This recipe is a friend's grandma's recipe and is absolutely the best hash brown casserole I've ever had. Kentucky grandmas sure know how to cook!

1 (2 pound) package frozen hash brown potatoes, thawed
1 (10.75 ounce) can condensed cream of chicken soup
2 cups shredded Cheddar cheese
1 (8 ounce) container sour cream
½ cup melted butter
½ cup chopped onion
½ teaspoon salt
½ teaspoon ground black pepper
1 cup crushed cornflakes
½ cup melted butter

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix hash browns, cream of chicken soup, Cheddar cheese, sour cream, butter, onion, salt, and pepper together in a bowl. Arrange in a 9x13-inch baking dish. Sprinkle on top. Drizzle butter over the cornflakes.
  • Bake in the preheated oven until the sauce is bubbly and the top is golden brown, 1 to 1 1/2 hours.

This recipe had been made at every family gathering we have had for many years. Our family absolutely loves it! No matter how much is made, there is never any left! I have never seen a recipe like this posted, so here it is! I hope your family loves it as much as we do! This recipe should be made a day ahead and refrigerated until 30 minutes before baking. Prep time does not include refrigeration time.

Number Of Ingredients 8

2 (8 ounce) packages brown and serve sausages (8-10 per package)
2 cups seasoned croutons (We use Brown Betty)
3 cups sharp cheddar cheese (Shredded)
6 eggs
2 1/2 cups milk (Mix with eggs)
1 (6 1/2 ounce) can mushrooms (sliced or pieces)
1 (10 1/2 ounce) can cream of mushroom soup
1/2 cup milk (Mix with Cream of Mushroom Soup)

Steps:

  • Layer 1 box croutons in a 9 by 13 in pan. Set aside.
  • Microwave sausage. Cut into bite size pieces. Sprinkle sausage pieces throughout pan over croutons.
  • Layer with cheddar cheese.
  • Layer cheese with Mushroom soup mixture.
  • Beat or whip eggs until egg white and yolk are thoroughly combined.
  • Gently stir or whip the 2 1/2 Cups milk into egg mixture until combined.
  • Pour egg/milk mixture over casserole. Cover, and refrigerate for 24 hours.
  • Let casserole come to room temperature for 30 minutes before baking.
  • Bake, uncovered, in a 350 degree oven for 50 - 55 minutes Let rest for 10 minutes before serving.

Another breakfast dish you can make the night before if you wish. I like the stewed tomatoes and oregano in this dish.

Number Of Ingredients 8

1 bunch green onion, chopped
3 pieces Canadian bacon, diced (or bacon or ham)
1 (14 ounce) can stewed tomatoes (with onions, peppers, & celery)
5 large eggs
2 tablespoons milk
2/3 cup Bisquick
1 teaspoon dried oregano
1 cup colby-monterey jack cheese

Steps:

  • Prepare 9" quiche dish or pie plate by spraying with non-stick cooking spray.
  • Layer the onions, ham, and tomatoes into pie pan.
  • Mix together the eggs, milk, oregano, and Bisquick.
  • Pour on top of layered mixture.
  • Top with cheese.
  • May be refrigerated overnight at this point.
  • Bake at 350F degrees for 45 minutes.
  • Preheat oven to 350°.
