This is an authentic recipe for "tyropita", or Greek feta cheese pie. Layers of crispy phyllo and a simple filling of feta cheese. You don't need anything more!

14 ounces feta cheese, crumbled
2 eggs
10 sheets phyllo dough, thawed if frozen
½ cup olive oil

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease two 9-inch round cake pans.
  • Mix feta cheese and eggs together in a bowl for the filling; set aside.
  • Lay out 1 sheet of phyllo on a work surface and brush liberally with olive oil. Top with another sheet and brush with oil. Repeat for a total of 4 sheets, but do not brush the top of the fourth sheet. Transfer the stack of oiled sheets to one of the greased cake pans. Drape over the bottom of the pan, trying not to be too perfect about it; you want some folds and wrinkles in the phyllo.
  • Spread 1/2 of the filling over the phyllo in an even layer. Fold the overhanging phyllo over the filling, again letting natural folds and wrinkles occur. Loosely lay 1 sheet of phyllo over the top, brush with oil, and use the oiled brush to pat down the sides all around the circumference of the cake pan.
  • Repeat with remaining phyllo, oil, and filling to assemble the second pie.
  • Bake the cheese pies in the preheated oven until the tops are a deep golden brown, 45 to 60 minutes. Let cool for 20 minutes before slicing. Serve warm or at room temperature.

1 (1 lb) package frozen phyllo dough
6 tablespoons butter
1/2 cup flour
1/3 cup milk
6 eggs
3/4 lb feta cheese, crumbled
1 cup kefalograviera cheese or 1 cup regato cheese
2 cups ricotta cheese (or anthotiro or cottage cheese)
8 ounces butter, melted

Steps:

  • Thaw phyllo dough completely.
  • Melt the 6 tablespoons butter in a large saucepan.
  • Whisk in the flour and cook slightly (1-2 minutes) to get rid of 'raw' flour taste.
  • Slowly whisk in the milk.
  • Cook over medium heat, whisking constantly, until sauce thickens.
  • Remove from heat and let cool for 10 minutes.
  • Quickly whisk the eggs into the sauce one at a time.
  • Then stir in the cheese.
  • Preheat oven to 375°F.
  • Butter a 13 X 9" Pyrex baking dish generously (you can also use a larger baking pan - the tiropita just comes out a little thinner, but is nicer for appetizer servings).
  • Flatten phyllo dough and cover with a sheet of wax paper and a lightly dampened towel (to avoid drying out).
  • Take one sheet at a time and place in baking dish.
  • Brush phyllo generously with butter.
  • Use about 6 sheets this way and then add 1/2 of cheese filling.
  • Layer 3 more sheets of phyllo (brushing each one with butter) and then top with remaining cheese filling.
  • Finally, layer 6 sheets of phyllo over top (brushing each one with butter) and fold in the edges to make the tiropita look neat.
  • Brush top generously with remaining butter.
  • Score top of phyllo carefully with the point of a sharp knife, just cutting through pastry (only cut through the top layers of pastry, do not cut all the way down to the bottom layer), into the size of pieces you will want to serve.
  • Make sure you don't cut right through pie.
  • Bake for about 45 minutes to one hour, or until golden brown.
  • (Make sure bottom crust is nice and golden- if it isn't- put it directly on floor of oven for about 10 minutes to brown faster. You don't want a soggy, uncooked bottom pastry).
  • Variation: I often add 8 oz. of a good-quality, chopped, smoked ham to the cheese filling.

1 lb feta cheese
12 ounces ricotta cheese
5 eggs (lightly beaten)
1/2 teaspoon fresh parsley (finely chopped)
melted butter (for brushing, olive oil can also be used)
1 package phyllo dough (room temperature)

Steps:

  • Preheat oven to 375 degrees.
  • Combine crumbled feta and ricotta cheeses.
  • Add eggs and beat thouroughly, then parsley and mix well.
  • Lay 1 sheet of phyllo dough in a 9x9 in baking dish and brush lightly with melted butter.
  • Lay another sheet of phyllo dough on top, brush with butter, and repeat with four more sheets of phyllo.
  • Spread cheese mixture into pan and place another 6 sheets of phyllo in the same process as before.
  • Place in a preheated 350 degree oven for 30 to 40 minutes.
  • Serve while hot.

GREEK SPINACH & HERB PIE (WITHOUT CHEESE) A.K.A. SPANAKOPITA

Spanakopita can be made with or with out cheese. The no cheese version is as popular with Greeks as the version with cheese, and is a popular Lenten dish. Although the name for this dish is often used for the spinach pie with cheese, traditional spanakopita does not include cheese.**Cooking time does not include the 30 minutes it needs to sit before serving.**

2 lbs fresh spinach, washed
1/2 cup fresh dill, finely chopped
1/2 cup fresh parsley, finely chopped
1 garlic clove, finely chopped
4 spring onions, finely chopped
1/2 medium leek, finely chopped
Pam cooking spray
1/2 lb phyllo pastry sheet (approx. 14 sheets)
sea salt, to taste
fresh ground pepper, to taste

Steps:

  • Coarsely chop spinach and place in a colander. Salt lightly and let drain for 10 minutes. Press or squeeze to remove all excess liquid.
  • In a large mixing bowl, combine spinach, dill, parsley, garlic, onions, leek, pepper, and mix well until ingredients are well blended.
  • Preheat the oven to 350°F (175°C).
  • Spray 9" round or square pyrex plate with cooking spray. When laying the sheets in the pan, leave an overlap of phyllo outside the pan rim all the way around. Lay half the phyllo sheets on the bottom, spraying each one lightly with Pam cooking spray.
  • Spoon in the spinach mixture and spread evenly. Fold the extending phyllo in over the mixture. Lay the remaining phyllo sheets on top, spraying each with cooking oil except the top sheet. Tuck or tim eadges. I like to kind of ruffle mine.
  • Bake at 350°F (175°C) for 45-50 minutes in the middle of the oven. When done, remove from the oven and allow to cool 1/2 hour before serving.

6 tablespoons butter
8 tablespoons flour
2 cups milk
1 teaspoon salt
1 dash nutmeg
1 lb feta cheese
1 cup grated kefalotiri (Cheese -- or Parmesan)
4 eggs
1/4 cup chopped parsley
3/4 lb phyllo dough (pastry sheets)
3/4 cup melted butter

Steps:

  • Melt butter in small saucepan over low heat; blend in flour until smooth. Gradually add milk, stirring constantly with wire whisk or wooden spoon. Add salt and nutmeg, stirring occasionally, simmer for 5 minutes, or until white sauce is thick. Cool.
  • Mash feta cheese with a fork and combine with the grated cheese, well beaten eggs, parsley and white sauce.
  • Butter a 9X13 inch baking pan.
  • Line with half the pastry sheets, brushing each sheet with butter, and letting them come up the sides of the pan.
  • Pour in the cheese filling and cover with the remaining pastry sheets, brushing each sheet with butter.
  • Brush top with remaining butter and, with a sharp knife, score the top sheets into strips about 3 inches wide from one end of the pan to the other. Bake in a moderate oven until golden, about 45 minutes.
  • Cut into squares and serve hot.

400 g feta, cubed
150 g gruyere, grated
3 eggs
1 cup thick yogurt
250 g butter, melted
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon black pepper

Steps:

  • Preheat oven to 180°C.
  • In a large bowl combine butter, lightly beated eggs, baking powder, cheese, pepper, yogurt and flour.
  • Stir until thoroughly blended.
  • Lightly butter a wide baking pan and transfer mixture to the pan.
  • Bake for 30 - 35 minutes.
  • Let it cool slightly then cut into small squares.
  • Serve hot or cold.

7 medium eggs
1 lb fillo sheets (40 sheets)
24 oz cottage cheese
1/2 lb feta cheese with tomato and basil
1 c ricotta cheese
2 1/2 tsp greek seasoning
1 tsp pepper
3 - 4 stick butter

Steps:

  • 1. Add feta cheese, cottage cheese and ricotta in a medium size bowl and mix together. Add your seasonings and 7 eggs that have been whisked together.
  • 2. Melt your butter and margarine in a small pan and begin brushing each filo sheet with butter on both sides. I would do 15 - 20 sheets.
  • 3. This is a photo of the filo sheets while working with them. I just laid them on a piece of wax paper and then some plastic wrap over the top of them. Then a damp wet clothe to keep them most as you work buttering sheet to sheet.
  • 4. Begin adding your sheets to your pan that you are going to bake your pie in. It is ok if they tear or are not perfectly straight. It will all work out.
  • 5. Add cheese filling on top of the filo sheets.
  • 6. Add remaining filo sheets, 10 to 11, brushing each with melted butter. Score into 24 or 36 pieces. Bake at 350 degrees for 1 hour. Oh, I also sprinkled a little greek seasonings on the top as well. For the top, I would do again 15 - 20 sheets.
  • 7. You can serve this warm or cold the next day right out of refrigerator. I love it either way, it is that good.
  • 8. I scored this to 12 slices because we ate it as a side dish with soup but you could easily get 24 smaller slices.
  • 9. Here is the feta that I used....it is so so good!

GREEK FENNEL & FETA CHEESE PIE "MARATHOPITA"



Greek Fennel & Feta Cheese Pie

I always have had fennel growing in my garden, but always got rid of it along with other weeds, cause I never knew it's value:) Until one day a Cretan friend came over and asked me what do I do with the fennel. She almost freaked out when I said "I throw it out" She taught me a few ways the Cretans use fennel. She gave me this easy recipe which we liked so much I've made it 3 times in the past 3 weeks. It makes a light meal or snack. Warm or room temperature just as good. Can be kept in closed oven or on the counter covered. Hope you try it and enjoy it as much as we do.

1 cup(s) strained, greek yogurt
1 1/4 cup(s) self-rising flour
3 bunch(es) fresh wild fennel*, only fine leaves, chopped
1 bunch(es) green onions, white & green parts finely chopped
1 pound(s) spinach (optional)
1 tablespoon(s) olive oil
salt & pepper (caution on salt cause feta is a salty cheese)
* IF YOU CAN'T FIND WILD FENNEL, YOU CAN TRY SUBSTITUTING A FINELY CHOPPED FENNEL BULB AND 1 CUP CHOPPED DILL. WHILE THE ONION IS COOKING, ADD 1/3 CUP OUZO OR 2 TSP GROUND FENNEL SEEDS FOR A SIMILAR TASTE.

Steps:

  • Preheat oven to 375 degrees. In a large bowl combine flour, melted butter but cooled, and yogurt..Start with 1 cup flour as you might not need all the amount of flour. The mixture might be crumbly, it will smooth as you knead. Place the dough on a lightly floured surface & gently knead to form a smooth ball. Place the dough in a bowl, cover with plastic wrap and set aside for 20-30 minutes, or store in the fridge for up to 2 days.
  • In a skillet saute the chopped green onion, fennel and spinach if using and set aside to cool.
  • In a large bowl combine the cooled fennel & onion mixture with the crumbled Feta cheese. Add pepper and very little salt as Feta is a salty cheese. Drizzle 1 Tbsp olive oil on top and with your hands crush the mixture to combine.
  • Divide dough in half. Lightly flour work surface and roll out each half of dough and spread it as thin as you can to fit your baking pan. I use my oven's shallow pan, 16x12 in. You can use a large cookie sheet as this pie does not rise.
  • Pour the fennel & feta mixture. Evenly spread it in the pan. The same way roll out the other half dough and lay on top. Tuck the edges inwards and score into serving (squares) pieces.
  • Bake for about 45- 60 minutes or until lightly golden brown. Kali Orexi = Good Appetite
