CAULIFLOWER SOUP

Every other cauliflower soup recipe I tried lacked flavor, but this cheesy recipe packs a tasty punch! We like it with hot pepper sauce for a little extra kick. -Debbie Ohlhausen, Chilliwack, British Columbia

Yield 8 servings (about 2 quarts).

Number Of Ingredients 12

1 medium head cauliflower, broken into florets
1 medium carrot, shredded
1/4 cup chopped celery
2-1/2 cups water
2 teaspoons chicken bouillon or 1 vegetable bouillon cube
3 tablespoons butter
3 tablespoons all-purpose flour
3/4 teaspoon salt
1/8 teaspoon pepper
2 cups 2% milk
1 cup shredded cheddar cheese
1/2 to 1 teaspoon hot pepper sauce, optional

Steps:

  • In a Dutch oven, combine the cauliflower, carrot, celery, water and bouillon. Bring to a boil. Reduce heat; cover and simmer for 12-15 minutes or until vegetables are tender (do not drain)., In a large saucepan, melt butter. Stir in the flour, salt and pepper until smooth. Gradually add milk. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Reduce heat. Stir in the cheese until melted, adding hot pepper sauce if desired. Stir into the cauliflower mixture.

Nothing smells better than home cooking, fresh hot soup on a cold snowy day.. ummm ummm good !

Number Of Ingredients 10

1 - head of fresh califlower
2 can(s) tomatoe sauce
1/2 package(s) bacon
4 can(s) chicken broth
1 - onion, yellow or red
2 - cloves garlic
1 - hand full of angel hair pasta
- salt & pepper
- seasoning salt ( *lawry's- is best )
- parmesan cheese

Steps:

  • Brown cut up pieces of bacon in skillet with onions & garlic. After nice and crisp, add chicken broth/water ,enough to absorb all the good crisp bacon & drippings.
  • Large pot: Add califlower to cook until tender. transfer liquids , tomatoe sauce and other spices, bacon, onions & garlic. (NOTE) Additional water can be added along with chicken broth .Lastly add pasta , simmer until pasta is cooked, do not want to over cook and make soggy. When ready to serve, sprinkle with parmesan cheese ( Asiago cheese is also very good )
  • ** This is BETTER the next day. This is a very thick and hearty soup. Great served with fresh french bread..... enjoy!

GRANDMA'S CAULIFLOWER

This is a dish that sounds odd but has long been one of my faveorites. The grandma in question is my great grandmother who apparently came up with the recipe (and published in just about every church cookbook I have found) but my memories are of my nana making it for me every time I was at her place for an evening meal. I have tried this with low fat mayo and with splenda and it works just fine for me that way but I am going to give the original recipe.

1 head cauliflower
2 -3 slices bacon
1 tablespoon sugar
1 tablespoon mayonnaise

Steps:

  • Cut up cauliflower and cook until it is tender but still has a bite. Then drain very well and set aside.
  • Fry bacon until crisp but not burnt, crumble and put into heated pan.
  • Add sugar and mayonnaise and stir until the mixture turns smooth and nearly translucent.
  • Add cauliflower to pan and gently mix until cauliflower is coated in mixture.
  • Serve hot.

This mildly cheesy cauliflower soup is a favorite of mine. I make it often in summer, although it's good anytime. -Karen Brown, West Lafayette, Ohio

Number Of Ingredients 10

1/3 cup thinly sliced green onions (tops only)
2 tablespoons butter
2 tablespoons all-purpose flour
1/2 teaspoon salt
2 cups chicken broth
2-1/4 cups frozen cauliflower, thawed and chopped
2 cups 1% milk
1-1/2 cups shredded reduced-fat cheddar cheese
2 tablespoons dry sherry, optional
1 tablespoon minced chives

Steps:

  • In a saucepan, saute onions in butter until tender. Stir in flour and salt until blended. Gradually add broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. , Add cauliflower; simmer for 2 minutes. Add the milk and cheese; cook and stir until cheese is melted. Stir in sherry if desired. Garnish with chives.
