3 cups sugar
1 cup margarine, softened
1 teaspoon vanilla extract
4 eggs
3 ½ cups all-purpose flour
2 teaspoons baking soda
¼ teaspoon salt
1 cup buttermilk
6 very ripe bananas, mashed

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 9x13 inch baking pan.
  • In a large bowl, cream together the sugar and margarine until light and fluffy. Stir in the eggs one at a time, beating well with each addition, then stir in the vanilla.
  • In a large bowl, sift together flour, baking soda and salt. Blend this mixture into the egg mixture, alternately with the buttermilk; stir just to combine. Fold in the mashed bananas; mixing just enough to evenly combine. Pour batter into prepared pan.
  • Bake in preheated oven until a toothpick inserted into center of the loaf comes our clean, about 60 minutes.

Grandma's Best Ever Banana Bread is my mother-in-law's famous recipe that's everything you want in a banana bread: moist, tender, delicious and slathered with a luscious cream cheese frosting.

1/2 cup unsalted butter, softened (1 stick)
1 cup granulated sugar
2 large eggs (room temperature)
1 1/2 cups all purpose flour or gluten free flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup mashed bananas (about 3)
1/2 cup sour cream
1 teaspoon vanilla extract
1 cup chopped nuts (optional)
4 ounces cream cheese, softened
1/4 cup unsalted butter, softened (1/2 stick)
1 cup powdered sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°F. Grease 9"x5" loaf pan. Set aside.
  • Cream butter and sugar. Add eggs. Stir to combine.
  • Whisk flour, baking soda and salt together. Add to butter mixture along with sour cream, bananas, and vanilla. Stir together until completely combined. Fold in nuts.Note: If you want to make this a gluten free recipe, it works beautifully just by substituting the same amount of gluten free flour instead of the all purpose flour and adding 1/2 teaspoon xanthan gum. I used my homemade gluten free flour blend recipe from my blog.
  • Pour batter into prepared pan. Bake for 50-55 minutes or until a toothpick inserted into the middle comes out clean. Let cool.
  • Mix together cream cheese, butter, powdered sugar and vanilla until smooth and creamy. Frost cooled banana bread. Slice and serve.

My Great-Grandma used to make this for us whenever we would spend the night at her cabin in Paris, Arkansas. I make it now for my kids and it brings back such wonderful memories! It's absolutely magnificent warm with some sweetened butter.

2 ¼ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 cup white sugar
2 eggs
⅓ cup unsweetened applesauce
4 ripe bananas, mashed
1 tablespoon vanilla extract
1 cup raisins
1 cup chopped walnuts

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease and flour a 9x5 inch loaf pan.
  • In a large bowl, stir together flour, baking soda, cinnamon, nutmeg and white sugar. Stir in eggs, applesauce, bananas and vanilla extract. Fold in raisins and nuts if desired. Pour batter into prepared pan.
  • Bake in preheated oven for 45 to 60 minutes, until a knife inserted into center of the loaf comes out clean.

This recipe was given to my grandmother when she was pregnant with my father-- a kind neighbor had given her a loaf and it was so delicious she just had to have the recipe! Our family has been making it ever since. It is very moist and full of delicious banana flavor!

4 ripe bananas (the riper the better)
1 cup sugar
1 teaspoon vanilla
1 egg
1/2 cup canola oil
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup walnuts, chopped (optional)

Steps:

  • Mash bananas well. Mix in the sugar and let stand for 10 minutes.
  • Grease and flour loaf pan and preheat oven to 350.
  • Add vanilla, egg and oil to the banana mixture.
  • Mix in flour, baking soda and salt.
  • If you choose, mix in walnuts.
  • Pour batter into prepared loaf pan and bake for 60-90 minutes (until a toothpick inserted into the center of the loaf comes out clean.

1 c sugar
1/2 c shortening
2 eggs
3 Tbsp sour cream
2 c all-purpose flour
1 tsp baking soda
1/2 tsp salt
3 large ripe bananas, mashed
1/2 c chopped pecans or walnuts

Steps:

  • 1. Sift together the flour, baking soda, and salt. Set aside.
  • 2. Cream together sugar, shortening, and eggs in a large mixing bowl or mixer.
  • 3. Add flour mixture and sour cream alternately to the creamed mixture.
  • 4. Add the mashed bananas and nuts once everything is well incorporated.
  • 5. Pour into loaf pans or bundt pan that have been sprayed with non-stick spray and bake at 325 oven for about 45 minutes or until toothpick stuck into center comes out clean.

This is one of those recipes that is so simple yet so amazingly good, that you keep thinking there has to be more to it. It's hard to mess up sweet breads like this, but this is the best of the best. There is something magic in its simple ingredients, and when I experiment with it, I always find I still like the original...

Number Of Ingredients 8

1/2 c butter
1 c sugar (i've tried brown (love brown), and it works, but white is best in this recipe. it lets the other favors shine)
2 eggs
1/2 tsp salt
1/2 tsp baking soda
1 1/2 c (takes about 3) over ripe bananas, mashed
2 c flour
1/2 c nuts, optional (i like pecans)

Steps:

  • 1. Cream butter, sugar & eggs. Add salt & baking soda; mix well. Beat in the bananas. Add the flour. Stir in nuts if using.
  • 2. Pour into a LARGE buttered loaf pan (mine measures 4 1/4" x 8 1/4" on the bottom, 5 1/2" x 9 1/2" on the top, 2 3/4" tall.) If pan is not big enough, it will not cook all the way in the center. If you have a smaller pan, don't use all the batter in one pan. The recipe says to let sit at room temp. For 20 min. I never do.
  • 3. Bake at 350 degrees F for about 45- 60 min., until toothpick inserted in the center comes out clean. Let cool 5-10 minutes before loosening sides and inverting, letting it cool the rest of the way on a cooling rack.
  • 4. Great out of the oven, even better the next day, if it doesn't get eaten first! Wrap up after it cools completely to keep it moist.
