For as long as I can remember, this bread has been a part of my family's traditional Christmas morning breakfast. I modified the recipe so I could make it in a bread machine. - Barb and Ray Schmeling, Rhinelander, Wisconsin

Yield 1 loaf (about 2 pounds).

Number Of Ingredients 16

1-1/4 cups warm whole milk (70° to 80°)
1/2 teaspoon lemon juice
2 tablespoons butter, softened
2 tablespoons sugar
1-1/2 teaspoons salt
3 cups bread flour
2 teaspoons active dry yeast
3/4 cup golden raisins
3/4 cup raisins
1/2 cup dried currants
1-1/2 teaspoons grated lemon zest
GLAZE:
1/2 cup confectioners' sugar
1-1/2 teaspoons 2% milk
1 teaspoon butter, melted
1/4 teaspoon vanilla extract

Steps:

  • In bread machine pan, place the first seven ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed)., Just before the final kneading (your bread machine may audibly signal this), add the raisins, currants and lemon zest. In a small bowl, combine glaze ingredients; drizzle over cooled bread.

1 1/4 c warm water
1/4 c dark molasses (unsulphured) grandma's brand works best
3 c bread flour
3/4 c rye flour
2 Tbsp packed brown sugar
1 1/2 tsp salt
2 Tbsp swedish mix (recipe follows)
1 1/2 Tbsp butter or margarine
1 1/2 Tbsp dry milk powder
2 1/2 tsp yeast (rapied rise) for bread machine
SWEDIS MIX (GROUND DOWN IN A COFFEE GRINDER OR MINI FOOD PROCESSOR
2 Tbsp fennel seeds
2 Tbsp caraway seeds
2 Tbsp anise seeds

Steps:

  • 1. Ground down your Swedish mix and place in an air tight container. (you will have extra)
  • 2. Follow instructions for your bread machine, mine says to put all liquids in first then add dry ingredient's.
  • 3. Place warm water in the bottom along with the molasses. then add flours, salt in one corner and butter in the other, brown sugar in the other. I sprinkle my Swedish mix and milk in the center before making my dwell for my yeast.
  • 4. Set bread machine to your desired settings, and let the machine do its job and you will have a perfect loaf of bread :)
  • 5. I pray your family enjoys my great grandmothers recipe that I have grown up on and love so dearly. This makes such a savory loaf of bread and tastes amazing with jams and honey too ! Enjoy!!

This recipe is from my dear gramma and written in her own handwriting. She's been gone since I was in high-school and so it's near and dear to my heart. The original recipe states "no eggs or lard". Lard you say???? Is that something that you buy in the store.?? ETA...since some aren't able to find graham flour too readily. There is a recipe on Zaar for a sub...Recipe #377353.

1 cup brown sugar or 1 cup white sugar
2 1/2 cups buttermilk
2 cups graham flour
2 cups white flour
2 teaspoons baking soda
1 cup raisins, I use more
3/4 cup molasses
1/2 teaspoon salt
nuts, chopped fine (optional)

Steps:

  • Mix altogether and let stand 1 hour.
  • Pour batter into 2 9x5 inch loaf pans.
  • Bake for 1 hour at 350 degrees.

This is a good basic bread machine recipe for rye bread. I don't remember where I got it, but it's one I make all the time.

1 cup rye flour
2 3/4 cups bread flour
1/3 cup brown sugar (I use the gruanulated type)
2 teaspoons caraway seeds
1 1/2 teaspoons salt (I use kosher salt)
2 tablespoons butter
1 1/2 cups warm water
1 1/2 teaspoons dry yeast

Steps:

  • Bring all ingredients to room temperature and add to bread machine baking pan, in order suggested by manufacturer.
  • Select basic setting (I use basic setting, medium size, light crust) and push Start.

This was my grandma's bread recipe. There were no amounts, only a list of ingredients. With much testing, I have come up with the recipe that tastes as close as I can get to her bread.

Number Of Ingredients 10

1 1/2 c lukewarm water
1 1/2 Tbsp olive oil
2 tsp honey or white sugar
5 Tbsp rye flour
4 Tbsp graham flour
1 1/2 tsp salt
2 tsp active dry yeast
2 Tbsp instant mashed potato flakes
3 Tbsp quaker old fashioned oats (not instant)
bread flour

Steps:

  • 1. Add the wet ingredients to your bread machine (water, oil, honey). Next add the salt, potato flakes and oats.
  • 2. Into a measuring cup, put the rye flour and graham flour. Add enough regular bread flour to make 3 1/2 cups. Pour this into the bread machine on top of the wet ingredients.
  • 3. Make a "well" in the flour mixture and add the yeast. Use the "whole wheat" cycle on your machine, 2 pound loaf, dark crust. Turn the machine on and you will have a delicious loaf in a little over 3 hours. NOTE: WATCH THE CONSISTENCY of the mixture as it mixes. If it seems too dry, add one tablespoon of water at a time until the dough forms a "ball" around the paddle. If it is too wet, add one tablespoon of flour at a time.
