Grilled Chicken Salad with Apricot Glaze, Homemade Mustard Vinaigrette and Grape Salad image

1/4 cup chardonnay vinegar
1 tablespoon Dijon mustard
1 tablespoon whole grain mustard
Salt and freshly ground black pepper
1/3 cup extra-virgin olive oil, plus more if needed
3 Fresno chiles
Canola oil
Salt and freshly ground black pepper
2 cups green seedless grapes, roughly chopped
2 cups red seedless grapes, roughly chopped
2 to 3 tablespoons chardonnay vinegar
2 to 3 tablespoons extra-virgin olive oil
3/4 cup apricot jam
3 tablespoons chardonnay vinegar
4 (6-ounce) boneless, skinless chicken breasts, pounded thin
Canola oil
Salt and freshly ground black pepper
1/4 cup roughly chopped fresh thyme
1 bunch watercress, for serving
1/2 cup sliced skin-on almonds, lightly toasted, for serving

Steps:

  • For the vinaigrette: Whisk the vinegar, the mustards and salt and pepper, to taste, in a bowl. Slowly whisk in about the olive oil and until emulsified. Taste; whisk in a few more tablespoons olive oil, if desired.
  • For the grape salad: Prepare the grill for direct grilling.
  • Brush the chiles with oil and season with salt and pepper. Grill until charred on all sides. Remove to a bowl, cover and let steam for 15 minutes. Remove the skins and coarsely chop. Transfer to a bowl and add the grapes, chardonnay vinegar and olive oil. Season with salt and pepper.
  • For the chicken: Whisk together the apricot jam and vinegar. Season with salt and 1/4 teaspoon black pepper.
  • Brush the chicken on both sides with oil and sprinkle with salt and pepper. Grill until the first side is golden brown, about 2 1/2 minutes. Turn, brush with the glaze and sprinkle on the thyme. Cook until just cooked through, another 2 to 3 minutes. Remove to a serving platter.
  • To serve, top with the grape salad, then the watercress and finally the almonds. Drizzle with the vinaigrette.

Summer Cashew Chicken Grape Pasta Salad image

On many hot summer days, I can't face eating a hot meal. This salad makes a very satisfying meal without overheating the house or me! If I can't stomach the thought of cooking chicken myself for fear of heating up the house on a hot summer day, I just pick up a rotisserie chicken from my local grocer or I pick up grilled cooked chicken from Costco. With pre-cooked chicken, this recipe couldn't be easier to prepare! I've served this many times to rave reviews. I got this recipe from my mother-in-law. It's a dish she picks up from her local deli on a regular basis. If you make it at home, it's much cheaper than the deli!

1 lb cooked chicken (poached, grilled, rotisserie, doesn't matter, just cooked)
1 lb pasta (macaroni, rigatoni, use your favorite, just not spaghett)
1/2 lb green seedless grape, washed and cut in half
1/2 lb red seedless grapes, washed and cut in half
1/2 teaspoon Lawry's Seasoned Salt
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
2 cups mayonnaise (I use Hellman's Light Mayonnaise)
1 (9 1/4 ounce) can cashew halves, and pieces (I buy Planter's salted)
2 tablespoons milk (optional, also may want to add more depending on how long the salad has been in the refrigerator)

Steps:

  • Boil 1 lb. of pasta - al dente - according to package directions (I use rigatoni). Drain after cooking and let cool.
  • While the pasta is boiling, wash and halve the grapes.
  • Dice the cooked chicken into bite sized pieces.
  • In a large bowl or serving platter, combine the cooled, drained pasta with the grapes and diced chicken. Stir in the mayonnaise. I start with one cup of mayo and add more as needed. Really, just add as much as you personally like - it may be more or less than 2 cups.
  • Stir in the Lawry's seasoning salt, onion powder and garlic powder. Again, add to your liking. You may want more or less than 1/2 teaspoon of any of these - - it's your choice, go with what you like. Frequent sampling at this point will help you decide what your preference will be so grab a fork and start sampling!
  • If the salad is too thick and rich for your liking, stir in a couple tablespoons milk to thin it out. This part is optional.
  • This salad is always much better the next day after the flavors have had a chance to meld. This is when I usually add milk to loosen it up a bit.
  • Before serving, plate or dish up the salad and sprinkle cashew pieces on top of individual servings. DO NOT put the cashew pieces on the entire salad and refrigerate - - this will cause the cashew pieces to become soft and rubbery and nobody wants that! I just set the can of cashews on the table and let guests help themselves.
  • Sit back and enjoy your sweat free cold summer salad!

1 tablespoon margarine
1 (5 ounce) package long grain and wild rice mix (such as Mahatma®)

¾ cup mayonnaise

Steps:

8 slices bacon, cut into 1/2-inch pieces
1 rotisserie chicken (about 2 1/2 pounds)
1/3 cup low-fat plain yogurt
2 ounces blue cheese, crumbled (1/2 cup)
3 tablespoons finely chopped chives
1 garlic clove, minced
Coarse salt and ground pepper
6 ounces red-leaf lettuce, torn into bite-size pieces (8 cups)
1 cup seedless red grapes, halved

Steps:

  • In a medium skillet, cook bacon over medium, stirring occasionally, until fat is rendered and bacon is crisp, about 9 minutes. With a slotted spoon, transfer bacon to paper towels to drain.

2 1/2 c grilled chicken breasts, cut into bite sized chunks
1/3-1/2 c mayonnaise
1/4 c dijon mustard
1 1/2 ribs of heart of celery stalk, diced
1 c seedless red grapes, halved
1/2 c walnut halves, rough chopped
2 1/2 tsp dried thyme
salt and pepper to taste
6-8 lettuce leaves
3-4 slices of avocado per sandwich

2 tablespoons butter
1 large shallot, finely chopped
1 (750-ml) bottle Champagne
1 tablespoon freshly chopped parsley leaves, plus more for garnish
2 teaspoons lemon juice
1 1/2 pounds chicken breasts, boneless, skinless, rinsed and patted dry
1/2 cup heavy cream
1 tablespoon white sauce mix (recommended: Knorr)
Grape Salad, recipe follows
1 cup coarsely chopped red seedless grapes
1 tablespoon freshly chopped parsley leaves
1 tablespoon red wine vinegar
1 tablespoon extra-virgin olive oil
2 scallions, sliced
Salt and freshly ground black pepper

Steps:

  • In a large straight sided frying pan melt butter over medium-high heat. Add shallots and saute until soft, about 2 minutes.
  • Add Champagne, parsley and lemon juice to pan. Bring to a boil then reduce heat to a simmer.
  • Slide chicken into Champagne mixture and poach 15 minutes, turning once. (Use an instant-read thermometer to be sure the internal temperature is 165 degrees F.) Remove chicken with a slotted spoon to a plate; set aside.
  • Ladle 1/2 cup of poaching liquid into a small pot over medium heat. Add cream and bring to just under a boil. Reduce heat and simmer. Whisk in white sauce mix. Simmer 1 minute, stirring constantly.
  • To serve chicken, spoon sauce over top and garnish with parsley and grape salad.
  • Combine all ingredients in medium bowl; mix well. Season, to taste, with salt and pepper Use as garnish for poached chicken.

2 tsp curry powder
1/4 c light mayonnaise
1/4 c plain nonfat yogurt
2 tsp mango chutney (such as major grey)
1 tsp fresh ginger, peeled and minced
1/2 tsp orange peel, finely grated
3 c cooked chicken breast, cut into 1/2 inch pieces
1 c red seedless grapes, halved (plus 4 small clusters for garnish)
1/2 c green onion, thinly sliced
1/3 c walnuts, toasted and coarsely chopped
4 large curly lettuce leaves

Steps:

  • 1. Stir curry powder in a small skillet over medium heat until fragrant, about 30 seconds. Transfer to a medium bowl and add mayo, yogurt, chutney, ginger, and orange peel. Whisk to blend.
  • 2. Stir in chicken, grapes, green onions, and walnuts. Season salad to taste with salt and pepper.
  • 3. Place one lettuce leaf on each of 4 plates. Top each lettuce leaf with salad and garnish each plate with grape clusters.

This recipe is a family favorite. It is based on one from my grandparents and was introduced to me by my dad, who really enjoyed it growing up. Originally a tradition to use the leftover turkey from Thanksgiving, I've always had it with chicken and can't get enough. This is one recipe that can be easily adjusted, so don't worry if you don't have the exact amounts called for!

2 1/2 cups chopped roast chicken
16 ounces uncooked elbow macaroni
1/2 lb red seedless grapes
2 cups mayonnaise
2/3 cup dried sweetened cranberries
2 stalks celery
2 scallions
2 teaspoons curry powder
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Fill a large 4 to 6 quart pot with water and bring to a boil. Add pasta and cook until al dente (about 8 minutes), stirring occasionally.
  • Drain pasta and add about two tablespoons of the mayonnaise and allow to cool. Mixing well coats the pasta and helps prevent sticking.
  • Chop the roast chicken into bite-size pieces. Use both white and dark meat for best results.
  • Chop the celery into quarter-inch pieces, the grapes in half (or quarters if large), and the scallions into thin slices.
  • Mix all ingredients, adjusting mayonnaise and spices according to your personal preferences and dietary concerns.

This is a recipe I created by taking a little bit from each of the previous recipes I have made. This is a great, colorful, crunchy salad! Wonderful on lettuce or on a bun!

5 boneless skinless chicken breasts
2 gala apples (or Fuji)
30 purple seedless grapes (give or take)
1/2 purple onion
1 (8 ounce) bag walnuts (or Pecans)
1 (12 ounce) jar poppy seed dressing (I use Briannas)

Steps:

  • Boil chicken unitl done.
  • While Chicken is cooking: Mince Purple Onion. Cube Apples. Cut the grapes in half.
  • Once the Chicken is done, chop into cubes.
  • Pour ALL ingredients into a large bowl, including the bag of Nuts & Dressing.
  • Mix well until all is coated.
  • Chill before serving.
