I saw these on Rachael Ray's episode with Kristin Davis. She recommends serving them on kimmelwick (also spelled kummelweck) rolls, Kaiser rolls topped with lots of pretzel salt and caraway seeds. I reduced the amount of grill seasoning and increased from 4 to 6 burgers based on the reviews.

2 lbs lean ground turkey breast
2 -4 tablespoons grill seasoning
1/4 cup buffalo wing sauce
1/4 cup chives, plus extra chopped (to garnish)
1/4 cup parsley, chopped
2 garlic cloves, grated
2 tablespoons olive oil
3 tablespoons butter
3 tablespoons flour
3 cups milk
1 cup blue cheese
salt, to taste
fresh ground pepper, to taste
3 carrots, peeled and cut into sticks
3 stalks celery, cut into sticks
4 kaiser rolls (kimmelwick rolls) or 4 slices rye bread (thick slices)

Steps:

  • In a large bowl, mix the turkey, grill seasoning, hot sauce, chives, parsley and garlic. Form six patties.
  • Heat a large skillet over medium-high heat with two tablespoons olive oil, two turns around the pan. Sauté the burgers about five minutes on each side, until cooked through.
  • In a medium skillet over medium-high heat, melt the butter. Sprinkle the flour over the butter and cook it for about 1 minute. Whisk the milk into the roux and season with salt and freshly ground black pepper. When the milk comes up to a bubble and has thickened, take the pan off the heat and stir the blue cheese into the sauce in a figure-eight motion.
  • To serve, place the top of the roll or a slice of rye bread on a plate, top with the burger. Serve with celery and carrot sticks and a cup of warm, blue cheese dip garnished with some chopped chives alongside. You can also drizzle some buffalo sauce over the top.

This is an old Weight Watcher's recipe my mom has been making since the late 70's. We both still make it to this day. The recipe contains no added fat, but you would never know it. Goes great served over rice or egg noodles.

2 lbs veal or 2 lbs turkey, minced
salt and pepper
2 cups water
1 -2 beef bouillon cubes or 1 -2 chicken stock cube
1 large onion, chopped
1 cup mushroom, sliced
1 tablespoon cornstarch (cornflour)
1/4 cup cold water

Steps:

  • Season the meat with salt and pepper to taste. Weigh out 4 oz/125 gm of meat and shape into a pattie. Do this with the remaining meat. Place patties on a platter, cover with plastic wrap/cling film and set aside.
  • Pour water into a large fry pan/skillet over medium high heat. Add stock cubes (use beef cubes for veal, chicken cubes for turkey), onions and mushrooms. Bring to a boil and then lower heat to simmer. Cook until onions are just about cooked. You may need to add more water as the veggies cook as you want to have about 2 cups worth of gravy at the end.
  • Gently place the burgers in the pan with the veggies and poach for about 5-7 minutes on each side, pressing down with a spatula to flatten a bit. Cook until juices run clear. Remove the cooked burgers to a plate and keep warm. Return sauce to a boil and add more water if necessary.
  • Put cold water into a small cup or bowl and stir in cornstarch with a fork or whisk. Slowly pour into the sauce in the pan and thicken.
  • Place rice or noodles on plate, place two burgers on top, and pour gravy over burgers.

3/4 pound ground turkey
2 teaspoons Worcestershire sauce
1 teaspoon Dijon mustard
3 teaspoons olive oil
1 small onion, chopped
1/2 pound mushrooms, sliced
1/4 teaspoon crumbled dried sage
3/4 cup chicken broth
2 teaspoons all-purpose flour
cranberry sauce as an accompaniment

Steps:

  • In a bowl stir together turkey, Worcestershire sauce, and mustard and form into two 3/4-inch-thick burgers. Season burgers with salt and pepper.
  • In a large heavy skillet heat 2 teaspoons oil over moderately high heat until hot but not smoking and sauté burgers until cooked through, about 6 minutes on each side. Transfer burgers to a plate.
  • To skillet add onion and remaining teaspoon oil and cook over moderate heat, stirring, 3 minutes. Add mushrooms and sage and cook, stirring, until liquid mushrooms give off is evaporated. In a small bowl whisk together broth and flour until flour is dissolved and stir into mushrooms. Simmer gravy, stirring, 5 minutes and spoon over burgers.
  • Serve burgers with cranberry sauce.

1 lb hamburger meat
1 medium onion, sliced into rings
1/4 cup flour
milk
salt and pepper
oil

Steps:

  • Spray skillet with PAM.
  • Place over low heat to warm.
  • Form patties (3-4") with the hamburger meat and place warm skillet.
  • Sprinkle salt& Pepper over patties.
  • Turn burner to medium-high and brown patties for 1-2 minutes.
  • Turn patties over and reduce heat.
  • Add onions to skillet and cover.
  • Cook for 10-15 minutes or until meat is done and onions are translucent.
  • Remove patties and onions from the skillet.
  • *Ifthere isn't enough"goodies" in the skillet, add oil.
  • There should be about 1-2 tbsp.
  • of oil altogether.
  • Add flour and salt and pepper to taste.
  • Stir to mix flour and oil.
  • Continue stiring into flour is a deep golden brown.
  • Add milk and combine with flour mixture.
  • Return meat and onions to the gravy.
  • Remove from heat as the gravy thickens.
  • Serve with mashed potatoes or rice.

1 lb ground chuck
cooking spray
seasoned pepper
2 (10 1/2 ounce) cans beef gravy
2 cups cooked white rice

Steps:

  • Form the ground chuck into small patties, about 4 oz. each.
  • Spray a heavy skillet with cooking spray, season the skillet with seasoned pepper. Place over high heat until very hot.
  • Add patties, sear briefly on each side until crusty, app. 1-2 minutes per side.
  • Remove skillet from heat, and gently place patties onto paper towels to drain. Pour off any remaining fat from skillet, but do not wipe. Return meat to skillet, and pour the gravy over all.
  • Cover skillet, place over medium-low heat. Simmer 10-15 minutes, until cooked through.
  • Serve over hot, cooked rice.

This is my recipe for flavorful beef patties smothered in a rich, homemade beef gravy; no packaged gravy involved. It's carnivore comfort food!

DREDGE MIXTURE:
1 c all-purpose flour (*reserve extra for gravy)
1 tsp salt
1/4 tsp ground black pepper
MEAT MIXTURE:
1/2 tsp Montreal steak seasoning
1/2 tsp salt, plain (*see note)
1/2 tsp seasoned salt (such as Lawry's)
1/2 tsp wild porcini sea salt (*see note)
1/4 tsp garlic powder
1/8 tsp ground black pepper
2 Tbsp mayonnaise
1/2 c onions, small chopped
2 lb ground beef
FOR FRYING:
2 Tbsp vegetable oil
GRAVY:
1 1/2 Tbsp reserved oil from frying
2 1/2 to 3 Tbsp *reserved flour dredge mixture
1 can(s) beef broth (14.5 oz.)
2 tsp soy sauce
1 pinch freshly ground black pepper

Steps:

  • 1. (*NOTE: If wild porcini sea salt is not available, increase plain salt by equal amount.)
  • 2. In large bowl, combine Montreal steak seasoning, seasoned salt, wild porcini salt, plain salt, garlic powder and ground black pepper; add 2 tablespoons mayonnaise; mix well; add chopped onions; mix.
  • 3. (Food service plastic gloves are advised.) Add ground beef; mix thoroughly by hand; form mixture into 8 fairly equal-sized hamburger patties and place on a large plate or platter; set aside, or cover and refrigerate, until ready to dredge in flour.
  • 4. To prepare dredge mixture, in a shallow dish, mix together 1 cup flour, 1 teaspoon salt and 1/4 teaspoon pepper.
  • 5. Working with one patty at a time, place patty in flour mixture; turn to coat all sides; place patty back on plate; repeat until all patties are coated. Reserve remaining flour for gravy.
  • 6. Preheat oven to 350ºF.
  • 7. To a large skillet, add 2 tablespoons vegetable oil; place over medium-high heat.
  • 8. When oil is hot, add patties to skillet.
  • 9. Pan-fry patties until browned on both sides (patties do not need to be fully cooked as they will continue cooking in oven,) about 3 to 4 minutes per side.
  • 10. Remove browned patties and place in single layer in a 9"x13" or smaller baking dish.
  • 11. Remove skillet from heat; pour grease out of skillet, retaining about 1 1/2 tablespoons of the grease with the brown bits.
  • 12. Add 2 1/2 tablespoons of the reserved flour to the grease; using a large, heat-proof spoon or spatula, blend together as much as possible (some of the flour will not be blended and that's okay).
  • 13. Return to heat; slowly stir in 1 can of beef broth, smoothing any clumps of flour; bring to simmer, stirring constantly to avoid lumps as gravy thickens.
  • 14. Remove from heat; add 2 teaspoons soy sauce and pinch of freshly ground black pepper; stir well; pour gravy over patties in dish.
  • 15. Cover dish with aluminum foil.
  • 16. Bake at 350ºF for 30 minutes. Serve hot. (Serve with mashed potatoes, noodles or rice or over toasted bread.)
  • 17. Cover and refrigerate leftovers.

Awesome Mushroom Burgers and Gravy image

A wonderful main dish using fortune cookies that can be bought in most stores or picked up at any Chinese restaurant for a small amount of money.

1 lb ground beef
1/2 c ground fortune cookies
2 Tbsp beefy or regular dry onion soup mix
1/2 tsp salt
1/2 tsp ground black pepper
1 large egg
4 oz can of mushrooms
1 3/4 c cold water
1/2 tsp chopped garlic
1 tsp worcestershire sauce
3 Tbsp flour
4 Tbsp heavy cream, half and half or milk

Steps:

  • 1. Mix the ground beef, ground fortune cookies, two tablespoons of the onion soup mix, salt, pepper and egg in a large bowl. Set aside remaining soup mix for later use in gravy. Form this mix into 8 hamburger patties.
  • 2. Cook hamburger patties in a skillet over medium heat until done...about 4 to 5 minutes per side. Set aside to rest.
  • 3. In a small pan or skillet, combine the remaining onion soup mix, garlic, Worcestershire sauce and flour. Drain the mushroom juice from the can into a measuring cup and add the mushrooms to the pan. Add enough water to the mushroom juice to make 1 and 3/4 cups of liquid. Add to the pan. Bring to a boil while stirring. Lower the heat to medium and stir until thickened. Add heavy cream, salt and pepper to taste and re-thicken by cooking slightly longer.
  • 4. Pour gravy over burgers and mashed potatoes and serve with a vegetable.

½ cup mayonnaise
1 green bell pepper, finely chopped
1 egg, beaten
2 sleeves buttery crackers (such as Keebler Club® Crackers), crushed
12 slices Cheddar cheese
2 (10.75 ounce) cans condensed cream of mushroom soup
⅔ cup milk

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix beef, mayonnaise, and green pepper together in a large bowl. Form into 12 palm-sized balls and dip into beaten egg to coat. Roll in crushed crackers and flatten into a patty.
  • Heat a skillet over medium heat. Fry patties in batches until browned, about 3 minutes per side. Place patties into two 9x13-inch baking pans.
  • Cover each patty with a slice of cheese. Mix each can of soup with 1/3 cup milk and pour over the patties.
  • Bake in the preheated oven until cheese is melted and soup starts to bubble, 20 to 25 minutes.
