GRANDMA'S LIME GREEN JELLO SALAD RECIPE (WITH COTTAGE CHEESE & PINEAPPLE)
Grandma's Lime Green Jello Salad Recipe (with Cottage Cheese & Pineapple) is a retro lime jello salad that my husband's grandma made for many holiday meals. To continue with the tradition, I make this every Thanksgiving.

Steps:
- In a large multi-cup measuring cup (I use my 4 cup Pyrex), add all of the reserved pineapple juice and then add enough water to the juice to make a total of 2 cups. Pour into pot and bring just to a boil.
- Add the lime Jell-o mixes to the boiling pineapple juice/water and stir until dissolved. Remove from heat, allow to cool just slightly.
- In a mixing bowl, stir together the mayo and evaporated milk. Combine until very smooth. Slowly stir in the Jell-o mixture until all is incorporated with the mayo/milk mixture. Stir in the crushed pineapple, cottage cheese, and walnuts.
- Pour mixture into an 8×8″ glass casserole pan. Cover and refrigerate for at least 4 hours or overnight (preferred).
GRANDMA'S JELLO SALAD WITH HOMEMADE PUDDING
This is one of my favorite recipes. When people read that cheddar cheese is part of it, I get a "look", but once they taste it. They LOVE it. I have a blog, heypaw.blogspot.com, and this recipe is always one of the most searched. Try it. You'll like it!!!

- 1. Prepare jello according to package
- 2. Drain pineapple and reserve the juice
- 3. Add Pineapple (or other fruit) to jello
- 4. Pour into glass dish
- 5. Cover with mini marshmallows and refrigerate to gel
- 6. Homemade Pudding: Add orange juice to pineapple (or other reserved fruit juice) juice to make 1 cup
- 7. Pour into sauce pan
- 8. add sugar, flour, and beaten egg
- 9. cook over medium heat until pudding like, stir constantly
- 10. Remove from heat and allow to cool at room temperature, stirring ocassionally
- 11. Put whipping cream (or whipped topping) in a bowl and add lemon juice
- 12. Fold whipping cream into the pudding mixture, whip together (if using whipped topping, then mix into pudding mixture)
- 13. Put on top of marshmallows, then grate cheese on top
- 14. Refrigerate until ready to serve. Enjoy!
PERFECTION SALAD- GRANDMA'S VERSION
Perfection Salad was invented in 1905 when Knox gelatin ran a recipe contest. A Pennsylvania woman won 3rd place with this salad and, now her salad is famous and the other 2 recipes that got the higher awards are unknown. You never know. :) Here is my Grandma's version of Perfection Salad. I understand it is a little different...

- 1. Combine the 2 packages of lime Jell-O with 4 cups of hot water in a large bowl, stirring until dissolved. Stir in cold water. Immediately add vegetables and well drained pineapple. Pour mixture into a mold or serving dish. Refrigerate until mixture has set (about 2 or 3 hours).
- 2. Prepare the lemon Jell-O package following directions on package. Pour over the first mixture after it has set. Refrigerate the salad for several hours more or overnight. Unmold by dipping into hot water for 10 seconds.
- 3. OPTIONAL: Serve with a sauce made of 1 cup mayonnaise or Miracle Whip thinned with 1-2 tablespoons milk, and sweetened with 1-2 tablespoons sugar. mix well until sugar is dissolved. Adjust amounts of milk and sugar to your taste. Spoon over salad as it is served.
GRANDMA'S JELLO SALAD
When ever I serve this dish I get rave reviews. My grandma used to make this for our holiday meals; it was the only thing that NEVER had leftovers. When most people hear the ingredients. they are often skeptical until they try it. So far it has won over everyone that has tried it. It is so simple to make that you can have it any night. Prep time is time to combine items and cook time is time to chill. Servings are approx.

- Mix jello powder and whipped cream in bowl until jello is evenly dissolved.
- Add cottage cheese, 1/2 mandarin oranges (1 can), whole can of fruit cocktail, and walnuts stir until well mixed.
- Garnish top with remaining mandarin oranges and a sprinkle of walnuts.
- Refrigerate for about 1 hour before serving.

- In mixing bowl, combing jello and boiling water; stir until dissolved. Add cranberry sauce to hot mixture; stir until melted. Allow to cool slightly . Transfer jello mixture to desired dish (mold, rectanglar pyrex, etc.) Add pineapple, celery and nuts over top. Place in refridgerator until set. YUM!
ORANGE FLUFF JELLO SALAD RECIPE

- Mix together pudding, Jell-o, and water over medium heat until it boils. Remove from heat and pour into a large mixing bowl. Refrigerate until mixture has thickened (about 4-5 hours).
- Beat until creamy.
- Fold in whipped cream, marshmallows, and fruit. Scrape the sides of the bowl to get all the fluff mixture together. Chill about an hour before serving.
