place sour cream in the center of tortilla, add 1/2 cup spinach, feta cheese, crumbled bacon and venison mixture.
  • Wrap and serve immediately.

2 tablespoons olive oil
1 ½ tablespoons ground cumin
1 tablespoon minced garlic
2 teaspoons dried marjoram
2 teaspoons ground dried rosemary
1 tablespoon dried oregano
1 tablespoon red wine vinegar
salt and pepper to taste
3 pounds venison, cut into 1/4 thick strips
1 (12 ounce) package pita breads, warmed

Steps:

  • Whisk together the olive oil, cumin, garlic, marjoram, rosemary, oregano, red wine vinegar, salt, and pepper in a large glass or ceramic bowl. Add the venison strips, and toss to evenly coat. Cover the bowl with plastic wrap, and marinate in the refrigerator at least 2 hours.
  • Heat a large skillet over medium-high heat. Cook the venison strips, a half pound at a time, until the venison has browned on the outside and is no longer pink on the inside, about 8 minutes. Pile the meat onto warmed pitas to serve.

1/2 a cucumber
200g tomatoes
1/2 iceberg lettuce
1 red onion
6-8 tortilla wraps/ flatbreads / thin pittas - i prefer tortillas
homemade/pre-made tzatziki

3 tbsp Olive Oil
3 tbsp Lemon Juice
3 Garlic Cloves (minced/finely chopped)
1 tbsp oregano
1 tsp salt
Freshly cracked black pepper
6-8 Boneless Skinless Chicken Thighs

Steps:

  • Prepare the Chicken Marinade first. Get a large bowl. Combine olive oil, lemon juice, garlic, oregano, salt and pepper. Add the Chicken Thighs and give it a mix with your hands. Make sure you get into all the nooks and crannies. Add more oregano if necessary. Leave for 30ish minutes.
  • Prepare wrap ingredients. Slice tomatoes, slice cucumber into half moon shapes, THINLY slice onions and slice the lettuce.
  • Add the marinated chicken to a medium-heat skillet or frying pan for 5-7 minutes. Cook in 2 batches to avoid over crowding the pan (this should allow it to brown nicely). Once nicely browned and cooked through leave to rest on a chopping board for 5 minutes before slicing.
  • Build the wraps. Toast the flatbread or tortilla on a frying pan. I place a tortilla directly onto the gas as this gives a nice charred flavour. You may prefer to heat in frying pan.
  • Build the wraps - tortilla/flatbreat, then lettuce, onion, cucumber, tomatoes.and tzatziki. Be careful not to over fill, just a little of each is best. Slice the rested chicken and add to the wrap. And enjoy!
  • To wrap the tortilla properly, first fold up from the bottom, the fold the two adjacent sides over.

VENISON WRAPS

My husband and I came up with this while looking for new ways to cook venison. Everyone who has tried them has requested the recipe.

½ pound venison tenderloin
3 tablespoons zesty Italian dressing
12 slices bacon
¼ cup cream cheese
12 slices pickled jalapeno peppers
½ teaspoon seasoning salt to taste

Steps:

  • Cut the venison tenderloin into 12 strips lengthwise. Toss with Italian dressing, and allow to marinate for 1 hour in the refrigerator.
  • Preheat a grill for medium heat.
  • To assemble the venison wraps, lay a strip of venison on top of a strip of bacon. Place a teaspoon of cream cheese at one end, and top with a slice of jalapeno. Roll up and secure with a skewer. Repeat with remaining ingredients. Season the wraps with desired amount of seasoning salt.
  • Grill for 10 minutes, then turn over, and continue cooking until the bacon is crisp.

This recipe originated via other recipe suggestions for filet mignon. I made this recipe on my own to celebrate my hunter-husband's Valentine's!

6 thick slices bacon
2 (3/4 pound) venison tenderloin roasts
2 teaspoons olive oil, divided
¼ teaspoon onion powder, divided
kosher salt and ground black pepper to taste
2 tablespoons butter
1 (8 ounce) package sliced cremini mushrooms
2 cloves garlic, chopped
1 tablespoon chopped green onion, or more to taste
½ cup heavy whipping cream, or more to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place bacon on a slotted baking pan.
  • Bake bacon in the preheated oven until partially cooked but still flexible, 6 to 8 minutes.
  • Brush venison tenderloins with olive oil and season with onion powder, salt, and black pepper. Place tenderloin roasts side by side and wrap them together in strips of partially cooked bacon. Place into a roasting pan.
  • Roast until bacon is browned and an instant-read meat thermometer inserted into the thickest part of a tenderloin reads at least 145 degrees F (65 degrees C), about 1 hour.
  • Heat butter in a saucepan over medium heat; cook and stir mushrooms and garlic in hot butter until mushrooms are soft, 8 to 10 minutes. Stir green onion into mushroom mixture; pour in cream. Cook, stirring often, until sauce is heated through. Serve sauce with tenderloins.
