GRAPE GALETTE WITH ALMOND CREAM

1 3/4 cups all-purpose flour, plus more for dusting
5 tablespoons sugar
1 teaspoon salt
10 tablespoons cold unsalted butter, cut into small pieces
1 large egg yolk, for brushing
1/2 cup plus 2 tablespoons sliced almonds
1/4 cup plus 2 tablespoons sugar
1 large egg yolk
2 tablespoons unsalted butter, at room temperature
1 1/2 teaspoons pure vanilla extract
1 teaspoon finely grated lemon zest
1 pound seedless grapes (red, purple and/or green; about 2 cups)

Steps:

  • Make the crust: Pulse the flour, sugar and salt in a food processor. Add half of the butter and pulse until the mixture looks like coarse meal. Add the remaining butter and pulse into pea-size pieces. Add 1/4 cup ice water and pulse until the dough clumps together but has not yet formed a ball. Turn out the dough onto a piece of plastic wrap; press into a disk and wrap. Refrigerate until firm, at least 1 hour or overnight.
  • Meanwhile, make the filling: Pulse 1/2 cup almonds, 1/4 cup sugar, the egg yolk, butter, vanilla and lemon zest in a food processor to make a paste.
  • Preheat the oven to 400 degrees F and line a baking sheet with parchment paper. Roll out the dough into a 12-inch round on a lightly floured surface. Transfer the dough to the prepared baking sheet. Spread the almond filling over the dough, leaving a 2 1/2-inch border; top with the grapes. Fold the edge of the dough over the fruit by about 2 inches, pleating as needed. Refrigerate until firm, 30 minutes.
  • Lightly beat the egg yolk with 1 tablespoon water. Brush the dough with the egg wash. Scatter the remaining 2 tablespoons almonds all over the galette, then sprinkle with the remaining 2 tablespoons sugar. Bake until the crust is golden brown and the grapes are softened, about 40 minutes. Let cool on the baking sheet.

2 1/2 cups diced and chilled cooked chicken meat (I use chicken breast you can use canned chicken)
1 cup chopped celery
1 cup sliced seedless grapes
1/2 cup sliced almonds
2 tablespoons chopped fresh parsley
1 teaspoon salt
1 cup mayonnaise
1/4 cup heavy whipping cream

Steps:

  • In a medium bowl, whip cream to soft peaks.
  • Combine chicken, celery, grapes, almonds, parsley, salt and mayonnaise with whipped cream.
  • Chill.
  • Serve on lettuce leaf or sandwiches.

1 tart pastry dough, single crust for 10-inch tart
3 1/2 cups red seedless california grapes
2 ounces almond paste
1 large egg
1/4 cup sugar
1/4 cup butter
2 tablespoons flour
1 pinch salt
confectioners' sugar

Steps:

  • Preheat oven to 375°F.Line a 10-inch tart pan with pastry. Arrange grapes snugly in decorative rings in pastry. In an electric mixer combine almond paste, egg, sugar, butter, flour, and salt until smooth to create frangipane. Carefully spread over arranged grapes and bake for 35 minutes, until the tart is golden brown and cooked through. If using a convection oven, bake at 350°F for 30 minutes. When tart is cool, remove from pan and dust with confectioners' sugar.
