1 1/3 to 1 1/2 pounds chicken breast tenders, 2 packages from meat case
Salt and pepper
8 pita breads
1 ripe lemon, zested and juiced
3 tablespoon red wine vinegar, eyeball it
1/2 cup extra-virgin olive oil, eyeball it
2 tablespoons fresh chopped oregano, 4 stems, stripped of leaves and chopped
3 cloves garlic, chopped
2 hearts Romaine lettuce, chopped
1/2 cup pitted Kalamata olives, coarsely chopped
8 ounces feta cheese, crumbled
2 vine ripe tomatoes, seeded and diced
1/3 seedless or English cucumber, diced
1/2 red onion, chopped
1/2 cup flat leaf parsley leaves, a couple of handfuls, chopped

Steps:

  • Preheat grill pan over high heat. Place chicken in shallow dish and season with salt and pepper.
  • Preheat oven to 275 degrees F. Wrap pita breads in foil. Place in warm oven and heat until dinner is served.
  • Combine lemon zest, juice and vinegar in a bowl and whisk in oil. Add oregano, garlic and whisk again to combine into dressing. Pour half the dressing over chicken tenders. Turn tenders in dressing to coat.
  • Combine remaining salad ingredients in a bowl. Pour remaining dressing over salad and toss well. The salad should be very lightly dressed. Season salad with salt and pepper and transfer to a large serving platter.
  • Grill tenders 4 to 5 minutes on each side. Transfer hot tenders to the salad lined serving platter. Remove pitas from oven and unwrap. Cut pitas in half and arrange around the edge of platter.
  • To serve, each person can pile grilled chicken and veggies into pita halves, wrap up on either side and enjoy!

This is a family pleasing dinner recipe, adapted from a Rachael Ray recipe. It's pretty easy to make and gives you all those yummy Greek flavors.

1 1/2 lbs boneless skinless chicken, cut into large strips
kosher salt
fresh ground black pepper, to taste
8 pita breads
1 lemon, the zest and juice are needed
3 tablespoons red wine vinegar
1/2 cup extra virgin olive oil
2 tablespoons fresh oregano, stripped of leaves and chopped
2 -4 garlic cloves, chopped (amt depends on your love for garlic!)
2 romaine lettuce hearts, chopped
1/2 cup kalamata olive, pitted, coarsely chopped
8 ounces feta cheese, crumbled
3 vine-ripe tomatoes, seeded and diced
1/2 English cucumber, seedless kind, diced
1/2 red onion, chopped
1/4 cup fresh flat-leaf parsley, chopped

Steps:

  • Preheat a grill pan over medium-high heat.
  • Preheat oven to 200 degrees F. Wrap the pita breads in foil, and put in the warm oven until dinner is ready.
  • Put the chicken into a shallow dish with sides.Season the chicken with salt and pepper on both sides, to taste.
  • Mix the lemon zest and juice with the vinegar and then whisk in the oil. Add the oregano, garlic and whisk it again to make sure it's combined well. Pour about half of this dressing over the chicken strips and turn them to coat.
  • Combine all the veggies in a big bowl and toss well with that leftover dressing (don't pour it all in at once. add some and toss the salad and repeat until you reach the right amt of dressing for your liking). Season with salt and pepper, to taste.
  • Grill the chicken strips for about 4 to 5 minutes per side. Transfer the chicken strips to your salad bowl/dish when they are cooked through.
  • Remove the pitas from your oven and unwrap. Cut pitas in half and then arrange them around your salad bowl/dish.
  • To serve, each person can pile on the grilled chicken and veggies onto their pita and wrap it up!

2 1/4 teaspoons dry yeast
2 teaspoons salt
1 tablespoon sugar
4 cups all-purpose white flour
1 1/2 cups water
1 tablespoon olive oil

Steps:

  • Combine the yeast and sugar in a small bowl, add 1/2 cup of the warm water and let it stand for 10 minutes to proof and ferment it.
  • Dissolve the salt in the remaining warm water.
  • Put the flour in a large mixing bowl, making a well in the middle and put the dissolved yeast and salt water into it.
  • With your hands, blend it into a dough.
  • You may need a bit more or less water depending on your flour.
  • Knead the dough in the bowl with your fists for 10-15 minutes or until it is smooth.
  • Pour the oil over the dough and knead it again until the oil is absorbed.
  • Cover the dough in the bowl with a towel and set it in a draft free area to rise to double it's bulk (1-2 hours), then punch it down and knead it again for a few minutes.
  • Preheat your oven to 350°F.
  • Cut pieces of dough, egg size or larger, depending on the size of the pita desired, shape them into balls with your hands and roll them out over a lightly floured board or pastry cloth to 1/4 inch thickness.
  • Set 2 or 3 pites on a lightly oiled cookies sheet and bake them on the lower rack 2 to 3 minutes each side.
  • Pitas should be white and soft.
  • Wrap the baked pitas in a clean towel until they are cool, then store them in plastic bags to prevent them from drying out.
  • When you are ready to use them, heat a bit of oil in a shallow skillet and fry them a minute or so on each side, or until golden brown.
  • Use them immediately, because they get hard when they dry out.

1/4 cup fat-free plain Greek yogurt
3/4 tablespoon hot paprika
1 teaspoon ground cumin
1/2 teaspoon ground allspice
2 garlic cloves, minced
1 tablespoon extra virgin olive oil, plus more for brushing
kosher salt & freshly ground black pepper
2 lbs trimmed lean leg of lamb, cut into 1-inch cubes
1 lb small zucchini, halved lengthwise and cut crosswise into 1-inch pieces

Steps:

  • In a large bowl, whisk the yogurt with the paprika, cumin, allspice, garlic and the 1 tablespoon of olive oil. Season with 1 1/2 teaspoons of kosher salt and 1/2 teaspoon of pepper.
  • Add the lamb and stir until evenly coated.
  • Let stand at room temperature for 1 hour or refrigerate for up to 3 hours.
  • Light a grill or preheat a grill pan. Thread the lamb and zucchini onto 12 long metal skewers and brush with oil.
  • Season lightly with salt and pepper.
  • Grill the kebabs over moderately high heat, turning, until the lamb is browned outside and medium-rare inside, 6 minutes.
  • Serve the lamb kebabs with Warm Greek pita bread.

GREEK PITA BREAD

A quick and delicious flat bread to enjoy with every Greek meze spread.

1½ cups lukewarm water
1½ tsp. active dry yeast
1 tsp. sugar
2 TBSP. olive oil
1 tsp. sea salt
3½ cup all-purpose flour
--- extra flour for rolling

Steps:

  • In the bowl of a stand mixer equipped with a hook, add the water, the yeast, and the sugar and mix to combine. Let the mixture stand for five minutes or until you see that the yeast is forming small bubbles. Add the olive oil and the salt . With the motor running, gradually add the flour and mix until the dough pulls away from the sides of the bowl. Cover and leave in a warm spot in your kitchen to rise and rest for about 30 minutes.
  • Divide the dough into eight pieces. Dust each piece with some extra flour and roll it out into 8" rounds that are about ¼" thick. If the dough resists the stretching, let it relax for a few minutes and then try rolling it again. Lightly poke the surface of your pita breads with the tines of a fork, making sure you do not poke right through.
  • Place a heavy cast-iron skillet (or a non-stick pan) over medium-high heat. Grease the hot skillet with some olive oil. Place the pita on the hot skillet and reduce the heat to medium. Cook the pita for a couple of minutes until it starts to puff up and get a nice golden color. Flip and cook the other side.
  • Place the pita breads on a clean cotton kitchen towel and cover with the towel. Continue with the rest of the pitas, greasing the skillet lightly each time as you go. Stack the pitas, tucked inside the kitchen towel. Serve warm or allow to cool inside the kitchen towel.

GREEK PITA BREAD

If you've ever been in a Greek restaurant, this is both the bread used for Gyros (pronounced he-ros) and the dipping bread used for hummus or olive oil dipping sauce. The difference is in the size you roll it out to - 8" for Gyros, 10" for dipping. It calls for all-purpose flour, but bread flour is closer to what is typical in Greece.

3/4 cup warm water
1 tablespoon active dry yeast
1 teaspoon sugar
2 tablespoons extra virgin olive oil
1 teaspoon salt

cornmeal (for dusting)
olive oil (for cooking)

Steps:

  • In a large bowl, combine the water, yeast and sugar and let stand until you see that the yeast is active.
  • Add olive oil and, salt.
  • Using your hands, gradually add the flour into the wet and knead until the dough pulls away from the sides of the bowl.
  • Cover and leave in a warm area to rise and rest for about 30 minutes.
  • Divide into six pieces and roll into an 8 or 10 inch circle, about 1/4 inch thick.
  • Dust both sides lightly with cornmeal.
  • Place a heavy cast-iron skillet, non-stick pan, or griddle and heat to medium-high.
  • Wet a paper towel with olive oil and grease your hot skillet.
  • Place your pita dough in the skillet and and fry the bread for a couple of minutes until they start to puff and bubble up (kind of like pancakes).
  • Flip and fry the other side.
  • Place cooked pita bread on to a large cotton kitchen towel and cover.
  • Re-oil the skillet and repeat for each pita.
  • Serve warm or allow to cool inside the kitchen towel until cooled.
  • Store in a sealed plastic bag for up to a week or freeze.
