Granny's Breakfast Peach Bread image

Moist and yummy this recipe is a bit healthier than the standard sweet bread recipe. I always double the recipe and make some mini loaves to share with teachers, neighbors etc. This is super excellent with a fat free whipped cream cheese spread with a little fruit and/or honey blended in.

Number Of Ingredients 16

1 1/2 cups all-purpose flour
1/2 cup whole wheat flour
1/2 cup wheat germ
1/4 cup brown sugar, firmly packed
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon allspice
1 egg, beaten
1 (8 ounce) carton lemon low fat yogurt
1/3 cup skim milk
1/4 cup vegetable oil
1 teaspoon vanilla extract
2 cups fresh peaches (peeled, pitted and sliced)
cooking spray

Steps:

  • Preheat oven to 350 degrees.
  • Combine first nine ingredients in a large bowl, stirring well.
  • Make a well in the center of dry ingredients.
  • Combine egg, yogurt, milk, oil and vanilla in small bowl, stir well.
  • Add liquid ingredients to dry ingredients stirring just until moistened.
  • Blend peaches in food processor until smooth and fold into the rest of ingredients.
  • Coat 8 1/2 x 4 1/2 x 3 inch loaf pan with cooking spray.
  • Spoon mix into pan and bake for approximately 1 hour or until toothpick inserted into center comes out clean.
  • Cool in pan 10 minutes and then remove and place on wire rack to continue cooling.
  • Cut into 1/2 inch slices when ready to serve.

1/2 cup butter, softened
1/2 cup sugar
1/2 cup brown sugar
1 (16 ounce) can canned peaches, drained, liquid reserved, 1 tbl
2 eggs
1/2 cup sour cream
1/2 teaspoon vanilla
2 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
glaze
1/2 cup powdered sugar
1 tablespoon reserved peach juice
1 teaspoon corn syrup
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 350 degrees and grease loaf pan.
  • Cream together butter, sugar and brown sugar until fluffy.
  • Chop peaches and stir into the butter and sugar mixture.
  • Add remaining ingredients. Mix well.
  • Pour into pan and bake for 60 to 70 minutes or until toothpick comes out clean.
  • Remove from oven and cool for 10 minutes.
  • Remove loaf from pan.
  • Cool completely on wire rack.
  • When cooled, spread glaze over it.

1/2 cup butter or 1/2 cup margarine, softened
1 cup sugar
3 eggs
2 3/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 1/2 teaspoons ground cinnamon
2 cups sliced fresh peaches
3 tablespoons frozen orange juice concentrate, thawed
1 teaspoon vanilla extract

Steps:

  • Cream butter; gradually add sugar, mixing well.
  • Add eggs, one at a time, beating well after each addition.
  • Mix together next 5 ingredients; add to creamed mixture alternately with the peaches, beginning and ending with flour mixture.
  • Stir in orange juice concentrate and vanilla.
  • Pour batter into a greased and floured 9 x 5 x 3-inch loafpan.
  • Bake at 350 degrees for 1 hour or until wooden pick inserted in center comes out clean.

6 large peaches, pitted, peeled & pureed
1 small peach, pitted, peeled and diced
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon clove (optional)
2 eggs
1 teaspoon vanilla extract
1/2 cup sugar (or Splenda)
1/4 cup oil

Steps:

  • Preheat oven to 350 degrees.
  • Combine flour, baking powder, baking soda, cinnamon, ginger and cloves in small bowl. Set aside.
  • Combine pureed peaches and sugar.
  • Add oil, eggs and vanilla extract. Mix well.
  • Add flour mixture about 1/2 a cup at a time, combing well after each 1/2 cup added.
  • Fold in diced peach.

A well textured, moist not overly sweet loaf. Took a loaf to work and everyone loved it.I've made this recipe several times. I used a good quality of canned peaches and it came out perfect. I copied this recipe from 50 plus sight.

1 1/2 cups sugar
1/2 cup Butter Flavor Crisco
2 eggs
2 1/4 cups fresh peaches, pureed
2 cups flour
1 teaspoon cinnamon
1 teaspoon baking soda

1 teaspoon pure vanilla extract
1 cup finely chopped pecans

Steps:

  • Cream sugar and shortning. Add eggs and mix thoroughly. Puree peaches in a blender, add to creamed mixture with dry ingredients. Mix thoroughly. Add vanilla extract and chopped nuts, stir until blended. Pour into two 9x5 inch well greased and floured loaf pans. Bake 325 degrees 55 to 60 minutes. Let set in pans a few minutes before removing.
