1 pound ground chuck
4 ounces dried bread crumbs
4 large eggs
4 ounces whole milk
6 ounces grated Romano
3 ounces grated Spanish onion
2 ounces finely diced fresh garlic
2 ounces finely chopped fresh Italian parsley leaves
2 ounces finely chopped fresh basil leaves

Steps:

  • Preheat oven to 350 degrees F. Spray a baking sheet with olive oil cooking spray.
  • Mix all ingredients thoroughly in large bowl. If mixture seems a little loose add more bread crumbs.
  • Roll meatballs loosely about the size of a golf ball and place on baking sheet. Place into preheated oven for approximately 35 to 40 minutes. Enjoy!

1 large egg, lightly beaten
1/2 cup crushed saltines (about 10 crackers)
1/4 teaspoon seasoned salt
1/4 teaspoon pepper
1/2 pound ground beef
1/2 pound bulk pork sausage
1/4 cup plus 2 tablespoons all-purpose flour, divided
2-1/2 cups reduced-sodium beef broth, divided
Hot mashed potatoes
Minced fresh parsley, optional

Steps:

  • Mix first 4 ingredients. Add beef and sausage; mix lightly but thoroughly. Shape into 1-in. balls; toss with 1/4 cup flour, coating lightly., In a large skillet, brown meatballs over medium-high heat. Add 2 cups broth; bring to a boil. Reduce heat; simmer, covered, until meatballs are cooked through, 5-6 minutes., Remove meatballs with a slotted spoon. Mix the remaining flour and broth until smooth; add to pan. Bring to a boil; cook and stir until thickened, 1-2 minutes. Return meatballs to pan; heat through. Serve with mashed potatoes. If desired, sprinkle with parsley.

3 lbs meatloaf mixture, ground beef, pork and veal
4 garlic cloves
2 cups breadcrumbs, seasoned
2 cups Rice Krispies
1/2 cup butter
2 cups locatelli romano cheese, grated
6 eggs
2 carrots
1 large onion
3 stalks celery

Steps:

  • Puree the garlic, onion, carrots and celery.
  • Saute in a large frying pan with butter. (then set it aside and let it cool down).
  • In a large bowl, mix the other ingredients by hand and mix in the sauteed vegetables too.
  • Make billiard size meatballs (roughly 3 dozen) or as you like them.
  • Bake at 350 degrees F. until golden brown. They can also be fried.

2 teaspoons olive oil
1 medium onion, chopped
3 garlic cloves, minced
3/4 cup seasoned bread crumbs
1/2 cup grated Parmesan cheese
2 large eggs, lightly beaten
1 teaspoon each dried basil, oregano and parsley flakes
3/4 teaspoon salt
1 pound lean ground turkey
1 pound lean ground beef (90% lean)
Optional: Hot cooked pasta and pasta sauce

  • Preheat oven to 375°. In a small skillet, heat oil over medium-high heat. Add onion; cook and stir until tender, 3-4 minutes. Add garlic; cook 1 minute longer. 1 egg
1/4 cup ketchup
1 cup crisp rice cereal
1 tablespoon brown sugar
1 tablespoon finely chopped onion
1 teaspoon salt
1/2 teaspoon ground mustard
1/4 teaspoon pepper
1/8 teaspoon ground nutmeg
1 pound ground beef

Steps:

  • In a large bowl, combine the first nine ingredients. Crumble beef over mixture and mix well. Shape into 1-1/2-in. balls. Place meatballs an a greased rack in a shallow pan. Bake, uncovered, at 400° for 30 minutes or until the meat is no longer pink.
