This is a moist, sweet bread that is fantastic spread with apple or pumpkin butter. These directions are for a 1 lb. loaf in the bread machine. Be sure to find out if your machine require liquid or dry ingredients to go in first. Note: This recipe makes a lovely loaf when baked in the oven - in this case, use the "dough" cycle on the bread machine only.

1/4 cup raisins
1/2 cup whole wheat flour
1 1/2 cups bread flour
2/3 cup granola cereal
3 tablespoons dry buttermilk
2 teaspoons vital wheat gluten
1 teaspoon salt
3/4 teaspoon ground cinnamon
2 teaspoons yeast
3/4 cup water
1 1/2 tablespoons vegetable oil
1 1/2 tablespoons honey

Steps:

  • Soak raisins in water for an hour before adding to the bread machine mid-cycle (when the machine beeps, in between the first and second rise).
  • Add ingredients to machine according to manufacturer directions.
  • Bake at basic one poud loaf setting.
  • When finished, remove bread from pan and cool on a wire rack.

3/4 cup unsweetened apple juice
2/3 cup unsweetened applesauce
1 teaspoon salt
2 tablespoons liquid honey
2 tablespoons vegetable oil
1 cup whole wheat flour
2 1/4 cups bread flour
2/3 cup pitted dates
1/3 cup granola cereal (unsweetened)
1 teaspoon ground cinnamon
1 1/2 teaspoons bread machine yeast or 1 1/2 teaspoons instant yeast

Steps:

  • Add ingredients into baking pan in the order recommended by the manufacturer.
  • Insert pan into the oven chamber.
  • Select the Whole Wheat Cycle.
  • When the baking cycle ends, immediately remove the bread from the pan and place it on a rack.
  • Let cool to room temperature before slicing.

3 to 3 1/4 cups Gold Medal™ all-purpose flour
1 1/2 teaspoons salt
1 package regular active or fast-acting dry yeast
1/2 cup water
1/2 cup buttermilk
2 tablespoons honey
2 tablespoons butter or margarine
2/3 cup Cascadian Farm® organic oats & honey granola or cinnamon raisin granola

Steps:

  • In large bowl, mix 1 cup of the flour, the salt and yeast. In 1-quart saucepan, heat water, buttermilk, honey and butter over medium heat, stirring frequently, until very warm (120°F to 130°F); stir into flour mixture until blended. Stir in granola. Stir in enough remaining flour to make dough easy to handle.
  • Place dough on lightly floured surface; gently roll in flour to coat. Knead about 8 minutes or until smooth and springy. Grease large bowl with shortening or cooking spray. Place dough in bowl, turning dough to grease all sides. Cover; let rise in warm place about 1 hour or until dough has doubled in size. (If using fast-acting yeast, do not let rise 1 hour; cover and let rest on floured surface 10 minutes.)
  • Grease large cookie sheet with shortening or cooking spray. Shape dough into round loaf, about 5 inches in diameter and 3 inches high. Place on cookie sheet. Cover; let rise in warm place 45 to 60 minutes or until about 7 1/2 inches in diameter.
  • Heat oven to 400°F. Make 2 long cuts in top of dough to resemble one large "+" sign with sharp knife. Brush or spray top of dough with water. Bake 20 to 25 minutes or until loaf is golden brown and sounds hollow when tapped. Remove from cookie sheet to cooling rack; cool.
