2 ½ cups old-fashioned oat
2 ½ cups rice cereal
½ cup brown sugar
½ cup coconut oil
½ cup honey
½ teaspoon salt
½ teaspoon vanilla
½ cup chocolate chips
½ cup dried apple, dried
1 teaspoon cinnamon
¼ teaspoon nutmeg
½ cup sliced almond
½ cup dried cherry
½ cup peanut butter
½ cup pretzels, crushed
½ cup chocolate candy

Steps:

  • In a large mixing bowl, combine the oats, rice cereal, coconut oil, honey, brown sugar, salt, and vanilla until evenly mixed.
  • For chocolate chip, take ¼ of the oats mix and combine with chocolate chips. Stir until mixed.
  • Move the mixture to a small baking dish.
  • For Apple Cinnamon, take ¼ of the oats mix and combine with dried apples, cinnamon, and nutmeg. Stir until mixed.
  • Move the mixture to a small baking dish.
  • For Cherry Almond, take ¼ of the oats mix and combine with almonds and cherries. Stir until mixed.
  • Move the mixture to a small baking dish.
  • For Peanut Butter Crunch, take ¼ of the oats mix and combine with pretzels, peanut butter, and chocolate candies. Stir until mixed.
  • Move the mixture to a small baking dish.
  • Bake each bar mixture at 350°F (175°C) for 5-8 minutes.
  • Let granola cool and then cut into desired bar shape.

1 teaspoon pure vanilla extract
2 cups rolled oats, use certified gluten-free if necessary
1/2 to 3/4 cup dried cherries, chopped
1/2 cup walnuts, chopped
1/2 cup sunflower seeds
1/2 cup pepita seeds (shelled pumpkin seeds)
1/2 cup sliced almonds
1/4 cup hulled hemp seeds
1 teaspoon cinnamon
1/4 teaspoon pink Himalayan salt or fine grain sea salt, or to taste

Steps:

  • Preheat the oven to 350°F. Lightly grease a large rectangular 8.5x12.5-inch baking dish and line with a piece of parchment paper so the bars are easier to lift out. In a large bowl, mash the banana until smooth. Stir in the vanilla. Place the rolled oats into a food processor (or blender on the lowest speed) and pulse until the oats are coarsely chopped (but still with lots of texture). Stir oats into the banana mixture. Chop the walnuts and cherries and stir all of the ingredients into the banana-oat mixture until thoroughly combined. Spoon mixture into prepared dish. 1 ¼ cups all-purpose flour
½ cup butter flavored shortening
⅓ cup white sugar
¾ cup raspberry preserves
½ cup raisins
½ cup milk chocolate chips
¼ cup honey
2 tablespoons butter
¾ cup quick cooking oats
⅓ cup shredded coconut
⅓ cup sliced almonds
2 tablespoons sesame seeds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x9 inch square pan.
  • In a mixer bowl combine the flour, 1/2 cup shortening and the sugar. Beat at low speed until crumbly. Press mixture into the bottom of the prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 15 to 20 minutes.
  • Combine preserves , raisins and chocolate pieces, stirring until blended. Set aside.
  • In a saucepan combine the honey and the butter or margarine. Cook and stir until melted. Stir in the oats, coconuts, almonds and sesame seeds until blended.
  • Spread the raspberry preserve mixture over the hot crust, spoon oat mixture on top, spreading evenly to edges of pan. Bake for an additional 15 to 20 minutes or until lightly browned. Cut into bars to serve.

4 1/2 cups oatmeal
1 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoon vanilla
2/3 cup butter, softened
1/2 cup honey (can substitute sorghum molasses for some of the honey)
1/3 cup packed brown sugar
2 cups miniature semisweet chocolate chips or dried fruit (raisins, dried apricots, your choice - I found that 1 cup of dried fruit was enough)

Steps:

  • Preheat oven to 325°F. Butter or oil 9x13 inch baking dish. Mix all ingredients. If using fruit, stir in now. If using chips, put in bottom of baking dish. Press mixture in dish (if using chips, press on top of chips). Bake 18-22 minutes or until golden brown. Don't overbake or bars will get crispy. Let cool for a few minutes, then press mixture down again, using a spatula. This will make it easier to cut into squares or bars. Cut while still slightly warm. I made the mistake of putting them in the refrigerator and then trying to cut them, and it was extremely difficult! Let bars cool completely in pan before removing. Makes 2-3 dozen.

3/4 cup chopped dried fruit, any combination of apricots, cherries or blueberries

Steps:

  • Butter a 9 by 9-inch glass baking dish and set aside. Preheat the oven to 350°F. Spread the oats, sunflower seeds, almonds, and wheat germ onto a half-sheet pan. Place in the oven and toast for 15 minutes, stirring occasionally. In the meantime, combine the honey, brown sugar, butter, extract and salt in a medium saucepan and place over medium heat. Cook until the brown sugar has completely dissolved. Once the oat mixture is done, remove it from the oven and reduce the heat to 300°F. Immediately add the oat mixture to the liquid mixture, add the dried fruit, and stir to combine.
