My grandpa, who gave me this recipe, liked the way the cream cheese and onion dip created a wonderful velvety texture. I often assemble these potatoes the night before, then pop them in the oven the next day. -Mary Kay Elert, St. Paul Park, Minnesota

12 medium potatoes, peeled and quartered
2 tablespoons butter
2 tablespoons milk
3/4 teaspoon salt
1/4 teaspoon pepper
1 package (8 ounces) cream cheese, softened
1 carton (8 ounces) French onion dip
Paprika

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Drain. Mash the potatoes with butter, milk, salt and pepper until smooth. Add cream cheese and onion dip; mix well. , Spread in a greased 2-1/2-qt. baking dish. Sprinkle with paprika. Cover and refrigerate for 8 hours or overnight. , Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 50-60 minutes or until heated through.

My grandmother makes this every year with a brisket for Christmas dinner. This is hands down my favorite potato recipe ever. I leave the skins on the potatoes, but this is optional. Garnish with chopped green onions or Italian parsley, and top with more cheese for a restaurant 'look.' I hope you enjoy this recipe as much as we do.

cooking spray
1 pound medium yellow-flesh potatoes, scrubbed and chopped into 1-inch cubes
1 pound red potatoes, scrubbed and chopped into 1-inch cubes
1 cup shredded mozzarella cheese
½ cup shredded Cheddar cheese
½ cup sour cream
½ cup mayonnaise
4 tablespoons salted butter, cut into small pieces

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a deep 9x13-inch baking dish with cooking spray.
  • Place yellow and red potatoes into a large pot and cover with salted water; bring to a boil. Cook until soft, about 10 minutes. Drain.
  • Combine mozzarella cheese, Cheddar cheese, sour cream, and mayonnaise in a large bowl; mix well. Slowly add potatoes and toss; use a wooden spoon or flat spatula to avoid mashing the potatoes.
  • Pour potatoes into the prepared pan. Dot butter over the top and cover with foil.
  • Bake in the preheated oven, 25 to 30 minutes. Remove from oven and uncover. Preheat the oven's broiler. Return to the oven and broil until top is browned, about 5 minutes.

Grandpa Karsky was the grandfather of my daugter's now ex-fiance and from what I hear he was a great cook and a wonderful guy. He passed away before we met the family. It's too bad his grandson didn't follow in his footsteps in being a wonderful guy! :-) This is another Grandpa Karsky recipe and it is creamy and delicious. Not your ordinary potato recipe. The recipe says to refrigerate overnight, which of course you can do, but you can also bake it right away for around 20 - 30 minutes or until it is heated through. Because it can sit overnight it makes it a great recipe for any party because it's already made and you just pop it in the oven! Grandpa Karsky was aparently famous for shortening recipe instructions so I have embelshed this one a bit. Also, sometimes the potatoes are too dry for my tatstes so I've added some milk or some extra sour cream to make them creamier. I have also sprinkled cheese and/or bacon during the last 10 minutes of baking.

5 lbs red potatoes (I peel about half and leave the peel on half and cut into quarters)
8 ounces cream cheese
1 cup sour cream
2 teaspoons garlic salt
1 teaspoon salt
1/4 teaspoon ground black pepper
4 tablespoons butter (divided with 2T in the potatoes and the other 2T dotting the top of the casserole before baking)
milk (if potatoes seem too dry for your tastes) or sour cream (if potatoes seem too dry for your tastes)

Steps:

  • Lightly grease a 9 X 13 cake pan. Bring a large pot of lightly salted water to a boil. Cook potatoes in boiling water until tender. Drain, and transfer to a large mixing bowl. Mash until smooth. Stir in cream cheese, sour cream, garlic salt, salt, pepper and 2 tablespoons of the butter. Beat until light and fluffy. Add additional sour cream or milk if the potatoes are too dry for your tastes. Transfer to the prepared casserole dish.
  • Refrigerate overnight.
  • Remove from the refrigerator, preheat oven to 350 degrees F. Dot casserole with the remaining 2 tablespoons of butter.
  • Bake for 30 - 40 minutes or until heated through.

4 cups mashed potatoes (about 8 to 10 large) or 4 cups prepared instant potatoes
1 cup sour cream
1 package (8 ounces) cream cheese, softened
1 teaspoon minced chives
1/4 teaspoon garlic powder
1/4 cup dry bread crumbs
1 tablespoon butter, melted
1/2 cup shredded cheddar cheese

Steps:

  • In a large bowl, combine potatoes, sour cream, cream cheese, chives and garlic powder. Turn into a greased 2-qt. casserole. Combine bread crumbs with butter; sprinkle over potatoes. , Bake at 350° for 50 to 60 minutes. Top with cheese and serve immediately.
