1 tablespoon olive oil
1 garlic clove (minced)
1/2 cup onion (diced)
3 roma tomatoes (diced and seeded)
1 (4 ounce) can black olives, sliced (drained)
1/4 teaspoon oregano
2 (10 ounce) packages French style green beans (thawed & drained)
salt and pepper
5 ounces feta cheese (crumbled)

Steps:

  • Saute onion and garlic in olive oil for a minute or so, be careful not to burn.
  • Stir in diced tomaotes,olives & oregano; cook over med. heat for 3 minute.
  • Add drained green beans, simmer for another 5 minutes.
  • Right before serving, crumbled feta cheese on top.

2 cups fresh green beans, cut into 2-inch pieces
1/2 small sweet onion, cut into thin wedges
1 tablespoon olive oil
1 small tomato, cut into eighths
1/2 teaspoon dried oregano
1/4 teaspoon salt
Dash pepper

Steps:

  • Place the beans in a saucepan and cover with water; bring to a boil. Cook for 3-4 minutes or until crisp-tender; drain. , In a small skillet, saute onion in oil for 3 minutes. Add the beans; saute for 5 minutes or until tender. Reduce heat. Add the tomato, oregano, salt and pepper; cool 1 minute longer or until heated through.

1 yellow onion (approx. 2 cups chopped)
bunch of string beans (approx. 1/2 lb)
2 bay leaves
10 peeled tomatoes (whole stewed or fresh, 2 cups chopped)
4 cloves garlic
handful fresh parsley, about 1/4 cup
salt and pepper, to taste (about 1/2 tsp each)
2 tbsp olive oil, plus 3 tbsp for topping
1/2 tsp dried oregano (optional)

Steps:

  • Prepare the string beans... rinse well and trim all stems Quarter the potatoes and give the onion a rough chop Roughly chop tomatoes (keep any juices) Heat a couple of tbsp olive oil in a large pot or Dutch oven over medium heat Add the onion, potatoes, tomatoes, and bay leaves Sprinkle with salt and pepper (and oregano, if using) and stir Set string beans on top of potatoes Cover and then reduce heat to low/medium heat Cook for about 30 minutes Meanwhile, finely mince the garlic cloves and parsley In a small bowl, mix the garlic, parsley, and about 3 tbsp olive oil Stir to mix and then aside until potatoes are ready After about a half hour, check potatoes for doneness Taste for seasonings- add salt and pepper as desired Remove bay leaves Plate and top with the garlic-parsley blend The more of a garlic fan you are, the more you'll want... This recipe was adapted from a recipe posted in the Houston Chronicle. The key is to make the tomato sauce separately and serve on top of the beans. This method keeps the green beans crisp tender, and a bright green color. When the tomatoes and beans are cooked together the acidity turns the beans a dark olive color.

1 (16 ounce) can diced tomatoes
1/2 cup water
2 medium onions, finely chopped
3 tablespoons chopped fresh parsley
1 clove garlic, minced
1 tablespoon chopped of fresh mint or 1 teaspoon dried mint
2 teaspoons fresh oregano leaves or 1/2 teaspoon dried oregano
salt, to taste
black pepper, freshly ground,to taste
1 1/2 lbs fresh green beans

Steps:

  • Wash, tip and cut up fresh beans.
  • Place in pan with water to cover beans.
  • Simmer uncovered until beans are just tender, stirring a few times.
  • Meanwhile, combine undrained tomatoes with water, onions, parsley, garlic, mint, oregano, salt and pepper in a saucepan.
  • Cover; bring just to a boil, reduce heat and let simmer 10 minutes, stirring frequently.
  • When tomato sauce is thick, drain green beans and top with sauce; serve promptly.

1 pound Green beans
1 onion, large
4 cloves garlic
3/4 teaspoon red pepper flakes
2 Roma tomatoes, large
1 tablespoon olive oil
1 cup wine, dry white
1/2 teaspoon cinnamon
1 lemon, cut into wedges

Steps:

  • If the green beans are frozen, thaw at room temperature for about half an hour while prepping the rest of the ingredients. If fresh, wash them and snap off the ends, and snap each bean in half.
  • Heat the olive oil in a Dutch oven or heavy lidded pot over medium heat. Sauté the onion and garlic gently over medium heat for about 10 minutes, or until they are soft. Add the red pepper and tomatoes and sauté for another 5 minutes, until the tomato begins to break down.
  • Stir in the green beans, toss them to coat with the onion and oil. Pour in the wine and bring to a simmer over medium-high heat. Cover and cook for 45 to 60 minutes, or until the beans are tender to your liking.
  • Stir in the cinnamon, and season to taste with salt and pepper. Serve with lemon wedges on the side.

• 1 pound fresh green beans, tipped and tailed
• Vegetable oil cooking spray
• 3 tablespoons olive oil
• About 1 tablespoon medium to finely chopped garlic (5 or 6 cloves)
• 1 large fresh tomato, chopped (I go ahead and leave the skin on and seeds in; if you are fussier than me, remove both and use only the chopped pulp of 2 tomatoes)
• Salt and freshly ground black pepper
• A few dashes of cayenne
• 1/2 to 1 teaspoon dried dill

Steps:

  • 1. Blanch the green beans: Bring a large pot of water to a boil over high heat. When the water is boiling, add the green beans and cook for 2 minutes. Drain them well, then rinse with cold water, and drain them again. 2. Spray a large, heavy (preferably cast iron) skillet with a tight-fitting cover with oil, and set it over very low heat. Add the olive oil, scatter the garlic over it, and add the blanched green beans (in contrast to most sautes, the green beans are added when neither pan, nor oil, nor garlic, is yet hot). Scatter the tomato over the beans. Don't stir. 3. Still keeping the heat as low as possible, cover the beans and let them just barely cook, without stirring, for about 40 minutes. I know it's hard, but keep on not stirring; leave the heat low enough so that nothing burns. If you like, you can push a few beans back to check on the garlic at the bottom of the skillet. It should not be browning, merely cooking very, very slowly. Some of the beans will be browned on oneside, which is good. If this hasn't happened yet, cover again and cook for 10, even 15, minutes more. 4. When the beans are soft, lift the lid and stir gently. It is unlikely, but if there's a noticeable amount of liquid in the skillet, turn the heat up and, stirring gently but constantly, evaporate the liquid off. You want soft, barely-holding-together green beans. They should be slightly shriveled-looking and browned lightly here and there, with a bit of the garlic-tomato jam sticking to them. 5. Turn off the heat. Salt and pepper the beans, sprinkle them with the cayenne and dill, stir one more time, and serve.

1 1/2 cups tomatoes, peeled and finely chopped
2 onions, finely chopped
3/4 cup olive oil
1 green pepper, thinly sliced
1 bunch fresh parsley, finely chopped
2 garlic cloves, finely chopped
1/4 cup water
1 pinch sea salt
1 pinch fresh ground pepper

Steps:

  • Rinse the beans in cool water and cut of the tips and any stringy fibres.
  • Using a saucepan,sauté the onions in the olive olive until softened.Add the garlic and saute for a few further minutes.
  • Add all remaining ingredients and stir well.
  • Reduce the heat and simmer uncovered for around 50 minutes, or until the beans are tender. You may need to add more water if needed throughout this time.

¼ cup extra virgin olive oil
1 red onion chopped
1 lb. fresh green beans
2 medium Yukon Gold potatoes, cut in half and sliced into ¼" slices
6 medium tomatoes, grated in food processor (or 1 cup crushed tomatoes, or passata)
½ cup fresh parsley, minced
½ teaspoon sea salt
¼ tsp freshly grated pepper
2 TBSP. extra virgin olive oil

Steps:

  • Clean and trim the green beans.
  • Place a medium pot over medium heat and heat the olive oil. Sauté the onion until soft and stir in the potatoes and the beans. Cook, stirring frequently, for 5 minutes to coat with the oil without browning.
  • Next add the tomatoes, the parsley, salt and pepper, and mix well.
  • To the pot add enough hot water so the beans and the potatoes are half covered.
  • Replace the lid and simmer for about 40-45 minutes. Every 10 minutes or so, shake the pan slightly to ensure even cooking and to make sure nothing sticks to the bottom of the pot. At the end of the cooking, most liquid in the pot should be reduced and only a little sauce should remain.
  • Remove from the heat and let it sit, uncovered, for at least 10-15 minutes.
  • Enjoy warm or at room temperature.
