EASY MINESTRONE SOUP

Use leftover marinara for a head start on this yummy, veggie-packed soup. It's perfect with a sandwich on a chilly day, or with a crusty garlic bread and simple salad on a busy night.

1 tablespoon extra-virgin olive oil
1 cup diced celery
1 cup sliced carrots
⅔ cup diced onion
3 cloves garlic, minced
4 cups vegetable broth
1 ¾ cups jarred marinara sauce
¼ cup tomato paste
1 teaspoon Italian seasoning
2 cups small shell pasta
2 cups quartered and sliced zucchini
1 (14.5 ounce) can great northern beans, rinsed and drained
1 cup stemmed and thinly sliced kale
salt and ground black pepper to taste
2 tablespoons grated Parmesan cheese, or to taste

Steps:

  • Heat olive oil in a large pot or Dutch oven over medium-high heat until shimmering. Add celery, carrots, and onion. Cook, stirring frequently, until onion begins to turn translucent, about 4 minutes. Add garlic and stir until fragrant, about 30 seconds.
  • Add vegetable broth, marinara sauce, tomato paste, and Italian seasoning. Stir to combine. Bring to a boil. Reduce heat to medium-low and simmer, uncovered, until carrots are soft, about 10 minutes.
  • Add pasta and zucchini. Cook until pasta is tender, about 10 minutes. Stir in beans, kale, salt, and pepper. Remove from heat and allow soup to cool slightly. Spoon into individual bowls and garnish with Parmesan cheese.

If you're from lower Michigan you will no doubt know of Lelli's restaurant. They are famous for their Minestrone soup. This tastes exactly like the restaurant soup. It was given to my husband from a friend at work.

3/4 cup chopped onion
2 tablespoons butter
2 (16 ounce) cans mixed vegetables, drained
1 (32 ounce) carton chicken broth
2 (15 ounce) cans cannellini beans, drained, can substitute great northern beans
1 (14 ounce) can crushed tomatoes
1 (8 ounce) box frozen spinach
1 (6 ounce) can tomato paste
1 teaspoon garlic
1 teaspoon dried parsley
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon basil

Steps:

  • Saute onion in the margarine,.
  • Add the above ingredients and simmer for at least 1 1/2 hours.
  • Process at least half of the soup in a blender, or use a stick blender.
  • Add 1/3 cup uncooked macaroni,1/4 cup parmesan cheese and 1 cup half & half.
  • Cook for at least 20 minute more and serve with crusty bread and additional parmesan cheese.
  • You can also add a small can of garbanzo beans with the macaroni, cheese and milk.

2 celery ribs, chopped
1 medium onion, chopped
1 tablespoon olive oil

1 can (16 ounces) kidney beans, rinsed and drained
1 can (15 ounces) chickpeas, rinsed and drained

8 tablespoons butter
1 ½ cups chopped onions
4 (14 ounce) cans chicken broth
4 (15 ounce) cans mixed vegetables, with liquid
2 (16 ounce) cans kidney beans, with liquid
2 (14.5 ounce) cans whole peeled tomatoes, with liquid
1 (16 ounce) package frozen chopped spinach
2 tablespoons tomato paste
4 ¼ teaspoons garlic powder
4 teaspoons dried parsley
½ teaspoon salt
1 teaspoon ground black pepper
1 teaspoon dried basil
1 cup uncooked elbow macaroni
½ cup grated Parmesan cheese
1 cup canned garbanzo beans, drained
4 cups heavy cream
½ cup grated Parmesan cheese for topping

Steps:

  • In a large stock pot over medium heat, stir and cook onions in butter until soft. Add broth, mixed vegetables, kidney beans, tomatoes, spinach, and tomato paste; simmer gently for 1 1/2 hours.
  • Using a slotted spoon, remove about half of the vegetables to a blender or food processor, reserving liquid in stock pot. Puree the vegetables until smooth and return them to stock pot.

I was just a kid when my Great-Aunt Lillian passed away, but I do remember eating her minestrone soup when I stayed with her. I found her recipe in my Grandma Bush's recipe box. What a treasure to find.

4 Tbsp olive oil, extra virgin
1 c onion, diced
1 c zucchini, diced
1 c italian green beans
1/2 c celery, diced
4 clove garlic, minced
4 c chicken broth or vegetable broth if making a vegetarian version
1 can(s) red kidney beans, drained and rinsed
1 can(s) white beans, drained
1 can(s) garbanzo beans, drained
3 can(s) tomatoes, diced
3/4 c carrots, shredded
2 Tbsp fresh parsley, chopped
1 tsp oregano, dried
1 tsp kosher salt
1/2 tsp freshly ground black pepper
1/2 tsp basil, dried
1/4 tsp thyme, dried
1/2 tsp red pepper flakes
1 1/2 c hot water
3 c fresh baby spinach
3/4 c small shell macaroni
parmigiano-reggiano, grated, for topping

Steps:

  • 1. Heat two tablespoons of olive oil over medium heat in a large soup pot.
  • 2. Saute onion, celery, garlic, green beans, and zucchini in the oil for 5 minutes or until onions begin to turn translucent.
  • 3. Add vegetable broth to pot, plus drained tomatoes, beans, carrot, hot water, and spices.
  • 4. Bring soup to a boil, then reduce heat and allow to simmer for 20 minutes.
  • 5. Add spinach leaves and pasta and cook for an additional 20 minutes or until desired consistency.
  • 6. I like to serve with homemade croutons and Parmigiano-Reggiano cheese sprinkled on top.
