A recipe passed down, it's an "Oldie but a Goodie"!! A great vegetarian recipe for a potluck or family dinner.

Number Of Ingredients 8

1 cup quick oats
1 (2 1/2 ounce) packet onion soup mix
1 cup cottage cheese
2 eggs
3 tablespoons wheat germ
1 1/2 teaspoons sage (Italian seasoning can substitute)
1 (10 1/2 ounce) can mushroom soup
2/3 cup water

Steps:

  • Mix all ingredients together (except mushroom soup and water).
  • Form into patties.
  • Fry in a little oil until golden brown.
  • Place in cooking sprayed 9 x 13-inch pan.
  • Cover with Mushroom Sauce.
  • Bake at 350F for 40 minutes.

Grandma's meatloaf recipe was the best I have ever tried to make. My previous attempts to create a healthy, yet good tasting meatloaf recipe failed repeatedly because each attempt resulted in a dry loaf. Not so with Grandma's recipe! I added more seasonings and scaled her recipe up a bit so 2 full pounds of beef can be used and a whole can of tomato sauce (instead of a partial can). Plus beef is usually sold in 1-pound packages, so assembly time is reduced.

2 pounds lean ground beef
1 cup old-fashioned oats
1 (8 ounce) can tomato sauce
2 large eggs, slightly beaten
2 tablespoons minced dried onion
¼ teaspoon granulated garlic
¼ teaspoon salt
⅛ teaspoon ground black pepper
¼ cup ketchup, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix together ground beef, oats, tomato sauce, eggs, onion, garlic, salt, and pepper until well combined. Press into a 9x5-inch loaf pan.
  • Bake in the preheated oven until an instant-read thermometer inserted into the center reads at least 160 degrees F (71 degrees C), about 1 hour.
  • Remove from the oven and spread ketchup over top. Serve with additional ketchup.

I've served these meatless burgers many times to guest. My guest were always surprised to find out they're meatless. I serve them, like you'd serve meatloaf. They're great with mashed potatoes

1 cup oatmeal
1 teaspoon salt
1 teaspoon sage
1 medium onion, chopped
3 beaten eggs
1 (10 1/2 ounce) can reduced fat cream soup
10 1/2 ounces water

Steps:

  • Mix oatmeal salt, and sage. Add onion and eggs. Drop by large spoonfuls onto a hot non-stick skillet sprayed with cooking spray.
  • Brown on both sides.
  • Mix soup and water, pour over burgers. Cover, simmer on low for 20 minutes.

This isn't my Grandmother's recipe. I have had it over 10 years and don't remember where I got the recipe. I am guessing at the time it takes to make this.

2 1/2 cups water
1/8 teaspoon salt
2 cups dry oatmeal
2 tablespoons sugar
1/2 teaspoon cinnamon
1 (5 ounce) can evaporated milk
3 tablespoons butter
2 tablespoons brown sugar, to taste

Steps:

  • Bring the 2 1/2 cups water to a boil.
  • Then add the salt.
  • While stirring constantly, gradually add the oatmeal.
  • Continue to stir the oatmeal and add the sugar and cinnamon.
  • Cook 1 minute and add the evaporated milk.
  • After adding the evaporated milk reheat to boiling.
  • Pour oatmeal in a serving dish and top with the butter and brown sugar.

1 pound pitted dates, quartered
1-1/2 cups water
1/2 cup sugar
1-1/2 cups all-purpose flour
1-1/2 cups old-fashioned oats
1 cup packed brown sugar
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon almond extract
3/4 cup shortening
Whipped cream, optional

Steps:

  • Preheat oven to 350°. In a small saucepan, combine dates, water and sugar. Bring to a boil. Reduce heat; simmer, uncovered, until thickened and dates are tender, stirring constantly, 7-9 minutes. Remove from heat., In a large bowl, combine flour, oats, brown sugar, vanilla, baking soda, salt and almond extract. Cut in shortening until crumbly. Press half onto bottom of a greased 13x9-in. baking dish. Carefully spread with date mixture. , Sprinkle remaining crumb mixture over filling; press down gently. Bake until lightly browned, 25-30 minutes. Cool on a wire rack. Cut into bars. If desired, serve with whipped cream.

1 cup regular rolled oats (not instant or quick cooking oats)
3 eggs
3/4 cup freshly grated sharp cheddar cheese
1/4 cup sesame seeds
1/4 cup finely minced onion
2 tablespoons tamari sauce
4 cloves garlic pressed
1/2 teaspoon dried sage
1-2 tablespoon olive oil
1 cup sliced mushrooms
SAUCE
3/4 cup tomato juice
3/4 cup water
2 1/2 tablespoons whole wheat pastry flour
1 tablespoon tamari sauce

Steps:

  • 1. Place the oats, eggs, cheese, sesame seeds, onion, tamari, garlic, and sage in a large bowl and mix well. 2. Heat the oil in a large skillet. Using a spoon, divide the oatmeal mixture into fourths and carefully drop into the skillet. Cook over medium heat for 4 minutes, or until browned on the bottom. Flip and continue to cook until the other side is browned. (Note that the patties will not stick together until they begin to cook, so they cannot be shaped into burgers beforehand.) 3. While the burgers cook, combine the sauce ingredients in a small bowl. Mix well to remove any floury lumps. 4. Arrange the mushrooms on the burgers, then top with the sauce. Cover and simmer for 5 minutes. 5. Serve with ears of fresh corn-on-the-cob, ripe tomatoes, and steamed green beans for a delicious American-style meal.
