Not your typical fruit cake! We eat this one down South (Florida) and Granmama finally let me have the recipe. No baking, no aging and none of that "whatsit?" fruit!

1 lb graham cracker
1 lb raisins
1/2 lb pecans
1 (16 ounce) jar maraschino cherries
24 big marshmallows
1 (14 ounce) can condensed milk

Steps:

  • Crush the graham crackers into fine crumbs.
  • Granmama's recipe calls for "puffed" raisins. To puff them, soak in hot water for 30 minutes.
  • Chop the nuts; drain and cut cherries in half (if they are whole).
  • Melt marshmallows in milk.
  • Mix all ingredients together.
  • Pack into regular sized loaf pan.
  • Refrigerated overnight and cut with a hot knife.
  • Coconut is an optional ingredient.
  • Cook time is refrigeration time.

My grandmother and mother made these cakes for years. They are moist but don't contain eggs. Applesauce is the secret ingredient. I sold these at bake sales for years and we had many customers who returned every year just to get one.

4 cups all-purpose flour
2 cups white sugar
¼ cup unsweetened cocoa powder
2 tablespoons cornstarch
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
2 teaspoons ground cloves
3 cups unsweetened applesauce
¾ cup vegetable oil
1 cup raisins
1 cup chopped pitted dates
1 pound candied mixed fruit
2 cups chopped walnuts
½ cup walnut halves
1 cup halved candied cherries

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C). Grease a 9 inch tube pan and one 9x5 inch loaf pan.
  • Sift the flour, sugar, cocoa, cornstarch, baking soda, salt, cinnamon and cloves into a large bowl. Stir in the applesauce and oil, then mix in the raisins, dates, mixed fruit and 2 cups of walnuts. Pour into the prepared pans. Pans should be about 3/4 full if using mini pans, or an assortment.
  • Bake for 1 hour in the preheated oven, or until a toothpick inserted into the crown of the cake comes out clean.

I am posting this for myself, as I only make this once a year - the recipe has often moved since I made it last (or I forgot where I put it). This recipe has been in our family for over 100 years (5 generations), it takes 2 days make and is rich and moist. As this fruit cake contains no alcohol it does not need time to "cure".

500 g sultanas
250 g raisins
250 g currants
250 g chopped dates
250 g chopped walnuts
250 whole glace cherries (I always add more as this is my favourite part of the cake)
1/2 cup brown sugar
1/2 cup white sugar
250 g butter
1 cup water
1 teaspoon bicarbonate of soda
1/2 cup fresh orange juice
4 eggs, beaten
1 1/2 cups self raising flour
1 1/2 cups plain flour
1 teaspoon mixed spice
blanched almond, to top (optional)

Steps:

  • Day one.
  • Mix the first 11 ingredients into a large heavy based pot, place over a medium heat. Stir and bring to the boil (don't leave it alone in case it burns at the base).
  • Reduce the heat to low and simmer for 10 minutes, you can leave it alone for this part.
  • Turn the heat off and add the orange juice, stir until well combined and leave overnight to soak. Place a lid over the top to stop moisture evaporating through the night.
  • Day 2.
  • In the cold pot with the pre-soaked fruit mixture add the remaining ingredients and stir well, be warned - you will need some serious elbow grease as the mixture will be very thick!
  • In either 2 large and deep loaf tins or a deep 20x20cm grease and line the sides and base 4 times with brown paper (I use brown paper bags that I have sliced open). Have the paper create a rim that goes up and above the tin. For a square tin you will need around 8 paper bags.
  • Place the cake mix into the prepared tin/s. Bang the cake tin on the floor about 10 times to get all the air bubbles out.
  • Using a wet hand, smooth the cake to make it flat. At this stage you can choose to decorate the top with blanched almonds or not.
  • Place into a cold oven, turn the oven up to 250 degrees F/150 degrees C for 3 1/2 - 4 hours for 1 large cake or 2 1/2 - 3 hours for 2 loaves. Rotate the cakes at least once during cooking - even it you have a fan forced oven. Cake is cooked when a skewer comes out clean.
  • Cool in the tin, cake is best eaten the day after baking.
  • Store in an airtight container for upto 5-7 days depending on your humidity.

She would have been thrilled to see it here on Just a Pinch. I have no idea how old this recipe is but my Grandmother was born in 1910. My mother and I perfected the mixing...

2 c all purpose flour
1 1/2 tsp baking powder
1 c sugar
5 large egg
2 tsp vanilla extract
2 tsp almond extract
1 lb pitted dates
1/2 lb whole red cherries / candied
1/2 lb whole green cherries / candied
1/2 lb pineapple pieces / candied
3 c whole walnuts

Steps:

  • 1. Oven should be preheated to 250 (yes that is correct - 250) and cooking time is 2 hours (yes, 2 hours). Prep time is about 30 minutes. You will need 5-6 Mini Loaf Pans approximately 5" x 3" in size, I used 6.
  • 2. Bowl #1 - Mix flour, baking powder and sugar, SET ASIDE
  • 3. Bowl #2 - Mix Eggs, Vanilla extract and Almond extract together, SET ASIDE
  • 4. Bowl #3 - Mix Dates, Cherries (RED AND GREEN), Pineapple (get the largest pieces you can find, not whole but not the bits either) and Nuts together, SET ASIDE. (note: I have also used Pecans - either or both are excellent) NOTE #1: BE SURE to SET ASIDE 3 CHERRIES for EACH mini Pan to go ON TOP of each cake before cooking. NOTE #2: I do not add all the syrup from the candied fruit, I do my best to remove the candied fruit from the containers leaving behind the goo. I do not rinse the fruit.
  • 5. Follow this order for easiest blending of above ingredients - Mix Bowl #1 and Bowl #2 together. Be sure to get a creamy, no lumps remaining, smooth consistency. I use a large spatula to achieve best blend.
  • 6. REMINDER: BEFORE YOU FOLD BOWL #3 into the BATTER created by BOWL #1 & BOWL #2 - BE SURE to set aside three cherries for each fruit cake to put on top of each mini loaf before they go in the oven. THEN, fold ingredients of Bowl #3 into your above blended batter.
  • 7. Spray your individual mini loaf pans (as seen in photo) with a cooking spray of your choice.
  • 8. Scoop out enough batter to fill each tin. Do not over fill. This recipe will fill 6 individual mini tins nicely. NOW - ADD THE SET ASIDE CHERRIES to the top of your loaf pan now filled with the completed batter to accent your creation.
  • 9. Place the tins on a large cookie sheet (for easiest in and out placement to oven) AND BAKE - 250 slow oven for 2 hours.
  • 10. When finished, remove from oven and let cook on wire rack.
  • 11. I leave the fruit cake in the pans, and then put the pretty little Fruit Cakes in a fancy clear food type gift bag or wrap in clear plastic wrap and add a bow so everyone can see your delicious treat when you present it to them.

1 pkg bordens none such mince meat
1 c walnuts or pecans -coarsely chopped
1 c (8oz) mixed candied fruit -coarsely chopped
1 can(s) eagle brand sweetened condensed milk
1 large egg,beaten
1/2 c water
3/4 c flour
1/2 tsp baking soda

Steps:

  • 1. Break Mince Meat into small pieces and put in 2-quart saucepan .ADD WATER.Place over medium heat and stir untill lumps are thoroughly broken . Boil briskly 1 minute ,stiring constantly . Remove from heat and cool
  • 2. Add Nuts ,Candied Fruit,Condensed Milk,and Egg,blend well .Stirl in Flour and Baking Soda untill just blended.
  • 3. Pour mixture into a 9"x4"x3"loaf pan ,which has been greased ,waxed paper lined and greased again. Bake at 350 degrees .1 hour and 30 minutes or untill center spring back when lightly touched with finger and top is golden brown .I use the tooth pick test ....If a glass type baking dish is used ,reduce oven heat to 325
  • 4. This is wonderfull all year ,I use to toast it and spead cream cheese or jam on it .....
  • 5. This Recipe was sent to me by Cinstraw,it was the one use by her Grandmother,and is a lot more up dateed and EASIER then the original...With her permission ,I have listed it for you with the original.....

  • 7. 2 1/2 cups of unsifted flour 1 teaspoon baking soda 2 eggs, slightly beaten 1(28)jar ready-to use mincemeat 1-14oz can Sweetened Condensed Milk 2 cups (1lb)mixed candied fruit* 1 cup coarsely chopped nuts
  • 8. Grease and Flour a 10 in tube pan: Combine flour and baking soda ,set aside: In a large bowl,combine remaining ingredients ,blend in dry ingredients..Pour Batter into pan.
  • 9. Bake at 300 degrees for 1 hour and 45 minutes or untill toothpick inserted in center comes out clean.Cool 15 minutes turn out of pan and cool completely....
  • 10. To store ,wrap well in aluminum foil or freeze.... *You may add more raisins ,dates ,more nuts ,etc.....
