- Preheat oven to 350 degrees F. In an ungreased 2-quart baking dish place sweet potato slices, overlapping slightly and covering the dish. In a saucepan, melt butter over low heat. Stir in brown sugar, cinnamon, nutmeg, and salt. Cook until sugar is dissolved, then add the orange slices. Pour the mixture over the potatoes, covering the entire surface.
- Cover the dish tightly with foil. Bake 40 minutes, or until the sweet potatoes are tender when pierced with a fork. Remove foil and bake 20 to 25 minutes more or until the top is golden brown. Let stand 15 minutes before serving. Makes 8 to 10 servings plus leftovers.

My husband's cousin prepared the sweet potatoes this way for a family reunion type Thanksgiving a couple of years ago. We love them for a change of pace from candied yams and sweet potato casseroles, and they are oh so much better for you.

Steps:
- Peel and slice sweet potatoes into sticks about 1 inch thick (like fat french fries).
- Place in a large pot and add water until barely covered.
- Add orange, sugar, and seasonings to taste.
- Cook until crisp-tender: bring to a boil, reduce heat, boil gently for 5 to 8 minutes. (Nothing mushy here. There should still be some resistence in the bite.).
- Serve in syrup (cooking liquid). It's so pretty with the orange slices floating in it.

MY GRANDMA'S CANDIED YAMS WITH PINEAPPLE
Grandma was always in charge of Thanksgiving dinner in my family. This is my variation on her candied yams (sweet potatoes), and they are the best!

- Preheat the oven to 375 degrees F. Place the sweet potatoes in a 2-quart baking dish. Set aside.
- In a medium pot, melt the butter over medium-low heat. Add the sugar and stir until smooth. Drain the pineapple in a strainer, reserving the juice. Stir in about half the pineapple and half the pineapple juice; reserve the rest of the pineapple and juice for another use. Stir in the cinnamon, cloves and salt. Bring the mixture to a boil, remove from the heat and add the vanilla extract. Pour the mixture directly over the sweet potatoes.
- Cover the dish with aluminum foil and bake until the sweet potatoes are just tender, about 45 minutes. Remove the foil and continue to bake until the sweet potatoes are caramelized, 20 to 25 minutes more.
- Plate and serve immediately. Pour extra sauce from the bottom of the baking dish on top.

- In a medium saucepan over medium heat, mix the sweet potatoes, butter and lemon juice. Break the gingersnap cookies into the mixture. Stirring occasionally, cook until thick, about 15 minutes.
- Cover the mixture with desired quantity of marshmallows. Remove from heat and cover 5 minutes, or until marshmallows have melted. Serve warm.

GRANDMA'S THANKSGIVING SWEET POTATO YAMS
This is an EASY recipe that my grandmother used to make. This is one of my favorites of hers. I don't like sweet potatoes, but I love these. I got the recipe from a friend of hers (she has passed) and decided to share. It's delicious and a sweet treat.

Steps:
- Boil sweet potatoes until fork tender. Allow to cool. Peel the sweet potatoes and slice into 1" slices.
- In a bowl, stir together karo syrup, sugar, cinnamon, nutmeg, and vanilla.
- Arrange sweet potato slices in 11"x14" casserole dish.
- Pour mixture over potatoes.
- Slice margarine into slices and arrange on the top.
- Bake uncovered at 350 degrees for 20 minutes. Remove and mix the slices around. Put back in oven for 10-20 minute Serve hot.
