This pie is so easy to make and won the 1999 American Pie Council's Pie Championship in the Custard Pie Category.

1 (9 inch) unbaked pie shells, deep dish
3 eggs, beaten
3/4 cup white sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
1 egg white
2 1/2 cups scalded whole milk
1/4 teaspoon ground nutmeg
3 drops yellow food coloring (optional)

Steps:

  • Preheat oven to 400 degrees F.
  • Mix together eggs, sugar, salt, and vanilla. Stir well. Blend in the scalded milk. For more yellow color, add a few drops yellow food coloring.
  • Brush inside bottom and sides of pie crust with egg white to help prevent a soggy crust. Pour custard mixture into piecrust. Sprinkle with nutmeg.
  • Bake for 40 to 50 minutes or until a knife inserted near center comes out clean. (Please adjust according to your oven) Cool on rack.

Straight from grandma's kitchen, a delicious Southern holiday tradition. A smooth and rich chocolate dessert that will have you asking for thirds.

¾ cup white sugar
2 tablespoons self-rising flour
1 tablespoon cocoa powder, or more to taste
2 cups whole milk
2 eggs, separated
1 teaspoon vanilla extract
1 pre-baked pie shell
1 pinch white sugar, or to taste
1 dash vanilla extract, or to taste

Steps:

  • Mix sugar, flour, and cocoa powder together in a bowl until well combined.
  • Mix milk, egg yolks, and vanilla extract together in a separate large bowl. Add flour mixture and blend custard until smooth.
  • Pour custard into a cast iron skillet over medium heat. Cook, stirring continually, until slightly boiling but not popping, about 5 minutes. Cook just until reasonably thickened, 3 to 5 minutes more, and remove from heat immediately. Stir hot custard to smooth out any lumps and pour into the pre-baked pie shell.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Beat egg whites, sugar, and vanilla extract together in a small bowl until peaks start to form. Spread the thick meringue mixture on top of the custard.
  • Cook under the preheated broiler just until the peaks start to turn light brown, 1 to 2 minutes, being very careful not to let the meringue burn.
  • Place the custard pie in the fridge or on Grandma's porch on a cool night until the custard congeals, about 2 hours.

3 eggs, beaten
¾ cup white sugar
¼ teaspoon salt
1 teaspoon vanilla extract
1 egg white
2 ½ cups scalded milk
¼ teaspoon ground nutmeg
3 drops yellow food coloring

Steps:

  • Preheat oven to 400 degrees F (205 degrees C).
  • Mix together eggs, sugar, salt, and vanilla. Stir well. Blend in the scalded milk. For more yellow color, add few drops yellow food coloring.
  • Line pie pan with pastry, and brush inside bottom and sides of shell with egg white to help prevent a soggy crust. Pour custard mixture into piecrust. Sprinkle with nutmeg.
  • Bake for 30 to 35 minutes, or until a knife inserted near center comes out clean. Cool on rack.

3 eggs
1 cup white sugar
¼ cup butter, melted
2 tablespoons all-purpose flour
1 cup milk
1 teaspoon vanilla extract
½ teaspoon ground nutmeg
1 recipe pastry for a 9 inch single crust pie

Steps:

  • Bake pie shell at 400 degrees F (205 degrees C) for 5 minutes. Set aside.
  • Combine melted butter or margarine, sugar, flour, milk, vanilla, and nutmeg. Add beaten eggs, and blend well. Pour filling into partially baked pie shell.
  • Bake at 325 degrees F (165 degrees C) for 45 to 55 minutes, or until an inserted knife comes out clean. Do not overcook.

This recipe was handed down from my Grandma. I have tweaked it to spice it up some! It is a unique addition to any Thanksgiving celebration and holds its own against pumpkin pie any day!

2 ½ pounds hubbard squash - cut into chunks and seeds removed
½ cup firmly packed dark brown sugar
3 large eggs
½ cup heavy cream
1 ½ teaspoons apple pie spice
½ teaspoon salt
2 tablespoons salted butter, softened
1 (9 inch) unbaked pie crust

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a large baking sheet with aluminum foil.
  • Arrange squash on lined baking sheet. Roast in preheated oven until the skin is browned and flesh is tender, about 45 minutes; allow to cool before handling. Remove flesh from squash using a spoon.
  • Reduce temperature setting on oven to 375 degrees F (190 degrees C).
  • Place 2 cups of squash in a food processor and process until smooth. Add the brown sugar, eggs, cream, apple pie spice, salt, and butter; process until smooth.
  • Pour the squash mixture into the pie crust. Bake until the filling rises, about 1 hour.

Grandma Hallie was a true "Depression Cook." She was an 18 year old wife, then her baby son was born 6 weeks before the Stock Market Crash of 1929. They had to move back to the family farm just to survive. And nothing on the farm was wasted. Custard was the "old" way to use up any extra eggs and milk before there was refrigeration. Honey or molasses could be used as the sweetener back then, so no vanilla was needed, if it wasn't available. Folks "made do." This dessert was my late father's favorite. Here's to you, Dad & Grandma. I miss you every day. =^..^=

4 - large eggs
2 1/2 cup(s) milk
1/2 cup(s) white sugar
1 teaspoon(s) vanilla extract
1/2 teaspoon(s) salt

FOR OLD-FASHIONED CUSTARD PIE...
1 - marie callendar deep-dish pie crust, unbaked

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium bowl, add the eggs, milk, sugar, vanilla, and salt. Mix with an egg beater or a mixer (on low speed) until evenly blended.
  • Pour egg mixture into an ungreased medium casserole dish.
  • Sprinkle with nutmeg, if desired.
  • To make the water bath, set the casserole dish into a 13 x 9" pan. Carefully pour HOT water into the 13 x 9" pan, not getting ANY water into your custard! (Don't ask me how I know.) =^..^=
  • Continue pouring the hot water to a depth of 1 inch.
  • Carefully set the water bath with the casserole dish into the preheated oven.
  • Bake for 45 minutes, then check to see if a knife blade slipped into the center of the custard comes out pretty clean. When it does, remove everything from the oven, then the casserole dish out of the water bath to stop the cooking. DO NOT OVERBAKE!
  • Cool, then refrigerate the custard until ready to eat. (OK, I admit that I like mine warm.) =^..^=
  • OPTION: This custard can also be baked in individual ramekins. Fill 6 ramekins with the custard, place the ramekins in a 13 x 9" pan, and carefully add the 1" of HOT water. Bake at 325 degrees F (note the temp change!) for 20-30 mins., using the knife test to check for doneness.
  • FOR CUSTARD PIE: OK, Grandma didn't use a Marie Callendar deep-dish pie shell, but she MIGHT have since it's a great tasty product! I'm totally available for commercial work, if the MC people want to contact me. =^..^= Anyway, if you want to make a custard pie, simply make the custard as directed above, then pour it into an unbaked deep-dish pie shell. Bake at 350 degrees F for about 35-40 minutes or until the top is set when you jiggle it and it looks done. Cool, then chill before slicing.
