2 teaspoons extra-virgin olive oil
1 small red onion, diced small
2 garlic cloves, finely chopped
2 large celery stalks, diced small
Coarse salt and ground pepper
1 pound ground white-meat turkey
1 pound ground dark-meat turkey
1 large egg
2 slices white sandwich bread, cut into small pieces
4 ounces feta, crumbled (1 cup)
1/4 cup fresh dill, chopped

Steps:

  • Preheat oven to 350 degrees. In a medium skillet, heat oil over medium. Add onion, garlic, and celery and cook, stirring occasionally, until vegetables are soft, 7 minutes. Season with salt and pepper.
  • In a large bowl, combine vegetables, turkey, egg, bread, 1 1/4 teaspoons salt, and 1/2 teaspoon pepper. Using your hands, mix until combined. Mix in feta and dill. Transfer to a parchment-lined rimmed baking sheet and form into a 4-by-10-inch loaf. Bake until cooked through, 45 to 55 minutes, rotating sheet halfway through. Let rest 10 minutes before slicing.

2 teaspoons garlic powder
1/2 teaspoon nutmeg
1/2 teaspoon salt

1 cup crumbled feta cheese

2 eggs

Steps:

  • In a large bowl, stir the spices and crushed crackers into the ground beef.

1 tablespoon red wine vinegar
2 garlic cloves, minced

Steps:

  • Preheat oven to 350°F
  • In large bowl, mix all ingredients just until well combined but not overmixed.

1 1/2 lbs hamburger
2 eggs
1/4 cup milk
2 cups quick oats
2 tablespoons oil
1 large onion, finely diced
2 -3 garlic cloves, minced
1 cup fresh parsley, minced
2 teaspoons salt
1 teaspoon cumin
1/8 teaspoon pepper
1 bunch fresh spinach, chopped or 2 (10 ounce) boxes frozen spinach, chopped, thawed
1 egg, beaten
1 1/2 cups feta cheese, crumbled
1/4 cup black Greek olive, pitted, coarsely chopped
1/2 cup ketchup
1 teaspoon cinnamon
3 tablespoons parmesan cheese
Tabasco sauce (optional)

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Mix lamb and hamburger together.
  • Combine with eggs, milk, and oats. Set aside.
  • Saute onion in oil over moderate-low or low heat for 20 to 30 minutes until translucent and golden. Estimate the cooking time for the onions and approximately 3 to 4 minutes before the end of the cooking, add the garlic.

1/2 cup green pepper, diced

3/4 cup dry breadcrumbs (Panko, if available)
1/4 cup low-fat mayonnaise
2 large eggs, lightly beaten
2 tablespoons fresh flat-leaf Italian parsley, chopped
2 teaspoons mediterranean oregano flakes
2 tablespoons lemon zest (can sub with lemon juice)
1/4 teaspoon salt & freshly ground black pepper
1 teaspoon red chili pepper flakes (optional)
1/2 cup cucumber, peeled and grated

Steps:

  • MEATOAF.
  • Preheat oven to 350F degrees.
  • Heat skillet over med-high heat, add oil.
  • Sauté onion, peppers celery to soften, about 5 minutes.
  • Add garlic; cook for 2 minutes to release flavor.
  • Set aside.
  • In large mixing bowl, stir together chicken and next 8 ingredients plus sauté veggies.
  • Mix until just combined; too much mixing toughens meat.
  • Spray a 9" loaf pan with cooking spray.
  • Spread mixture into the pan, making sure that there are no air spaces in mixture.
  • Bake for 1 hour and 10 minutes or until a meat thermometer inserted in center register 165F degrees.
  • Let stand 10 minutes before slicing.
  • SAUCE.
  • Mix all ingredients and chill at least 2 hours to blend flavors. Makes 1 cup.
  • GYROS.
  • Using favorite pita round, cut in half and cut for pita pocket, if needed. Slather lots of sauce inside pita. Slice meatloaf or cut into 1" cubes. Insert about 1/4 cup meatloaf, lettuce, sliced tomatoes and sliced cucumber (optional) -- ENJOY!

2 teaspoons freshly squeezed lemon juice
Kosher salt and freshly ground black pepper
Cooking spray
2 medium yellow onions, ends removed, peeled and quartered
1 tablespoon ground cumin
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1 pound 85-percent lean ground beef
1 large egg
1/4 cup whole-wheat breadcrumbs
1/4 cup pine nuts, optional

Steps:

  • Put the bulgur in a small bowl, cover with hot water and soak until softened, about 1 hour. Strain and set aside.
