OMA'S APFELKUCHEN (GRANDMA'S APPLE CAKE)
My husband's German family calls this Oma's apfelkuchen, which translates to "Grandma's apple cake." They've been sharing the recipe for more than 150 years. I use Granny Smith apples, but any variety works. -Amy Kirchen, Loveland, Ohio

- Preheat oven to 350°. Let egg yolks stand at room temperature for 30 minutes. Starting 1/2 in. from 1 end, cut apple halves lengthwise into 1/4-in. slices, leaving them attached at the top so they fan out slightly. Set aside., Cream butter and sugar until light and fluffy, 5-7 minutes. Add egg yolks, 1 at a time, beating well after each addition. In another bowl, sift flour, cornstarch, cream of tartar, baking powder and salt twice. Gradually beat into creamed mixture. Add milk; mix well (batter will be thick)., Spread batter into a greased 9-in. springform pan wrapped in a sheet of heavy-duty foil. Gently press apples, round side up, into batter. Bake until a toothpick inserted in the center comes out with moist crumbs, 45-55 minutes. Cool on a wire rack 10 minutes. Loosen sides from pan with a knife; remove foil. Cool 1 hour longer. Remove rim from pan. Dust with confectioners' sugar.

- 1. With clean hands mix together flour, salt, baking powder, sugar and butter in a large bowl
- 2. In a seperate smaller bowl beat egg yolks and add vanilla and milk and mix well
- 3. Add the wet mix to the dry mix and stir just till blended together
- 4. Spray a glass baking pan with non stick spray and then press dough into bottom of this. (the larger the pan the thinner the crust)
- 5. Place apple slices on the dough in the pan. Scatter them about so that you get apples in every bite.
- 6. Mix together the topping ingredients in yet another bowl and combine with your hands until crumbly
- 7. Sprinkle this over the apples and the crust in the baking pan.
- 8. Bake in preheated oven (325 degrees) for 40 to 50 minutes or until done.
- 9. Serve warm with a dollop of whipped cream or vanilla ice cream and enjoy!

- READY IN: 55mins SERVES: 8-10 Preheat oven to 350°F. Mix 1 1/4 cup flour, baking powder, 2 tsp sugar, and salt and sift once. Cut 1/2 cup butter into dry mix with a pastry blender to pea size. In a small bowl, beat egg with 2 T milk and add to dry mix. Mix thoroughly and pat dough into a greased or oiled 9x13-inch baking dish. Pare and core apples. Cut into thin wedge slices and place on dough in rows until covered. We would cover the thin end of one apple with the thick end of the other. Dot apples with 2 T butter and mix 3/4 cup sugar, 1 1/2 Tbs flour and cinnamon together. Spread dry topping over dotted apples, and bake in oven for 30-45 minutes, until golden brown.
GRANDMA'S APPLE KUCHEN
My grandma worked as an accountant full time and baked every Saturday for the week. This is one of many Kuchens she baked every week. Apple was always a favorite.

- 1. In a stand mixer, mix the warm water, honey, and yeast until the honey is dissolved. Let the mixture sit for 10-15 minutes until slightly frothy.
- 2. Mix in flour, eggs, salt, and canola oil until just combined. Switch to a dough hook attachment and knead until the dough comes together. Ball up the dough on the bottom of the bowl, cover with plastic wrap, and let sit for 2 hours. Dough will rise to double in size and get a little poofy.
- 3. Place a 9-inch spring-form pan on a cookie sheet and coat with cooking spray. Mix cut up apples with cinnamon and sugar (I used more cinnamon than the original recipe because I love it).
- 4. Transfer dough to a greased surface and flatten in a rectangle (about 8x10 inches). Place half the apples down the center of the dough (long-ways) and fold over half the dough. Then, place the other half of the apples on the folded part and fold over the other side. With a knife or pizza cutter (I thought the pizza cutter was easier) slice the dough down the middle long-ways and then slice about 8 times on the sides. The apples will fall out, don't worry about it.
- 5. Place the dough pieces on the bottom of the spring-form pan so that they are all smashed together. Place any of the fallen apples on the top. Cover with plastic wrap and let rise for 1 hour.
- 6. Preheat oven to 325-degrees. Brush the top of the bread with an egg wash (1 egg and a tbsp of water) and sprinkle with sugar. Bake for 55-60 minutes. Mine took 60. Serve warm and drizzeled with honey if you want!
APPLE KUCHEN
These bars should be made by patient bakers with a bit of time - they look best when the apples are lined up in neat columns. This is not to say that it makes any difference in the way they taste.

- Preheat the oven to 450 degrees. Lightly grease and flour a 9x13-inch pan.
- To make the crust: Place the flour, sugar, and salt in a large bowl or food processor fitted with a steel blade and mix to combine. Add the vanilla and butter, a little at a time, and mix until it resembles cornmeal. Press into the prepared baking pan and transfer to the oven. Bake until slightly golden but not brown, about 12 to 15 minutes. Set aside to cool.
- Lower the oven temperature to 400 degrees.
- To make the filling: Place the cream cheese, sugar, and vanilla in the bowl of a mixer fitted with a paddle and beat until creamy. Add the egg, mix to combine, an pour over the cooled crust.
- Place the sugar and cinnamon in a small bowl and mix to combine.
- Place the apples on top of the filling in two or three columns. Sprinkle with the cinnamon sugar and transfer to the oven. Bake until firm and a rich brown, about 20 minutes. Cut into 20 to 24 pieces.
OMA'S APFELKUCHEN
or Sunken Apple cake. This is based on a recipe my grandmother used. The apples are placed on top of the dough, which raises as baked, making the apples appear as if they have sunk into the cake.

- Preheat oven to 350 degrees.
- Beat the butter or margarine with a wooden spoon or mixer until creamy. Slowly add the sugar, together with the vanilla sugar, salt and almond extract, alternating with the eggs. Mix the dough until it is very foamy and the sugar has been thoroughly dissolved. Sift in the flour with the baking powder, add the ground almonds, and mix everything together quickly.
- Carefully coat a springform with butter or margarine. Pour the batter in and smooth down the surface. Peel the apples, cut in half lengthwise, and remove the cores. Cut into the outer surface a few times with a knife, but don't cut all the way through. Brush apples with the lemon juice. Place the apples close together onto the batter, core side down. Soak the currants for a short time in hot water, wash thoroughly and rub dry in a cloth. Sprinkle the currants, together with the slivered almonds over the apples. Bake the cake at 350 degrees for 75-80 minutes or until golden brown. Remove from the oven and let cool before dusting with icing sugar.
- Serve with whipped cream.
- Note: I always leave out the optional items as I find they don't they add much to the flavour of the cake.

- Preheat oven to 375.
- Lightly grease and flour a cake pan: 7"x11" (you can substitute an 8" or 9" square cake pan if needed).
- Pare and core the apples and slice them thinly (about 1/4" to 1/2" thick). Mix the cinnamon and sugar and set aside.
- For the cake batter:.
- Cream the 3/4 cup of sugar, the shortening, and egg together until fluffy. Gradually add the milk.
- Sift the flour, baking powder, and baking soda together and stir into the first mixture.
- Spread the batter in the prepared cake pan.
- Arrange the apples on top of the batter in rows, overlapping slightly. Sprinkle the cinnamon sugar over the apples.

- preheat oven to 325. in mixing bowl, combine flour, sugar, salt, baking powder and butter. Blend with a pastry blender or your hands. In a small bowl, beat the egg yolks. Add the vanilla and milk. Add the egg mixture to the crumbled dry ingredients, stir gently with a spoon until just blended. Press the dough on the bottom and up the sides of an 8x12x2 greased glass baking dish. Arrange the applice slices in 3 lengthwise rows on top of the crust. In a separate bowl, combine the streusel ingredients and blend with a pastry blender or your hands until the mixture resembles peas. Sprinkle over the apple slices. Bake for 35-40 mins until the crust is golden brown and the apples look glazed.
