GRANDMA'S ITALIAN PASTA FAGIOLI

My grandma's "Pasta Fazool" was my number one favorite comfort food as a little girl! This version of the rustic Italian staple is just as delicious, but taken up a notch with pancetta and white wine. It's sure to become your new favorite, too!

2 tablespoons extra virgin olive oil (plus more for serving)
4 ounces pancetta (diced)
1 large onion (diced)
3 carrots (peeled and diced)
1 TB minced garlic
1/3 cup dry white wine
6 cups low sodium chicken broth
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 15 oz cans cannellini beans (rinsed and drained)
1 cup marinara sauce
1 cup ditalini pasta
1/3 cup freshly grated Parmigiano-Reggiano (plus more for serving)

Steps:

  • Heat olive oil in a large soup pot over medium-low heat. Add pancetta and cook until it begins to brown.
  • Add onion and carrot and celery and cook, stirring frequently, until the onions become translucent, about 5 minutes. Add the garlic and cook 1 minute more.
  • Add wine and cook until it has nearly evaporated, about 5 minutes. Add broth, salt, pepper, beans and marinara sauce and increase heat to bring to a boil. When ready to serve, add pasta and cook until tender according to package directions.
  • Stir in Parmesan and serve garnished with additional Parmesan and optional basil.

My grandmother and I created this homemade granola recipe one day, and it is currently loved and requested by the rest of my family, including my other grandma who used to be anti-granola! My favorite ways to serve it are in coconut Greek yogurt or just in a bowl with milk. Simple and awesome.

nonstick cooking spray
4 cups old-fashioned oats
1 ½ cups chopped pecans
1 ½ cups slivered almonds
1 cup coconut flakes
½ cup vegetable oil
⅓ cup packed brown sugar
⅓ cup honey
¼ cup maple syrup
2 teaspoons ground cinnamon
2 teaspoons vanilla extract
¾ teaspoon salt
2 cups dried cranberries

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Cover a baking sheet with aluminum foil and spray with nonstick cooking spray.
  • Mix oats, pecans, almonds, and coconut flakes together in a large bowl. Set aside.
  • Combine vegetable oil, brown sugar, honey, maple syrup, cinnamon, vanilla extract, and salt in a medium saucepan over medium heat. Stir gently until it begins to boil; remove from heat. Pour over oat mixture and fold together until dry ingredients are well coated. Spread granola onto the prepared baking sheet.
  • Bake in the preheated oven for 20 minutes. Stir and continue to bake on the top rack until golden, about 5 minutes more.
  • Remove from the oven and let cool, 20 to 30 minutes. Toss with cranberries. Store in an airtight container.

This recipe comes straight from my mother-in-law in Denmark. It's a little labor-intensive, but once you get the hang of it, you'll be addicted! Serve warm with a brown sauce, small red boiled potatoes, and sweet and sour cabbage. Better still, double the batch and have enough the next day to slice and place on toast with mayonnaise (open-faced, of course, the Scandinavian way)!

½ pound ground veal
½ pound ground pork
¼ cup milk, or as needed
¼ cup finely grated onion
1 egg
¼ cup bread crumbs, or as needed
¼ cup all-purpose flour
¼ cup seltzer water
salt and pepper to taste
¼ cup margarine

Steps:

  • Mix the veal and pork together in a bowl, and stir in the milk, onion, and egg. Mix the bread crumbs into the meat. Sprinkle in the flour, and knead well to mix. Stir in the seltzer water, season to taste with salt and pepper, and mix well. The mixture should be very moist, but not dripping.
  • Chill the meat mixture for 15 to 30 minutes in the refrigerator, to make the meatballs easier to form.
  • Heat the margarine in a large skillet over medium heat.
  • To form meatballs, scoop up about 2 1/2 tablespoons of meat mixture with a large spoon, and form the mixture into a slightly flattened, oval meatball about the size of a small egg. Place the meatballs into the heated skillet, and fry for about 15 minutes per side, until the meatballs are well-browned and no longer pink in the center.

5 tablespoons flour
0.5 pounds ground beef
0.5 pounds ground pork
0.5 pounds ground clove
0.5 teaspoons all spice
0.5 teaspoons salt
0.666666666667 units onion
3 units eggs

Steps:

  • Put the flour on a plate. If frozen, thaw meat. Dump everything but flour into a big bowl then then mix together with your magic utensils.... your hands.
  • Then make into golf ball and a half size, and then create an oval shape. Roll in plate of flour. Then lightly grease the bottom of a pan and fry the meat, and presto you have a delicious meal!
