8 eggs
1 pinch salt
1 pinch of freshley ground black pepper
1 tablespoon oil
1 handfull basil leaves
1 red onion, thinly sliced
100 g feta cheese, drained and crumbled

Steps:

  • To make 1 omelette at a time: crack two eggs into a jug.Season with a little light sprinkle of salt , pepper then whisk with a fork until combined.
  • Heat 1 teaspoon of oil in a small non-stick frying pan (skillet) over a medium heat. Add the eggs mixture and cook, tilting the pan so the egg covers the base. As the omelette sets, lift the edges so that the uncooked eggs runs underneath. Cook 3-4 min or until just set.
  • Slide onto a plate and scatter over some of the basil leaves,, onion slices and feta. Fold over to enclose he filling.
  • Repeat with the remaining ingredients to make 3 more omelettes , reheating the pan between each omeltte.

3 tablespoons olive oil, or as needed
¼ cup chopped onion
¼ cup chopped green pepper
1 pound ham steak, cut into small pieces
1 teaspoon garlic salt
5 large eggs
4 asparagus spears, chopped
2 tablespoons milk
2 slices Provolone cheese

Steps:

  • Heat olive oil in a pan over medium heat; add onion and green pepper. Cook and stir until onion is slightly brown, about 5 minutes. Stir in ham and garlic salt.
  • Beat eggs, asparagus, and milk together with a whisk or a fork in a bowl; pour over ham mixture. Add whole Provolone cheese slices or break them into pieces. Cook until eggs begin to set, about 3 minutes. Gently fold the omelet in half; cook until cheese melts, about 2 minutes.

2 eggs well beaten
2 oz feta cheese prefer cake style sliced
dash(es) salt and pepper
dab of olive oil and butter to pan
1/4 c frozen spinach drained and squeezed (optional)

Steps:

  • 1. Add just a dab of olive oil and butter to fry pan, heat to medium heat.
  • 2. Beat the 2 Eggs well and add to pan. Those with a bigger appetite use three Eggs. I stir the Egg in wide circles from the center as it cooks, until it starts to set. And then lower heat to low. Stirring adds a little lightness to it.
  • 3. When Egg is 2/3 cooked I place the sliced Feta Cheese on 1/2 the top and cook a bit longer. I then flip half on top of the other and then flip whole thing to other side to provide additional heat for the cheese. You want it Golden but not Brown, and the Feta Cheese to show signs of melting somewhat.
  • 4. Note: An excellent addition is to add the well drained Spinach after placing the Feta Cheese atop.
  • 5. Toast and beverage of choice -- And Breakfast is Served.

1/8 teaspoon salt

1 tablespoon butter
1/4 cup crumbled feta or goat cheese
1/4 cup chopped tomato
1 green onion, chopped

Steps:

  • In a small bowl, whisk eggs, water, salt and pepper until blended. In a large nonstick skillet, heat butter over medium-high heat. Pour in egg mixture. Mixture should set immediately at edge. As eggs set, push cooked portions toward the center, letting uncooked eggs flow underneath., When eggs are thickened and no liquid egg remains, add cheese, tomato and green onion to 1 side. Fold omelet in half and cut into 2 portions; slide onto plates.

1/4-1/3 cup feta cheese
1/4 cup fresh spinach (handful)
oregano
salt & pepper

Steps:

  • Spray a skillet with nonstick cooking spray.
  • Place a handful of spinach into skillet and cook on medium heat until spinach begins to shrivel.
  • Set spinach aside.
  • Beat eggs together and pour into warm skillet.
  • Sprinkle feta cheese and precooked spinach over top.
  • Sprinkle with oregano, salt, and pepper.
  • After eggs appear to be cooked 1/2 or 3/4 way through, fold omelet in half and cook until center reaches desired consistency.
