My grandma cut out this recipe from the Daily Herald newspaper many years ago. I think it may be the best coffeecake I've ever had.

1/2 cup sugar
1/3 cup flour
1/3 teaspoon salt
1/2 teaspoon cinnamon
4 tablespoons butter
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
4 tablespoons butter, room temperature
3/4 cup sugar
1 egg, room temperature
3/4 cup milk
1 teaspoon vanilla extract
2 cups fresh blueberries

Steps:

  • Preheat oven to 385 degrees. Grease a 9- or 10-inch pie plate.
  • For the streusel topping, use a fork and a small bowl to blend the sugar, flour, salt, cinnamon and butter until crumbly. Set aside.
  • For the cake, sift together flour, baking powder and salt into a medium bowl.
  • In a large bowl, cream the butter and sugar. Add the egg, milk and vanilla and beat until smooth. Mix in the dry ingredients, then fold in the blueberries.
  • Spread cake mixture into prepared pie dish and sprinkle with streusel topping. Bake 50-60 minutes or until golden. Allow to cool for 20 minutes before slicing. Serve warm, if possible.

From a brochure from Tammen's Treeberry Farm in Wilmington, Illinois. We pick 10 lbs. of fresh blueberries every year for $10, it lasts us the whole year! This is a great recipe! Kuchen is a German word for coffeecake.

1 cup flour
2 tablespoons sugar
1/8 teaspoon salt
1/2 cup margarine or 1/2 cup butter, softened
1 tablespoon white vinegar
5 cups blueberries
2/3 cup sugar
1/8 teaspoon cinnamon
2 tablespoons flour

Steps:

  • Preheat oven to 400°F.
  • In a bowl, combine flour, 2 tablespoons sugar, salt, then cut in the butter until crumbly.
  • Sprinkle with vinegar, stir until the dough forms.
  • With floured fingers, press the mix into the bottom of a 9 inch cake pan.
  • Spread 3 cups of blueberries over the pressed mix.
  • In a small bowl, combine 2/3 cup sugar 2 tbsp flour, and cinnamon. Sprinkle this over blueberries.
  • Bake at 400°F on lowest rack for 50-60 minutes.
  • When cooled, sprinkle with remaining 2 cups of blueberries. Enjoy!

A family recipe for at least 60 years, likely taken from the newspaper. Moist and loaded with blueberries. There is never any left over. Give it a try!

2 cups sifted all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
¾ cup white sugar
¼ cup unsalted butter, softened
1 teaspoon vanilla extract
1 large egg
½ cup milk
2 cups frozen blueberries
1 tablespoon white sugar
½ teaspoon ground cinnamon

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Butter a 9x9-inch cake pan.
  • Sift together flour, baking powder, and salt. Set aside.
  • Cream sugar, butter, and vanilla together in another bowl. Add egg and beat well.
  • Using a wooden spoon, stir in dry ingredients in 3 additions alternately with the milk (ending with dry) just until flour is incorporated. Do not overbeat. Fold in blueberries. Turn into the prepared cake pan and spread evenly with a spatula. Frozen blueberries make dough very stiff, so pressing with moistened fingertips works better for me. Combine 1 tablespoon sugar and cinnamon in a small bowl; sprinkle on top of batter.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 40 minutes.

This is one of my favorite recipes from my grandmother and always proves to be a hit. When I was in the 4-H Club during my early teenage years, I actually won a blue ribbon at the New York State Fair with this recipe. Thanks, Grandma!

1/2 cup butter, softened
1 cup sugar
2 eggs
2 cups flour
2 teaspoons baking powder
1 teaspoon vanilla
1/2 cup milk
2 cups blueberries (fresh or frozen)
2 teaspoons sugar (for topping)

Steps:

  • Preheat oven to 375 degrees.
  • Cream together butter, sugar and eggs. Then stir in flour, baking powder, vanilla and milk. Carefully fold in blueberries.
  • Grease a regular-sized muffin pan. Fill muffin cups 2/3 full.
  • Sprinkle filled muffin cups with sugar.
  • Bake for 20 minutes or until a toothpick inserted into the center of one muffin comes out clean, and muffin tops are lightly golden.
  • Remove from oven and set pan on a wire rack to cool for 15-20 minutes before removing muffins from the pan.
  • Store in an air-tight container. Muffins will keep for 2-3 days.

1 ½ cups white sugar
½ cup butter, softened
2 large eggs
4 cups all-purpose flour
4 teaspoons baking powder
½ teaspoon salt
1 cup milk
4 cups fresh blueberries
1 ⅓ cups white sugar
1 cup all-purpose flour
1 teaspoon ground cinnamon
⅔ cup cold butter, cut into cubes

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking pan.
  • Prepare buckle: beat sugar and butter in a bowl using an electric mixer until creamy and smooth. Beat in eggs. Whisk flour, baking powder, and salt together in a separate bowl. Stir flour mixture into creamed butter mixture, alternating with milk, until batter is just combined; fold in blueberries. Pour batter into the prepared pan.
  • Prepare topping: combine sugar, flour, and cinnamon together in a bowl. Cut in cold butter using a pastry blender or 2 knives until topping is crumbly. Sprinkle topping over batter.
