Having grown up on a dairy farm in Holland, I love our country life here in Idaho's "potato country." My favorite recipe for potato soup originally called for heavy cream and bacon fat, but I've trimmed down the recipe. -Gladys DeBoer, Castleford, Idaho

Yield 10 servings (about 2-1/2 quarts).

Number Of Ingredients 10

6 medium potatoes, peeled and sliced
2 carrots, chopped
6 celery ribs, chopped
8 cups water
1 onion, chopped
6 tablespoons butter, cubed
6 tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon pepper
1-1/2 cups 2% milk

Steps:

  • In a Dutch oven, cook the potatoes, carrots and celery in water until tender, 15-20 minutes. Drain, reserving liquid and setting vegetables aside. , In the same pan, saute onion in butter until tender. Stir in the flour, salt and pepper; gradually add milk. Bring to a boil, cook and stir for 2 minutes or until thickened. Gently stir in cooked vegetables. Add 1 cup or more of reserved cooking liquid until soup is desired consistency.

Grandma's secret: To make this a filling meal, Grandma usually served this soup with fresh bread. For a slightly different twist, serve it in individual bread bowls. I'm thinkin' this could easily be done in the crock pot.

Number Of Ingredients 11

3 medium red potatoes
2 cups water
1 small onion
3 tablespoons butter
3 tablespoons all-purpose flour
crushed red pepper flakes
ground black pepper
3 cups milk
1/2 teaspoon sugar
1 cup shredded cheddar cheese
1 cup cooked ham, cubed

Steps:

  • Peel potatoes and cut into 1-inch cubes.
  • Bring water to a boil in large saucepan. Add potatoes and cook until tender.
  • Drain, reserving liquid. Set aside potatoes.
  • Measure 1 cup cooking liquid, adding water, if necessary; set aside.
  • Peel and finely chop onion. Melt butter in saucepan over medium heat.
  • Add onion to saucepan; cook, stirring frequently, until onion is translucent and tender, but not brown.
  • Add flour to saucepan; season with pepper flakes and black pepper to taste. Cook 3 to 4 minutes.
  • Gradually add potatoes, reserved 1 cup cooking liquid, milk and sugar to onion mixture in saucepan; stir well. Add cheese and ham.
  • Simmer over low heat 30 minutes, stirring frequently.
  • Store leftovers, covered in refrigerator.

This is one of the first recipes that my grandma taught to me when I was a lil girl

Number Of Ingredients 10

7 medium potatos thinly sliced and cut in half
1 pkg real bacon pieces fully cooked
1 lb italian sausage, mild
8 oz sour cream room temp
1 large onion diced
3 clove garlic finely diced
6 chicken bouillon cubes
3 c milk, 2%
3 c water
2 Tbsp butter/margerine

Steps:

  • 1. In your favorite soup pot cook Italian sausage. When done remove the meat but leave the drippings
  • 2. then on med heat add 2 tablespoons of butter or margarine, diced onion, finely diced garlic and chicken bullion saute until onions are transparent.
  • 3. add your thinly sliced potatos, cook untill tender then add the cooked Italian sausage, bacon, milk, water, and sour cream mix well.
  • 4. ENJOY!! You can also top it with some scallions or crumbled cheese crackers...Delicious
