MANGO AND AVOCADO SALAD
Steps:
- In a large serving bowl, whisk together vinegar, lime juice, salt and pepper to taste. Slowly whisk in oil. Toss in mangoes, avocado and red onion to coat. Serve immediately.
AVOCADO AND GRAPEFRUIT SALAD

- Place the mustard, lemon juice, salt, and pepper in a small bowl. Slowly whisk in the olive oil until the vinaigrette is emulsified.
- Before serving, cut the avocados in 1/2, remove the seeds, and carefully peel off the skin. Cut each half into 4 thick slices. Toss the avocado slices in the vinaigrette to prevent them from turning brown. Use a large, sharp knife to slice the peel off the grapefruits (be sure to remove all the white pith), then cut between the membranes to release the grapefruit segments.
- Arrange the avocado slices around the edge of a large platter. Arrange the grapefruit segments in the center. Spoon the vinaigrette on top, sprinkle with salt and pepper, and serve.
GRAPEFRUIT, ORANGE AND AVOCADO SALAD
This is a variation of a delicious salad my late FIL used to make. So refreshing and good with many dishes...grilled fish, roasted chicken to name a couple. Use my Recipe #224936 if you don't have your own ready in the fridge. Kids love this salad, too!

- Peel the oranges and grapefruits. I use a sharp knife and cut the ends off 1st, then cut the skin off with the pith.
- Cut into sections.
- Place the lettuce leaves into a serving bowl/platter.
- Peel and slice the avocados.
- Place the citrus and avocado on top of the lettuce and drizzle with a vinaigrette.
WINTER CITRUS SALAD WITH HONEY DRESSING
This citrus salad requires only that you overcome the notion that salads must be green; it's a novel and wonderful antidote to sorry-looking lettuce. If you're lucky and can find blood oranges, use them; same with the odd, supremely delicious and usually quite pricey pomelos.

- Peel citrus, removing as much pith as possible, and slice into wheels. Remove any pits, layer fruit on a serving dish, sprinkle with salt and garnish with chopped onion.
- Whisk together olive oil, vinegar, honey, lime juice and tarragon until well combined; taste, adjust seasoning as needed and drizzle over salad.
