2 eggs
1 (20 ounce) can crushed pineapple with juice
2 cups all-purpose flour
1 cup white sugar
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla extract
½ cup packed light brown sugar
½ cup chopped walnuts
½ cup butter
½ cup white sugar
½ cup evaporated milk
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix the eggs, undrained crushed pineapple, flour, 1 cup of the white sugar, baking soda, salt, and 1 teaspoon of the vanilla together and stir until just combined. Pour batter into one ungreased 9x13 inch baking pan.
  • Combine the light brown sugar and the chopped nuts. Sprinkle over the top of the cake batter. Bake in preheated oven for 25 to 35 minutes or until cake tests done. Remove cake from oven and pour topping over hot cake.
  • To Make Topping: In a small saucepan combine the butter or margarine, the evaporated milk, the remaining 1/2 cup of the white sugar, and 1 teaspoon of the vanilla. Cook over medium low heat, stirring occasionally until sugar is dissolved. Mixture will be thin. Pour over hot cake.

1 1/2 cups sugar
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 large eggs

1 cup evaporated milk
1/2 cup sugar
1/2 cup unsalted butter
1 teaspoon vanilla

Steps:

  • Preheat oven to 350º F and lightly grease a 9x13-inch baking dish with butter or non-stick spray.
  • In a large bowl, whisk together sugar, flour, baking soda and salt, then mix in eggs and pineapple.
  • Pour batter into your pan and top with an even layer of pecans and brown sugar.
  • Place baking dish in oven and bake for 40-45 minutes, or until toothpick inserted in center comes out clean.
  • While cake cooks, combine evaporated milk, sugar and butter in a medium saucepan over medium-high heat and bring to a boil.
  • Remove from heat and stir in vanilla extract, then pour over hot cake.
  • Let cake cool so it absorbs icing, then slice, serve and enjoy.

This cake recipe was adapted from the chef Larry Forgione, who served his grandmother's cake recipe at his restaurant An American Place. The dessert proved so popular that every time he tried to take it off of the menu, he said his customers threatened to riot. It's a perfect proportion of crumb to buttercream, ideal for birthdays or other celebrations where layer cake is required.

Butter and flour for preparing pans
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/4 cups buttermilk
1 teaspoon vanilla extract
11 tablespoons unsalted butter, at room temperature
1 1/2 cups sugar
2 large eggs
4 ounces unsweetened chocolate, melted
Chocolate frosting (see recipe)

Steps:

  • Preheat oven to 350 degrees. Butter 3 9-inch round cake pans, and line the bottoms with wax or parchment paper. Lightly butter the paper. Dust pans with flour, and shake out excess.
  • Sift together the flour, baking soda, baking powder and salt. In a small bowl, combine buttermilk and vanilla.
  • In a large bowl, using an electric mixer set at medium-high speed, cream the butter. Slowly add the sugar, and continue beating until well blended and light colored. Add eggs one at a time, beating well after each addition. Add dry ingredients alternately with the buttermilk mixture in 2 or 3 additions, beating well after each addition. Beat in the melted chocolate until well blended. Spoon batter into prepared pans, and smooth tops with a rubber spatula.
  • Bake for 30 to 35 minutes, or until a toothpick inserted in center of a cake layer comes out clean. Let cake layers cool in the pans on wire racks for 10 minutes, then invert onto other racks and peel off the paper. Invert again, and let cool completely on the racks. Frost with chocolate frosting.

1 (15.25 ounce) package white cake mix
1 (6 ounce) package strawberry-flavored gelatin mix
4 large eggs
½ cup vegetable oil

½ cup unsalted butter, softened
1 teaspoon vanilla extract
4 ¼ cups powdered sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease two 9-inch round pans.
  • Muddle thawed strawberries in a bowl. Reserve 1/4 cup for frosting.
  • Mix white cake mix and gelatin mix together in a bowl. Add strawberries, eggs, oil, and water and beat until well combined. Divide batter evenly between the prepared cake pans.

2 cups white sugar
1 cup butter, softened
5 eggs
¼ cup cold brewed coffee
2 tablespoons unsweetened cocoa powder
1 cup buttermilk
1 teaspoon baking soda

1 (16 ounce) package confectioners' sugar, sifted
¼ cup cold brewed coffee
¼ cup unsweetened cocoa powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour three 9 inch round cake pans.
  • Place the sugar and butter in a mixing bowl, and beat until light colored and smooth. Beat in the eggs one at a time. Stir the coffee and cocoa into the egg mixture until well blended. Measure the buttermilk, and remove 1 tablespoon, placing it in a separate small bowl, and set aside. Stir the remaining buttermilk into the egg mixture, beating until smooth.
  • Stir the baking soda into 1 tablespoon buttermilk until smooth, and mix into the egg mixture. Stir in the flour, beating until smooth. Pour the batter evenly into the prepared cake pans.
  • Bake in preheated oven until a toothpick or small knife inserted into the center comes out clean, about 30 minutes. Remove from the oven, and cool in the pans about 15 minutes before turning out onto a wire rack to cool completely.
  • To make the frosting, beat 1 cup butter until smooth and creamy. Gradually sift in the confectioners' sugar, and beat until smooth. Stir in the coffee, cocoa, and vanilla until well blended.
  • Place one cake layer on a serving plate. Spread top with about 1/5 frosting. Place the second layer on top of the first, and frost. Repeat with the third layer. Use remaining frosting to frost top and sides.

GRANNY SMITH APPLE CAKE

Slightly modified version of a recipe in Everyday Food magazine. This cake is SO good, especially while it's still warm (or reheated). Great for breakfast. Or topped with whipped cream or vanilla ice cream. I choose Granny Smith apples for their tartness and because they hold their shape after baking. The apples come out completely soft after baking. I love the tartness of the apples mixed with the sweetness of the cake. Optional: Add 1/2 cup chopped walnuts if desired. Note: The original recipe called for 1/2c of butter, but I reduced that to 1/4 and added in 1/4 applesauce to lower the fat in the recipe. You won't even miss the extra butter at all.

This cake is a recipe I got from my grandmother when I first got married over 20 years ago. It is very rich and I still can't stay out of it until it is gone. Since you can make this in different size pans the cook time is estimated and prep time includes cooling and frosting. I like to make it in a half size steamtable aluminum pan to take for gatherings or picnics.

1 box yellow cake mix or 1 box white cake mix
1 (3 ounce) box strawberry gelatin
1 1/4 cups frozen strawberries with sugar (thawed)
2/3 cup vegetable oil (I prefer olive oil)
4 eggs
1 dash salt
Crisco, for greasing cake pans
3/8 cup butter (room temperature)
1/2 cup drained frozen strawberries (Thawed)
1 (1 lb) box powdered sugar
1 dash salt

Steps:

  • Preheat oven to 375°.
  • Grease cake pans (2 OR 3- 8 inch or 2- 9 inch) with crisco.
  • Use two or three tablespoons of cake mix to dust the greased cake pans.
  • In a large mixing bowl, combine cake mix and gelatin and salt.
  • Add oil and start mixer, slowly adding strawberries then the eggs 1 at a time and mix until well blended.
  • Divide cake mix equally between two or three cake pans.
  • Quickly place cake pans in the oven and immediately reduce heat to 350º.
  • Follow cooking chart on cake mix box for pan size you choose, checking at shortest cooking time and watching carefully to prevent scorching.
  • Cool in pan, on wire rack for 15 minutes.
  • Remove from pan.
  • I like to place the layers on wax or parchment paper or paper towels for easier handling to prevent cracking.
  • For frosting: Mix butter on low speed for 1 or 2 minutes.
  • Add 1/2 the sugar and mix then the remaining sugar, strawberries and a dash of salt to the butter and mix until well blended.
  • About 4 minutes.
  • When cake is completely cool, place one layer on cake plate and put a thin layer of frosting on top.
  • Place the second layer on the first and put a thin layer of frosting on it.
  • Top with the third layer and frost top and sides with remaining frosting.
  • If you only make two layers use a thicker layer of frosting between the two layers.
  • Allow cake to sit for at least four to six hours before serving.
  • Overnight is much better.

  • 2. Sprinkle the top with one cup brown sugar and one cup chopped pecans.
  • 3. Bake at 350 degrees for 45 minutes.
  • 4. Cook the following ingredients until mixture comes to a rolling boil: 1 cup evaporated milk, 1/2 c sugar, 1 stick margarine, and 1 tsp of vanilla.
  • 5. After the cake has baked and right out of the oven, pour the cooked milk mixture over the entire cake. This is so delicious!!!
  • 6. Should be kept refrigerated. This cake does freeze nicely.

1 c (8oz) mixed candied fruit -coarsely chopped
1 can(s) eagle brand sweetened condensed milk
1 large egg,beaten
1/2 c water
3/4 c flour
1/2 tsp baking soda

Steps:

  • 1. Break Mince Meat into small pieces and put in 2-quart saucepan .ADD WATER.Place over medium heat and stir untill lumps are thoroughly broken . Boil briskly 1 minute ,stiring constantly . Remove from heat and cool
  • 2. Add Nuts ,Candied Fruit,Condensed Milk,and Egg,blend well .Stirl in Flour and Baking Soda untill just blended.
  • 3. Pour mixture into a 9"x4"x3"loaf pan ,which has been greased ,waxed paper lined and greased again. 1 1/4 cups corn/sunflower oil
1 1/2 cups white sugar
1/2 cup brown/muscavado sugar
2 cups plain flour
2 tsp cinnamon
3 tsp baking powder
1 tsp ginger
1 tsp nutmeg
1 tsp salt
4 large eggs
1lb (450g) shredded carrots (fresher the better)
1/2 cup pecans
1/2 cup walnuts
1 cup raisins
1/2 carton orange juice
1 1/4 cups corn/sunflower oil
1 1/2 cups white sugar
1/2 cup brown/muscavado sugar
2 cups plain flour
2 tsp cinnamon
3 tsp baking powder
1 tsp ginger
1 tsp nutmeg
1 tsp salt
4 large eggs
1lb (450g) shredded carrots (fresher the better)
1/2 cup pecans
1/2 cup walnuts
1 cup raisins
1/2 carton orange juice
8 oz (230g) cream cheese
8 oz (230g) unsalted butter (room temperature)
8 oz (230g) icing sugar
1 tsp vanilla essence
Mixed nut pieces and cinnamon to decorate

Steps:

  • Soak raisins in orange juice (good to do for an hour or so before making cake).
  • Turn oven on to 180 degrees (160 fan).
  • Add the oil and sugar to a mixer and blend.
  • Fold in the plain flour and baking powder using a sieve.
  • Add the cinnamon, ginger, nutmeg and salt. Mix.
  • Add the eggs one at a time, mixing after each one is added.
  • Add the carrots, nuts and raisins, with 2 teaspoons of the orange juice marinade. Mix. The batter should be lumpy and not too thick. Have no fear if it looks quite liquidy!
  • Split mixture between 2 greased cake tins. The wider the diameter the quicker the cake will cook. For a deeper cake with a smaller diameter, extra cooking time will be required.
  • Bake at 180 degrees for 1 1/4 hours (best in a conventional non-fan oven). Use cake tester and return to oven for further 10 mins if necessary (tin dependent).
  • Allow cake to cool overnight before frosting.
  • To make the frosting: Cream the butter and vanilla essence in the mixer until no lumps remain. Gradually add the cream cheese and mix. Add the cream and mix. Fold in the icing sugar. Spread over both cakes and decorate the top half with nuts, raisins and a light dusting of cinnamon.

This cake was served at my nephew's pig picking after his wedding and it was delicious. You could hear everyone asking for the recipe! It is a bit different than the others posted. The original recipe calls for milnot instead of evaporated milk, but Zaar does not recognize milnot. The person that gave me the recipe said milnot may not be available in our area and evaporated milk could be substituted. I made this cake today for my cousin, who has broken her wrist. Needless to say, she and her boyfriend were delighted and loved it. It was so easy to make. It came out moist and delicious. If you prepare this, I hope you enjoy it!

1/4 cup buttermilk
Zest of 1 lemon
Zest of 1 lime

Steps:

  • Preheat the oven to 350 degrees F.
  • For the cake: In a large bowl, combine the cake mix, pudding mix, buttermilk, oil, eggs, lemon zest and lemon and lime juices. Whisk well, or beat with a hand mixer, until the batter is combined and smooth.
  • Pour the batter into a 9-by-13-inch nonstick baking pan, or use a regular pan coated with cooking spray. Bake until the cake is baked through, 25 to 30 minutes. Remove the cake from the oven.
  • For the glaze: Combine the powdered sugar, butter, buttermilk, lemon and lime zests and lemon juice in a saucepan and whisk well to combine. Bring the mixture to a simmer over low heat. Remove from the heat.
  • Slice the cake into even pieces and drizzle the glaze over the top.

2 c sugar
2 c all purpose flour
1/2 c cocoa powder
1 tsp baking soda
1 tsp salt
2 eggs
1 c vegetable oil
1 c soured milk (add 1 tsp. vinegar to milk)
1 tsp vanilla extract
1 c boiling water
FROSTING
1/2 c butter
1/4 c cocoa powder
6 Tbsp milk
4 c powdered sugar

Steps:

  • 1. Heat oven to 350 degrees. Grease and flour 9x13 cake pan.
  • 2. In a large mixing bowl combine sugar, flour, cocoa, baking soda, and salt. Add the rest of the ingredients for the cake. Beat for 2 minutes at medium speed
  • 3. Pour into prepared pan, and bake 35 - 40 minutes until done.
  • 4. When cake is almost done baking prepare frosting. Heat butter, cocoa, and milk to boiling. Pour over powdered sugar and mix well.
  • 5. Allow cake to cool for about 10 minutes. Poke small holes in the cake, I use the end of a wooden spoon, then frost the cake while still warm.

1 (20 ounce) can crushed pineapple, with juice
1 cup flaked coconut
1 (3 1/2 ounce) package vanilla instant pudding mix
1 (21 ounce) can cherry pie filling
1 (18 1/2 ounce) package chocolate cake mix
1/2 cup butter

Steps:

  • Spread pineapple in a 9 x 13 inch pan.
  • Sprinkle a layer of coconut on top of the pineapple, and then a layer of dry pudding mix.
  • Spread the cherry pie filling evenly over pudding mix.
  • Sprinkle dry cake mix over pie filling.
  • Cut butter into thin slices, and arrange on top of cake mix.
  • Bake at 350º F (175 degrees C ) for one hour.
  • Cool before serving.

2 c sugar
3 eggs
2 c vegetable oil
1 orange (squeeze juice save peel for zest)
3 c all-purpose flour
1 tsp baking soda
1/4 tsp salt
1 1/2 Tbsp cinnamon
2 tsp pure vanilla extract
1 tsp nutmeg
3 large Granny Smith apples, peeled and cored and cubed in small pieces
1 c chopped pecans
GLAZE
1 c powdered sugar
1 tsp orange zest
1 dash(es) orange extract (optional)
1 Tbsp milk (depending on how thick you want your glaze)

Steps:

  • 1. Prepare Bundt pan (butter and flour or Baker's Joy) and preheat oven to 325 degrees.
  • 2. Beat together sugar, eggs, oil, vanilla, and orange juice. Mix until smooth.
  • 3. Then slowly add the flour, salt, baking soda, cinnamon, and nutmeg mixing as you go.
  • 4. Fold in apples and pecans. The batter will be very thick and dense.
  • 5. Spoon batter into prepared pan evenly.
  • 6. Bake in preheated oven for 1 hour and 15 minutes or until a tester comes clean. Allow cake to sit in the pan for 10-15 minutes and then turn onto a cake plate. Allow to cool completely.
  • 7. Mix glaze to desired consistency.
  • 8. Drizzle the cake with the glaze and enjoy!

1 c butter
2 c sugar
3 c flour
1/2 c milk
4 Tbsp cocoa powder
1 tsp cinnamon
1 tsp clove, ground
1/4 tsp nutmeg
1 c plain cooked mashed potatos
1 c pecan chopped
4 eggs

Steps:

  • 1. Boil your potatos and mash. Sift all of the dry ingredients. Melt butter. Now mix all ingredients together mixing with a wooden spoon. I lightly beat the eggs before adding. Also make sure their are no big lumps in the potatoes. Mix very well. Pour batter into a greased & floured bundt pan.
  • 2. Bake in a pre-heated oven at 350 for 1 hour. Checking to see if inserted toothpick comes out clean. DO NOT OVER COOK.
  • 3. This recipe does not call for and icing, however if you like you can add one. We have always eaten without one. I hope you will enjoy this cake.

2 c plain flour
1/4 tsp salt
2 tsp baking powder
1 Tbsp cinnamon
1 1/2 c vegetable oil
2 c sugar
4 eggs
1 tsp vanilla extract
2 1/2 c grated carrots (do not pack, just pust down in cup)
FROSTING
1 stick butter
1 8oz, pkg cream cheese
1 16 oz. pkg powdered sugar
1 tsp vanilla extract
1 1/4 c chopped pecans

Steps:

  • 1. Heat oven to 350º. Spray two 9" pans with Bakers Joy or grease and flour them. Sift flour, salt, baking powder and cinnamon together and set aside. In a large bowl, mix oil, sugar, beat well, add eggs one at a time to oil mixture, beating well after each addition, add vanilla, mix well, add flour mixture, mix well, add carrots, mix well and pour mixture into pans and bake for 30 to 35 minutes until done.
  • 2. Set butter and cream cheese out to soften. Cream butter and cream cheese together, add powdered sugar and vanilla, mix well. Add pecans. Spread icing on cool cake.

4 cups diced rhubarb
¼ cup white sugar
1 ½ cups brown sugar
1 cup sour cream
½ cup butter, softened
1 egg
1 teaspoon vanilla extract
2 ½ cups all-purpose flour
1 teaspoon baking soda
1 tablespoon white sugar, or to taste
1 pinch ground nutmeg, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread rhubarb out into the bottom of a cake pan; sprinkle 1/4 cup white sugar over the top.
  • Beat brown sugar, sour cream, butter, egg, and vanilla extract together in a bowl with an electric mixer until smooth and creamy. Add flour and baking soda; mix until batter is just combined. Pour batter over rhubarb; top with 1 tablespoon white sugar and nutmeg.
  • Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, about 1 hour.

3 granny smith apples, peeled, cored and sliced
6 Tbsp sugar
1/8 tsp allspice, ground
1 tsp ground cinnamon
1/2 c golden raisins, (optional)
3 c self rising flour
2 c granulated sugar
4 large eggs
1 c canola oil
3/4 tsp salt
2 tsp vanilla extract
1/4 c orange juice

Steps:

  • 1. Preheat oven to 350 degrees. Grease and flour a tube pan or bundt pan.
  • 2. Peel, core and slice the apples. Mix 6 TBSP sugar, 1 tsp. ground cinnamon and a pinch of allspice. Toss apples in sugar/spice mixture. Set aside.
  • 3. In a large bowl, mix together self rising flour, salt and 2 cups of sugar. Stir in oil, eggs, vanilla and orange juice. Fold in raisins if desired.
  • 4. Pour 1/2 of cake batter into prepared pan. Spoon 1/2 of apple mixture over batter. Spoon remaining batter over apples. Arrange the apples that are left over the top of batter.
  • 5. Bake for 70 minutes or until cake tests done with toothpick. Cool cake in pan on a baker's rack for 10 minutes. Loosen and gently remove cake from pan and finish cooling. The top layer of apples should show face up. Store loosely covered at room temperature.
