Creamy chocolate cookie with coconut and walnuts. No baking, just put in the refrigerator. This was my grandmother's personal version of this no-bake cookie. This is much richer and a pure chocolate lover's delight.

1 cup white sugar
½ cup milk
½ cup butter
1 (12 ounce) bag semisweet chocolate chips
2 cups quick-cooking oats
1 cup shredded coconut
½ cup chopped walnuts

Steps:

  • Line a baking sheet with waxed paper.
  • Combine sugar, milk, and butter in a saucepan. Bring to a boil; simmer until sugar is dissolved, about 2 minutes. Remove from heat; stir in chocolate chips, oats, coconut, and walnuts. Drop spoonfuls of mixture 1 inch apart on the lined baking sheet.
  • Chill until firm, about 1 hour.

My mother-in-law who passed away 5 years ago gave me this recipe. Everyone who tastes these biscotti love them - my children and grandchildren can't get enough of them! They are simple to make with ingredients on hand but disappear as quickly as they appeared. I have to make a double batch so that I can share with everyone; ...

Number Of Ingredients 8

1 c sugar
1 c oil
3 eggs
3 c all purpose flour
2 Tbsp all purpose flour
1 tsp bkg. powder
pinch salt
few dash(es) anise extract and/or vanilla

Steps:

  • 1. Mix oil and sugar together.
  • 2. Add eggs and mix well. Add few drops of anise extract and/or vanilla to taste.
  • 3. Add flour, bkg. powder, salt until dough forms. Add 1 cup walnuts to dough.
  • 4. Chill in refrigerator for a few hours or overnight.
  • 5. After dough has been chilled, form into logs 1 1/2 " wide by 6" long. Place on parchment lined or greased cookie sheets. I like to use parchment paper; keeps your cookie sheets cleaner and biscotti bake evenly browned.
  • 6. Bake at 350 degrees for 20 minutes.
  • 7. Let cool, then slice diagonally about 1 inch wide. Turn biscotti on their sides and bake for another 10 to 15 minutes on one side, then turn over and bake an additional 10 to 15 minutes on the other side; bake until golden brown to your liking.
  • 8. Enjoy! These are the best biscotti because they are crisp but not so hard that you can't eat them without dunking in coffee or milk. I have added chocolate chips to the dough, Nutella or chopped Snicker bars which made a big hit! I have sprinkled cinnamon sugar on the top, which makes a whole different taste. When I bake my biscotti, I have to make a double batch - one is not enough to share with loved ones!

These are easy cookies to make and very easy to eat! Can't go wrong with Grandma's Butter Cookies! Hope you enjoy!

1 cup butter
1 egg
1/2 teaspoon vanilla
1/2 cup sugar
2 1/2 cups flour

Steps:

  • Preheat oven to 350 degrees F.
  • In large mixing bowl or electric mixer beat; butter, egg, vanilla, and sugar.
  • Then add 2 1/2 cups of flour to mixture and mix until creamy.
  • Roll out dough on flat surface until about 1/2 inch thick.
  • Use cookie cutters of your choice to cut the dough.
  • Place the dough on a greased cookie sheet, and bake for 8-10 minutes.
  • After removing the cookies from the oven, let them cool.
  • Frosting and sprinkles are opptional but recommended by Grandma herself!
  • Enjoy!

1 lb powdered sugar
1/2 cup margarine, room temp
2 cups peanut butter
3 cups Rice Krispies
8 ounces Plain Hershey Bar
6 ounces chocolate chips
1 teaspoon paraffin wax

Steps:

  • Mix together sugar, margarine, peanut butter, and rice krispies together and form into balls. (As large/small as you want them. I make them smaller than a golf ball.).
  • In a double boiler, melt the chocolate bar and chips together and add paraffin wax, may add more wax if needed.
  • Once chocolate is melted, dip the balls in chocolate and place on wax paper to cool.
  • After the balls settle, store them away. We keep them in the refrigerator or freezer during the holidays.
