1 pound steak
4 flour tortillas
1 cup Monterey Jack cheese
green onions (chopped (optional))
salsa
sour cream

Steps:

  • Season and grill steak to desired doneness (I like to season with Montreal Steak Seasoning). Slice into thin strips.
  • Place on tortilla, add cheese and green onion, fold over.
  • Spray each side of quesadilla with cooking spray, then grill for abour 1-2 minutes on each side or until tortilla becomes golden brown and a few grill marks.
  • Serve immediately with salsa and sour cream.

8 flour tortillas from 1 package (10 count) Old El Paso™ Flour Tortillas for Soft tacos and Fajitas
Cooking spray
1 cup Old El Paso™ fat-free refried beans (from 16-oz can)
1/2 cup diced bell pepper, any color
1 small tomato, seeded, diced
1 can (4.5 oz) Old El Paso™ chopped green chiles
1 1/2 cups shredded taco-seasoned cheese blend (6 oz)
4 tablespoons sour cream, if desired

Steps:

  • Heat gas or charcoal grill. Lightly spray one side of each tortilla with cooking spray. On unsprayed side of each of 4 tortillas, spread 1/4 cup beans. Sprinkle each evenly with 1/4 of the bell pepper, tomato, green chiles and cheese. Top each with remaining tortilla, sprayed side up; press down firmly.
  • Place quesadillas on grill. Cover grill; cook over medium heat 6 to 8 minutes, turning once, until cheese is melted.
  • To serve, cut each quesadilla into quarters. Serve with sour cream.

1 cup grated white Cheddar cheese
1 cup grated Monterey Jack cheese
1 cup grated pepper jack cheese
6 tablespoons salted butter
Six 8-inch flour tortillas
Pinch of kosher salt
Pinch of freshly ground black pepper
2 Roma tomatoes, diced
One 4-ounce can diced green chiles, drained
9 fresh cilantro sprigs, for garnish

Steps:

  • Toss together the Cheddar, Monterey Jack and pepper jack in a bowl; set aside.
  • Heat 2 tablespoons of the butter in large skillet over medium heat. Place a single tortilla in the skillet. Sprinkle a little less than a third of the cheese blend over the tortilla. Sprinkle with salt and pepper. Add about a third of the diced tomato and a third of the chiles. Sprinkle a touch more cheese over the whole thing and gently top and press with a second tortilla. Cook until golden on the bottom, about 3 minutes.
  • Carefully flip the quesadilla to the other side. Continue cooking until the second side is golden, 3 to 4 minutes more. Repeat with the remaining ingredients. Slice each quesadilla into wedges and garnish with cilantro sprigs.

GRILLED STEAK, CHIPOTLE AND PEPPER JACK QUESADILLAS



Grilled Steak, Chipotle and Pepper Jack Quesadillas image

If you're feeling bold, use both chopped chipotle chiles and their adobo sauce to make these pepper jack quesadillas extraspicy.

1 clove garlic, minced
1/4 teaspoon ground cumin
Juice of half lime
Juice of half orange
Kosher salt
8 ounces cleaned and trimmed skirt steak
Olive oil, for oiling the grill grates
Four 10-inch (burrito size) flour tortillas
2 cups shredded pepper-jack cheese
1 to 2 chipotle in adobo, chopped, plus 1 to 2 tablespoons sauce
2 tablespoons unsalted butter
Guacamole, salsa, chopped scallions and sour cream, for serving

Steps:

  • Preheat an outdoor grill over medium.
  • Whisk the garlic, cumin, lime and oranges juices and 1/2 teaspoon salt together in a medium bowl. Add the steak, coat well in the mixture and let marinade for 10 minutes.
  • Lightly oil the grill grates. Grill the steak, flipping once, until medium rare, 2 to 6 minutes per side depending on the thickness. Remove to a cutting board and let rest 5 minutes. Slice the steak against the grain and reserve.
  • Lay a tortilla on a work surface and top evenly with 1/2 cup pepper-jack cheese. Add 1/4 of the steak and some chopped chipotle in adobo and sauce. Fold the tortilla in half to enclose fillings. Repeat with remaining tortillas and ingredients.
  • Melt 1/2 tablespoon butter in a large nonstick or cast-iron skillet over medium heat. Cook the quesadilla, flipping once, until the cheese is melted and it is golden brown on both sides, about 3 minutes per side. Remove to a cutting board and repeat with the remaining quesadillas.
  • Cut into triangles and serve with guacamole, salsa, scallions and sour cream.

1/2 cup shredded reduced-fat Mexican cheese blend
1/3 cup crumbled feta cheese
1/2 teaspoon dried oregano
4 flour tortillas (6 inches), warmed
1/4 cup chopped pitted ripe olives
2 tablespoons diced pimientos
1 green onion, chopped

Steps:

  • In a small bowl, beat cheeses with oregano until blended. Spread 3 tablespoons of cheese mixture over half of each tortilla; top with olives, pimientos and onion. Fold tortillas over., Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Grill quesadillas, uncovered, over medium heat or broil 4 in. from the heat for 1-2 minutes on each side or until golden brown. Cut each quesadilla into three wedges. Serve warm.

8 (6 inch) flour tortillas
1 cup monterey jack and cheddar cheese blend, shredded

Steps:

  • Preheat grill or grill pan to medium.
  • Place half of the tortillas on the grill, and drop a quarter-cup of cheese in the center of each. Spread cheese as close to edges as possible.* Place a second tortilla on top of each.
  • Grill until bottom tortilla is lightly browned and cheese begins to melt, about 1-2 minutes. Flip and continue cooking until browned on the other side.
  • Cut into quarters and serve with salsa, sour cream, and guacamole.
