1/4 cup shortening
1 cup sugar
1 egg
1 egg white
1/2 teaspoon vanilla extract
1 cup plus 2 tablespoons all-purpose flour
4-1/2 teaspoons baking cocoa
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup 2% milk
1/2 cup boiling water
FROSTING:
3/4 cup sugar
1/4 cup half-and-half cream
2 tablespoons butter
1/3 cup miniature marshmallows
1/4 cup semisweet chocolate chips

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Add egg, then egg white, beating well after each addition. Stir in vanilla. Combine the flour, cocoa, baking soda and salt; add to the creamed mixture alternately with milk, beating well after each addition. Stir in water until smooth. Pour into a greased and floured 6-in. round baking pan., Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely., In a small saucepan over low heat, combine the sugar, cream and butter. Bring to a boil; cook and stir for 2 minutes. Remove from the heat; stir in marshmallows and chocolate chips until smooth. Spread frosting over top and sides of cake.

My Grandmother made this cake for my father and continued to make this all during my early years. It was a family favorite and we were always asking for her to make it again and again. Cocoa powder can be adjusted to taste.

1/2 cup cocoa powder
1 teaspoon vanilla
1 1/2 cups sugar
1 1/2 cups flour (plain)
3 eggs
3/4 cup butter
1 pinch salt
1/2 cup butter, softened
1 (16 ounce) box confectioners' sugar
1/2 cup cocoa powder
2 tablespoons milk

Steps:

  • Preheat oven to 300 degrees.
  • Grease and Flour 13 X 9 pan.
  • Melt butter in mixing bowl.
  • Add all other ingredients, mix until incorporated
  • Spread into pan.
  • Bake 35 - 40 minutes or until knife inserted 2" from side comes out clean.
  • While baking, make Frosting:.
  • Add all ingredients, except milk.
  • Mix with mixer until smooth, adding milk as needed to consistency desired. Being careful not to make frosting too thin.
  • Remove cake from oven, use a spatula to press sides down to even cake.
  • Immediately frost cake.
  • Allow to cool before serving.

2 cups sugar
1 cup whole milk
2 teaspoons cocoa
1 teaspoon Karo syrup
1 teaspoon vanilla extract
4 teaspoons butter

Steps:

  • Use 1 tsp butter to coat bottom andd sides of pot.
  • Add sugar, cocoa, kayro syrup and milk. Bring to boil stirring constantly.
  • Cook till temperature reaches 'soft ball' stage.
  • Remove from heat and add remaining butter and vanilla.
  • Cool till workable.
  • Beat by hand till fudge loses the gloss.
  • Pour into container sprayed with non-stick cooking spray.
