PEANUT BUTTER COOKIES

Buttery soft Peanut Butter Cookies! These are a classic cookie, but I'd bet that this recipe is a little different from the classic you're used to... this recipe uses all butter and no shortening!

Number Of Ingredients 11

10 Tablespoons unsalted butter, softened to room temperature ((141g))
½ cup creamy peanut butter¹ ((140g))
⅔ cup light brown sugar, tightly packed ((135g))
¼ cup granulated sugar ((50g))
1 large egg
½ teaspoon vanilla extract
1 ½ cups all-purpose flour ((188g))
1 Tablespoon cornstarch
¾ teaspoon baking soda
¾ teaspoon salt
Additional granulated sugar for rolling

Steps:

  • Combine butter, peanut butter, and brown sugar and ¼ cup granulated sugar in a large bowl (or in the bowl of a stand mixer) and use an electric mixer to beat until creamy and well combined.
  • Add egg and vanilla extract and stir until well-combined.
  • In a separate bowl, whisk together flour, cornstarch, baking soda, and salt.
  • Gradually stir the flour mixture into the peanut butter mixture. Make sure to pause periodically to scrape the sides and bottom of the bowl to ensure all ingredients are well-combined.
  • Cover mixing bowl with plastic wrap and place peanut butter cookie dough in the refrigerator to chill for 30 minutes to one hour (start with 30 minutes, if the dough is too sticky or your cookies are coming out of the oven too flat, chill for an additional half an hour. This dough may be chilled overnight if you'd like).
  • Preheat oven to 350F (175C) and line baking sheets with parchment paper.
  • Once dough has chilled, remove from refrigerator and scoop into heaping 1 ½ Tablespoon-sized balls.
  • Roll the cookie dough between your palms until smooth and then roll thoroughly in additional granulated sugar. Place on prepared cookie sheet, spacing cookies at least 2" apart.
  • Use the tines of a fork to gently make a criss-cross pattern on the surface of each cookie by slightly pressing down.
  • Bake on 350F (175C) for 9-12 minutes. Edges should be just turning golden brown but the cookie centers should appear slightly under-baked, allow cookies to cool completely on the cookie sheets and the centers will finish baking (but remain soft and chewy) as they cool on the cookie sheet. Don't over-bake or the cookies will be dry.
  • Allow peanut butter cookies to cool completely on baking sheet before enjoying.

1 cup unsalted butter
1 cup crunchy peanut butter
1 cup white sugar
1 cup packed brown sugar
2 large eggs eggs
2 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 ½ teaspoons baking soda

Steps:

  • Cream butter, peanut butter, and sugars together in a bowl; beat in eggs.
  • In a separate bowl, sift flour, baking powder, baking soda, and salt; stir into butter mixture. Put dough in refrigerator for 1 hour.
  • Roll dough into 1 inch balls and put on baking sheets. Flatten each ball with a fork, making a crisscross pattern. Bake in a preheated 375 degrees F oven for about 10 minutes or until cookies begin to brown.

2 1/2 cups all-purpose flour
1 1/2 teaspoons baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 cup butter
1 cup creamy peanut butter
1 cup firmly packed brown sugar
1 1/3 cups sugar, divided
2 eggs
1 teaspoon vanilla extract
2 cups m&m's milk chocolate candies
2 butterfinger candy bars, coarsely chopped
0.5 (8 ounce) package toffee pieces

Steps:

  • Preheat oven to 375 degrees F.
  • In a medium bowl, combine flour, baking soda, baking powder, and salt. In a mixer bowl, cream butter or margarine, peanut butter, brown sugar, and 1 cup granulated sugar until light and fluffy. Beat in the eggs and vanilla.
  • Gradually beat in your choice of mix-in's until just combined. If you want just peanut butter cookies, just skip this step.
  • Drop heaping tablespoons of dough into remaining 1/3 cup granulated sugar. Shape into balls. Place about 3 inches apart onto ungreased cookie sheets. Flatten slightly with a fork dipped in the sugar.
  • Bake for 10 minutes or until the cookies are just set and are slightly firm to the touch. Do not over-bake. They will crisp up when cooled.
  • Cool for one minute on cookie sheets. Transfer to wire racks to cool completely.

1/2 cup sweet butter at room temperature
1/2 cup each sugar and brown sugar
1 egg
1 cup smooth pure peanut butter
1/2 teaspoon vanilla
1/2 teaspoon each salt and baking soda
1 1/2 cups sifted flour

Steps:

  • Preheat the oven to 375 degrees. Butter cookie sheets and set aside. With an electric mixer beat the butter until soft. Add the sugars and beat until creamy. Add the egg, peanut butter, salt, baking soda and vanilla.
  • With a rubber spatula fold the flour into the egg mixture but do not overmix. Roll the dough into small balls and place them on prepared cookie sheet. With a fork press the balls into flat cookies and bake for 15 to 17 minutes or until crisp and golden.
  • For added touch melt some bittersweet chocolate in a double boiler remove and cool down a bit. When still pliable dip one edge of cookies into chocolate.
