Quick and easy to make for lunch or dinner! My husband asked me to make him a tuna melt. I'd never eaten one (I don't like tuna except for grilled tuna steaks), let alone made one, so I tried this recipe from The Complete Cooking Light Cookbook. I've made this for him a few times now, and he says they're good! He's not big on English muffins so we normally use whole wheat toast instead.

1/3 cup celery, chopped
3 tablespoons light mayonnaise
2 tablespoons Dijon mustard
2 teaspoons lime juice
1/2 teaspoon fresh coarse ground black pepper
1 (12 ounce) can tuna in water, drained
4 English muffins, split and toasted
1 tomatoes, cut into 8 slices
2 ounces low-fat swiss cheese, shredded (about 1/2 cup)

Steps:

  • Preheat broiler.
  • Combine first 6 ingredients and spread 3 tablespoons of the mixture on each muffin half.
  • Top each half with 1 tomato slice and 1 tablespoon cheese.
  • Broil 5 minutes or until the cheese is melted.

we buy groceries once a month. So right now our pantry is getting a little low on some things. This is what I made tonight from what I had. We like it, I hope your family will too.

2 can(s) water packed tuna
1 can(s) cream of chicken soup1
1 can(s) green chiles (diced)
1 c sour cream
1/2 c chicken broth
1/2 c milk
8 oz pasta of choice
dry grated cheese

Steps:

  • 1. Preheat oven to 350 Cook pasta in water, drain and set aside. Open Tuna, drain and set aside. Mix soup, sour cream, chilies, broth and milk in a medium bowl, stir until creamy. Stir in tuna and pasta. Pour into a large baking dish and bake until bubbly. About 20-30 minutes. Remove from oven and sprinkle grated cheese over the top.

2 (5 ounce) cans tuna in water, well drained or 10 ounces ground beef, browned
1/3 cup mushroom, chopped
1/3 cup mayonnaise
1/8 teaspoon salt
1/8 teaspoon pepper
1 (16 1/3 ounce) can Pillsbury Golden Layers refrigerated flaky original biscuits
1 cup shredded cheddar cheese

Steps:

  • Heat oven to 350 degrees F. Grease cookie sheet. In medium bowl, combine tuna or browned ground beef, mushroom, mayonnaise, salt and pepper and mix well.
  • Separate dough into 8 biscuits. Place 4 biscuits on greased cookie sheet. Press or roll each to form 5" rounds. Spoon tuna or ground beef mixture in center of biscuits. Top each with cheese. Press or roll remaining 4 biscuits to form 5" rounds. Place over filling. Press edges to seal.
  • Bake for 15 to 20 minutes or until golden brown. Serve with sour cream, tomato and lettuce.

4 (8 ounce) tuna steaks, yellowfin preferred
1 (10 ounce) bottle teriyaki sauce
1/3 cup dry sherry
3 tablespoons chopped ginger
1/3 cup chopped scallion
2 -3 cloves garlic (sliced)
2 teaspoons ground pepper
2 lemons, juice of
3 tablespoons rice wine vinegar
2 tablespoons olive oil
thinly sliced scallion top
pickled ginger

Steps:

  • Arrange tuna in a single layer in a shallow dish.
  • Combine in bowl and mix well the teriyaki sauce, sherry, chopped ginger, chopped scallions, garlic, pepper, lemon juice, and rice wine vinegar.
  • Pour over the tuna.
  • Chill, covered for 2 hours, turning the tuna once.
  • Drain the tuna and let it come to room temperature.
  • Brush tuna all over with olive oil.
  • Grill 3-6 mins on each side.
  • Serve with pickled ginger and sliced scallions.
