This recipe came from a very special person - my grandma. She would say that she found the recipe inside her shoe. For a better taste put more butter on top of the cookie before putting in it in the microwave.

1 tablespoon butter
1 tablespoon peanut butter
1 tablespoon brown sugar
1 tablespoon white sugar
1 pinch salt
1 egg
3 tablespoons all-purpose flour

Steps:

  • Place butter and peanut butter in a microwave-safe mug. Microwave until butter and peanut butter are melted, about 30 seconds. Stir brown sugar, white sugar, and salt into butter mixture. Add egg; stir flour into mixture.
  • Cook in the microwave until cookie is set, 2 to 4 minutes.

She worked in a small home-cooking bakery in our small hometown, for years, a fantastic cook, and I have always aspired to be as good as my Mom in the kitchen, I don't think my time has come yet, but it sure is fun trying!! Enjoy this recipe!!

1 cup butter or 1 cup margarine
3/4 cup brown sugar
3/4 cup sugar
1 teaspoon vanilla
1 cup peanut butter (chunky or creamy)
2 eggs, beaten
1 1/4 cups flour
1 cup natural bran
3/4 cup rolled oats
2 teaspoons baking soda

Steps:

  • Melt butter. Beat together with the sugars, vanilla, peanut butter and eggs.
  • In a separate bowl, combine the flour, bran, oats and baking soda,.
  • Stir mixture into butter mixture.
  • Drop by teaspoonful onto ungreased cookie sheet.
  • Bake at 350F for 15-18 minutes.
  • Remove to rack to cool,.

3/4 cup I Can't Believe It's Not Butter, low fat spread
1/2 cup chunky peanut butter
1/2 cup brown sugar, packed
18 (1/16 ounce) packages artificial sweetener (equal brand)
3 eggs
1/4 cup skim milk
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 3/4 cups quick-cooking oatmeal

Steps:

  • Cream together the butter, peanut butter, brown sugar and sweetener until light and fluffy.
  • Add eggs, 1 at a time and beat well after each addition.
  • Blend in milk and vanilla.
  • Thoroughly stir together flour, soda and salt; add to the creamed mixture and beat well.
  • Stir in oatmeal.
  • Drop by teaspoon onto waxed paper on microwave oven glass tray. Be sure to make cookies small.
  • Cook a dozen at a time on full power for 45 to 60 seconds or until firm, but slightly moist.
  • Allow to cool slightly before removing from waxed paper. Repeat with remaining dough.

My Grandma and Mom made these cookies often when I was growing up and I have been making them for my kids for 20 years! I have tried many other peanut butter cookie recipes, but this one is still our favorite. Crispy, but a light texture . . . they almost melt in your mouth!

1 cup softened butter
1 cup creamy peanut butter
1 cup sugar
1 cup brown sugar
2 large eggs
1 cup carnation powdered milk
2 1/2 cups flour
1 teaspoon baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt

Steps:

  • Cream butter and peanut together in a large bowl.
  • Add sugars and eggs, mix well.
  • Sift together dry milk, flour, baking powder, baking soda and salt, stir into butter mixture.
  • Let dough stand 15 minutes.
  • Roll into balls, about the size of a walnut and place on a slightly greased baking sheet.
  • Flatten with a fork, dipped in flour, criss-cross fashion.
  • Bake at 375 degress for 10-12 minutes.
  • Watch closely and remove when tops just start to brown.
  • Wait about 5 minutes before removing from baking sheet. Cool on racks.

  • 8. Cool before cutting into bars.
  • 9. Repeat with second batch of dough.
